Linda Wong When the outside of the chicken is golden brown, the inside will be cooked completely (in this recipe). Heat the oil to about 170 °C or 340 °F. You can tell the approximate temperature by listening to the sizzling sound. (You can place a tiny piece of chicken to check the temperature.) Make sure that each chicken has about the same thickness as shown in the video :) Chef didn't mention how long it should be deep-fried since cooking time will easily change depending on the oil temperature and the thickness of the chicken.

This looks so good, I love that Japanese food always achieves a really good balance between sweet, salty, sharp, bitter etc. Also LOL Francis must have had a long day before this was filmed, poor guy.

actually balance of flavours is the base for most asian cuisine, that's why it can be so different from western cuisine

Just made this and OMG IT IS SOOOOO GOOOOD!!! The nanban sauce was amazing. Oh I put cucumber as a side and also I made the nanban sauce earlier and put it in the fridge so it's so cold. And when the chicken finish frying, I put the cold nanban sauce on top of the crispy hot piping chicken. I just can't believe how delicious it is! I had a pretty low expectation as I was not a fan of mayonnaise sauce but WOW it literally blows my mind.

Made this for dinner tonight and my family actually complimented my cooking.
Normally they're mad whenever I make asian food, especially when its comparatively low on meat.

I've made this recipe before and one thing I did a little differently that helped a lot was I put the egg yolks in first with the wet ingredients for the nanban sauce. This helped dissolve the yolk into the sauce, which enhanced it's richness throughout very nicely. I had never thought originally to put it all on fried chicken like this and I am SO GLAD I got to learn how delicious this dish is. Chef, I sincerely thank you
