- This week, we're headed into yet another one of Pixar's heart-rending, eye-popping dreamscapes: modern day San Fransisco, where we're taking a look at the broccoli pizza through the eyes of an 11-year-old. GROSS! Can we not only make something so sacrilege as cruciferous cabbage on pizza appetizing, but glean some new knowledge about the age-old Neapolitan treat? Let's find out!

Something I've always wondered about that scene in Inside Out: That pizza shop doesn't make any other kind of pizza? Surely someone would have wanted a pizza without broccoli.
These places will usually do one pizza a day, so the next day might be corn or potato or something else.
@@MrThonyfst That sounds terribly limiting. Are there more conventional pizza shops usually nearby? Where I live, there's at least 3 different pizza shops available.
@@zenguin5933 there are, but the appeal is usually that it's whatever is in season and typically a pizza you wouldn't normally try or get in a slice shop. And they always have cheese, or at least cheeseboard did. Worth trying out if you're ever in the area.

A lot of food places in California have nothing but a narrow selection of niche food like this, especially in San Fran. Some of them have begun to open up chains elsewhere in the states and it's horrible. I don't know why Cali had to ruin food to pursue their quirky chef dreams. Just serve regular food, too!

For as long as I can remember I've always been super confused whenever kids in movies/series/cartoons hated vegetables, especially broccoli which I've always liked in various forms.
The adults who wrote it grew up in an environment where every veggie was steamed or boiled to death and they don't like it.

I especially loved to snack on raw broccoli stem, which my mom would slice up for me.

@@The_Chef2511 honestly, if the cooking of my parents and most other people's parents that I've met is anything to go by, that whole generation just uses the english method of "boil it with no spices or salt and put the grey mush on a plate".
Like I'm convinced everybody born from like the 50's to the 80s just grew up eating that gray and green mush that gets served in prisons or schools in every cartoon.

I love how Babish just breaks everything down when he's told that he can do better. It's really inspiring actually.
Especially because I feel like kids begin hating broccoli because kids on TV hate broccoli. I used to eat it as a kid and stopped because of cartoons but then liked it again around 13-ish. My husband never touched broccoli and said TV made it seem gross!

I was really disappointed 8 years ago when I discovered dragon pie wasn't actually a real thing, and that dragon fruit was in fact a lot more blander than I thought. I imagined dragon pie would be a very berry-sweet pie that would most closely match (but even in taste) to blueberry pie.

Not ironic in the slightest. Bitter tastes are caused by alkaline compounds, while sour tastes are caused by acidic compounds. Mixing the two neutralizes them.

Except when things that aren't particularly alkaline taste bitter. For example, a 1% solution of Bitrex, the most bitter known compound, has a pH of only 7.2. Bitter is a weird flavor.

If I remember correctly, Alfredo (not “real” Alfredo) is basically béchamel with parmesan in it...and Mornay is béchamel with gruyere...so your experiment made a lot of sense
Alfredo doesn't start with a flour rue though, it's a similar process but you start with heavy cream then add in the parmesan a bit at a time stirring all the time. A lot of pizza restaurants use bechamel for white pizza because it's cheaper to make but with a similar flavor and texture.
@@toaster917 that's why i qualified by saying "not 'real' alfredo"...many recipes start with a roux that becomes a bechamel. it results in something that's basically what you'd expect from an alfredo but not really a traditional thing

Fun fact, at 5:42 babish say science doesn’t make sense but when something is bitter it may be basic so by adding a slight amount of acid will move the ph of an item, in this case Broccoli rob, closer to a ph of 7 which will have no acidic, sour, or bitter flavors

For anyone who’s never heard of Flammkuchen. It’s indeed very tasty, but it’s neither made with Béchamel nor regular pizza dough. It really doesn’t look anything like this, but it’s amazing and worth trying.

That's just modern white pizza. I think, technically, traditional white pizza IS just cheese and bead, but you're supposed to use a wet cheese like ricotta under the mozzarella to simulate a sauciness.
I'm actually glad to hear him say he's going to eat all of the food he made this time XD I always felt bad when he was on a diet, but I'm glad Babish can happily enjoy the fruits of his labor now! :D

Now that you've had an unqualified success with this pizza, I'd love to see a possible terrible failure at making the West African fish pizza from Steven Universe into something palatable.
I realized that I was too old to connect to Riley as a character when I saw that scene and went "but broccoli is one of my favorite pizza toppings! Along with spinach!"

-Saying adding something acidic to make something less bitter makes as much sense mathematically as cooling a hot soup by adding ice cubes. Bitter and sour are literal opposite qualities that neutralize each other in equilibrium like hot and cold do when combined.-
Acidity and basicity correspond to pH. Bases neutralize acids, and sour foods are always moderately acidic. Some bitter vegetables are either only mildly acidic or almost basic.

@@patrickdemenezes4204 Apparently I was incorrect about bitterness necessarily corresponding to basicity, so I retract that part. Sour foods are definitely acidic though. Only *some* bitter foods (vegetables like broccoli) are closer to being basic, but other bitter foods (e.g. alcohol, coffee) are actually also acidic. I was recalling incorrect/misremembered/outdated knowledge from HS biochem, and I apologize for my mistake.

Yeah, Pizza Express had a bechamel and potato pizza for Christmas a couple years ago. It was delicious.
Here in northern Germany one of my and my friends favorites is pizza with brocolli, ham and hollandaise (and also cheese, of course). Try it, it's awesome!

I'm still waiting for tubby toast and tubby custard. It was my childhood dream to taste that...
It was definitely a favourite of mine when I was a kid since I live in Australia and my mum happens to be British so she had me you watch a lot of British shows and Teletubbies was one of them and she always told me that she always thought the tubby custard looks really nice but fun fact it actually wasn't the tubby custard used in the show was actually mashed potatoes water down to a liquid the substance and got it's pink colour with the help of red acrylic paint which made it inedible and for the tubby toast that was actually foam sorry that ruined your childhood I just thought of it being something I should share since I like sharing facts about behind the scenes of TV shows
