1 tsp Ginger Root Juice
2 tbsp Potato Starch
2 tbsp Soy Sauce
2 tbsp Sake
2 tbsp Mirin

I tried this recipe and my family absolutely adored it. But the wings really need to be eaten immediately, otherwise the skin will turn soggy. The sauce was great, I would add a little more ginger and ginger juice though because we couldn't quite taste the ginger. Thx Chef!
I’ve found that double frying the chicken before adding the sauce really helps sustain the crunchiness.
fakingdeep double frying and a bit more starch keeps them crunchy longer. However the wings don’t survive long enough to go soggy when I’m around!

When the oil is heated enough, its consistency becomes thin so you can drain the oil thoroughly :)

I made these last night. I tripled the batch size and all gone! So tasty! There is no one recipe you demo I don't like. I love all your recipes!
This is the 2nd time I've made these wings. I followed the recipe exactly as stated except for some minor adjustments:
Used light brown sugar, I like the smoky molasses flavor
Left out the sansho and ichimi peppers and sesame seeds, only used cracked black pepper cuz that's what I had on hand.
Oh my god these are sooooo good! The potato starch really makes a difference in crispyness, even when you add it in the sauce it still is very crispy.
It's got a great savory and tangy kick. And was ridiculously easy too.

Just tried this. Didn't have potato starch or mirin, so I used flour and extra sake. It was delicious.
***** you could also use corn starch instead. works fine as well.

I think I'm going to try potato starch instead of flour to fry chicken and see how it does.
Based on experience, they tend to be crispier vs just using flour.

Is sake supposed to be really strong? I ordered some at a Chinese restaurant once and it was very strong. I ended up drinking the whole pot so as to not waste it because the one driving had to stay sober.
It has similar levels of alcohol as wine. Around 15% ABV, give or take a few percentage points.
The one she uses in this is cooking sake! When i use it, i don't really taste anything - like after i've cooked
well it depends. the sake i have at home has the same level of alcohol vodka does, around 40 per cent
***** cooking sake is called Mirin...they always specify when they use this...if they said Sake...then they meant Sake....not "cooking sake"...
fubukifangirl The sake you get at Chinise restaurants are usually a completely different liquor thant real Japanese sake. US liquor store typically carry real Japanese sake (or even Korean rice wine, which is very similar).
Is there a substitute for mirin and sake for those who cannot use alcoholic ingredients? I know the alcohol will evaporate but my guests have religious dietary restriction.
I read you could use vinegar as a substitue for mirin.

JayFoxFire mirin has sweetness. its sweet rice wine. so it cannot be replaced by vinegar cause it has strong smell and sourness
honey, brown sugar or starch syrup would be better.
idontlikebadjokes as either mirin and sake have alcohol in it, i would try a mixture of vinegar, soy sauce, garlic and sugar. it's not the same, but i am pretty sure it will taste good as well.

when you cook alcohol it evoporates, so you dont have to substitute the sake because you are not going to drink it.

Try a very small amount of rice vinegar first if you like a sour taste and want to replace sake with vinegar :)
