Ikinari Dango is a local dish in Kumamoto Prefecture, Kyushu! This dish is originally made from cake flour but we blend in the sticky rice flour since many people nowadays tend to like soft mochi. If you think your sweet potato is not sweet enough, mix some sugar into the dough. You can store the dango in the freezer but make sure to wrap each piece with plastic wrap. When you thaw, microwave them until the wrappers soften. I love this recipe Chef! Just an observation...that wax paper in the video looks more like parchement paper for baking. The wax paper in the USA looks alot different and it is transparent and waxy. Parchment paper is not that sticky and helps baked goods slide off a baking pan and not stick to it.

I was reminded of a similar dish in a book I recently read - Snow Flower and the Secret Fan by Lisa See. In the book, the characters liked something that was called a "sugar-fried taro" or something. Seeing this video reminded me of that dish. I was wondering if you'll do a video on something related to the taro. I heard that taro is a Chinese ingredient (I could be wrong) but I heard that Japanese cuisine sometimes uses something similar. In any case, love your videos, and I'll definitely continue to watch!

I guess the u.s. market limits the variety they import since many people here don't know of the options. Yet you can still find them in international grocery stores here.
How can you make this dish quickly when a guest comes over? It take's 30 minutes to rest and 25 minutes to cook, as well as 30 minutes preparation time for the experienced cook. And you can't leave your guests alone for an hour and a half. By the time you are done, the guest is long gone @_@

How much time do you approximately need to knead for?

I believe it's raw. The steam cooks it.

If your rice cooker can produce lots of steam (like shown in the video) for a total of 25 minutes, you can probably use it. :) Emaline L.
