The BEST Chicken Tikka Masala

  • Chicken Tikka Masala is one of my favourite dishes, and this recipe is the bomb! Everything is made in the same pan, so the flavour of the meat transfers into the curry making for a meaty, rich, and creamy sauce that is to die for. This is one of those recipes that I guarantee you'll make again and again for years to come :)
I hope you enjoy this video :)

    RECIPE FOR GARAM MASALA
    • How to Make Garam Masala
    INGREDIENTS
    Chicken Marinade
    1 cup, Plain Yogurt
    Juice of ½ Lemon
3 cloves of Garlic, finely grated
    1 tbsp, Ginger, finely grated
    2 tsp, Garam Masala
    ½ tsp, Salt
6, Boneless Skinless Chicken Thighs, cut into bite size pieces
In a bowl, combine all ingredients and marinate for 1 hour.
    For the Sauce
    2 tbsp, Vegetable/Canola Oil
    2 tbsp, Butter
    2 medium Onions finely diced
3 cloves of Garlic, finely grated
    1 tbsp Ginger, finely grated
    1/2 tsp, Turmeric Powder
    1 tsp, Ground Coriander
    1 tsp, Ground Cumin
    1 tsp, Garam Masala
1 tsp, Ground Red Chili Powder
    2 cups, Strained Tomato Sauce
    1 cup, Heavy Cream
    Salt to Taste
    Fresh Coriander to garnish
    METHOD
In a large pot, heat oil on Medium-High. When hot, add chicken pieces, ensuring not to crowd the pan. Cook for 2-3 minutes a side, until browned. Set aside.
*The Chicken doesn’t have to be cooked through at this stage
In the same pan, add butter and Onions, and cook until soft and translucent. Add Ginger and Garlic, and sautee for 30-45 seconds. Then add Turmeric, Coriander Powder, Cumin, Garam Masala. Fry until fragrant (15-20 seconds).
Add Tomato Sauce, Ground Red Chili and season with salt to taste. Simmer for 15-20 minutes on low heat, stirring occasionally until Tomato Sauce thickens, and takes on a deep reddish brown colour.
Add Chicken and Heavy Cream, and cook for an additional 10 minutes until mixture is bubbling, glossy, and thick.
Garnish with fresh Coriander and serve with hot Basmati Rice, and/or Naan/Rotis.

Thank you for giving me the confidence to make my first Indian dish. We moved from a town where there were wonderful Indian restaurants on every corner to one where pizza is considered ethnic food, never mind Indian. So I went ahead and followed this recipe with some modifications because we had leftover chicken, so it was already cooked. And also, I went to the local supermarket for garam masala, and of course they didn't have it, so I made my own!! Pat me on the back! I'm already a good basmati rice maker, so bottom line, the dish is delicious. It's ALMOST as good as one of my favorite Indian take-outs back in my former hometown. (At least according to me.).

this is the umpteenth time I made it. This is the best recipe ever! I went to an Indian grocery store and got ginger paste and garlic and ginger paste a while back. I also got Kasoori Methi, adds a great flavor. I use 1 medium onion, not too big, not too small. I use crushed tomatoes, I use boneless skinless chicken thighs, they have far more flavor than boneless breasts. I use real butter and add extra because I want a rich sauce. The key is making sure you cook those tomatoes til they're fairly dry and all watery signs are gone. Using a non stick pan is ideal for this. I also do not add yogurt to the marinade anymore. It burns and leaves a bad tasting residue as well as black char in the pan. Lemon juice works just as good. Good heavy cream of course gives that lusciousness to the sauce. Sometimes you need to add your own flair to a recipe.

Anyway, i ordered more Indian spices, off Amazon. I got the Kasoori Methi leaves, fresh cardamom pods, black cumin seeds, organic turmeric, a nice size jar of ginger garlic paste, and as a special treat for me a bag of Bhel Sev which I eat handfuls out of the bag til i learn how to make Samosa Chaat, one of my favorite appetizers when i go out for Indian food. Im also going to learn how to make Naan and Navratan Korma my other favorite dish! I need to learn how to master Samosas.

I love making this recipe, and over the years I've made it my own, sometimes I make a vegan version without butter and use coconut cream instead. add potatoes, chickpeas and cauliflower, it's delicious. Thank you so much for posting

I have just started watching your videos and I am so happy to have found them! I have attempted several dishes, and have made the Tikka Masala twice now. I would never have had the confidence to try these out if not for your simple and clear instructions. I am continuing to buy the herbs and spices and I must invest in a better grinder. Thank you so much. I look forward to discovering more dishes. The flavors of Indian cuisine are some of the best in the world, to me.

I marinated the chicken for 2 days and it was absolutely delicious. I think it really intensified the flavors and brought the dish to a whole other level. I also made naan from scratch using some leftover sourdough starter I had and that was incredibly amazing as well.
