for dosa, try to get hold of a proper dosa pan - its large and flat with a much higher heating point that will allow you to get the batter crispy and easy to flip! cast iron pan can work too but you want one that has as little of a rim on the side as possible otherwise it can be impractical to flip the dosa. put ghee or oil lightly onto the hot pan to make sure it doesn't stick. and to get the batter thin enough, you can just add more water if needed! its not an exact science, just experiment with it - sometimes you make one dosa and try and it needs more salt or is too raw in the middle and so you know what to change!

They have escaped from a plane cargo terminal somewhere in Europe a few years ago and have adapted to the weather. They can also be spotted in Paris’ gardens. My vet told me this story. :)

Ngl as someone living in Melbourne I was far too excited to see you order a flat white and even more so to see that their coffee art was excellent. Srilankan food is much different for Indian food, people always generalise it with Indian food, our traditional food tend to be made with steamed wheat flour, like idly, dosa and Aapa (hopper), or string hoppers

That's exactly what I thought when I saw the hopper haha . I never actually heard of "hoppers" before because I grew up in America . But my parents grew up in Kerala so I had plenty of vellayappam growing up 😂

For Dosa batter, make sure to let it sit overnight about 8-12hours, when fermented it should have risen and start smelling slightly sour. For a thin piece, use about 1/4cup in the middle of a hot buttered pan, before spreading it out using a bowl or the bottom of a laddle
Start small dosas before expanding your batter kingdom on the pan
