      Dehydrating mushroom slices, then pulverizing them before use adds flavor without the texture issue. They can also be used as a gluten free thickener for any dish needing an umami (sp?) flavor.

      Hi Becky! Great video as always. Can you tell me about that giant spring and cap you used to ferment onions? I want to start fermenting but don’t want to invest a lot of money on equipment before I know if I want to pursue it. Will you be doing more fermenting or any videos on it in the future? I’ve seen your kombucha video and I feel the same way about sauerkraut, but I do eat an Asian fermented bean and chili product that I purchase for the gut benefits.
      It always makes me smile to watch one of your videos. Your enthusiasm is contagious and if I had half your energy I could rule the world, LOL. Be well, God bless and stay safe.

    Oh, and Dad will eat leftovers now. He really preferred not to in the season of life when I was home raising kids, but when I went back to working in the dental office after everyone was grown, it was left overs if he wanted home made. Susan, Becky’s Mom

      Yes Becky I generally watch your videos as a treat to myself right before I sleep after a busy day. It helps me smoothly go into a deep deep sleep :) Jamerrill has the same effect on me. Guess just love you a lot. My motherly instincts are kicking as I have daughters, as well...

    My kids and boyfriend HATE zucchini and I absolutely love it. I completely took your idea of adding zucchini to things. They have no clue 😂 thanks love for the great idea.

    Becky you light of my life! My day has just been awful with driving for hours with a fever and testing positive for yea old plague on arrival at home. You just made my day so much better. When I was sick as a child my mom used to build me a pillow fort under the kitchen table and I would watch her cook and do all her magic. Ju just gave me a little piece of that safety and healing energy.

    Ok…so I just read all the comments and am surprised that nobody mentioned that quinoa needs to be rinsed very well before you cook it. Unlike grains it has something called saponins on it and really doesn’t taste that good with it on (kinda like soap if cooked in water). It also has a strong possibility of causing tummy upset

      I was watching and literally said out loud "On no, rinse it first" I also much prefer Quino plain so it can take on the flavor of what your topping it with. It's versatile that way and I can use it in several dishes the week I make it in bulk. Also the red quinoa is my favorite.
      Becky there are recipes to incorporate into rather than as a rice alternative, that might also be a good way for you to test it and use it up

    I had a thought when you mentioned not being able to buy fresh herbs through the pantry challenge, that if you have seeds on hand, you could try microgreens or sprouts of your favorite herbs. They grow super fast and don't have to take up very much space. PS I love your content and congratulations on being able to go full time! So excited for you =)

      @@theblacksheepgardener is it as easy as just harvesting early? 🤦🏼‍♀️ I have 2 medium sized raised garden beds, I just learned about pruning or pinching. I always feel so guilty, like I grew this thing and it’s beautiful, why would I want to take it off. Learning it helps produce more fruit! Cheers!

      Also, when it comes to quinoa… rinsing it until the water runs clear helps with any bitter taste that may be present 😊 lots of grass fed butter, salt and Kerry gold cheese is wonderful on quinoa! Plus some sort of garlic vinaigrette!

      @@Mrsbryan907 I use kinoa for making breakfast just like oats. Boil it with some water or milk just for 10 minutes, bring it to simmer and wait with the lid on for 10 more minutes. Add some fruit like bananas and apples maybe berries and cinnamon, nuts, almonds, dried fruit, raisins, honey or molasses or syrup. It is filling and takes away the blandness of it.

    As Romanians, we pickle a mix of vegetables together, like tiny cucumbers, onions, carrots and cauliflower and let me tell you, they are amazing! They work especially great when you have more hearthier meals, like during the winter, but they're definitely good with bbq as well! You should give it a go! You can always fine recipes online and in case you can't find them in English, I can help you translate!

    Hi Becky. Watched your Oreo video recently & heard you mention not wanting to use flour to roll out your dough. I always just sift a little cocoa powder on rolling surface or to "flour" cake pans when I'm working with a chocolate dough.

    I grew 20 some spaghetti squash and after one little one rotted I roasted and froze them all in qt freezer bags and it's been convenient. My family is also participating in the challenge . we are almost out of cheese which is no problem for me but my 4 children really enjoy. We might buy some soon. Still cleaning out the freezers. 30 days since our last shopping trip .

    If you want to try out more fermented dishes i HIGHLY recommend trying out/looking up kimchi, its a korean delicacy served as a side dish with literally everything
    It is packed with flavor and spice and adds an incredible layer of depth to any dish!
    (Would also recommend checking out how they're made regardless of if you're interested in making them or not because its a really cool process to see)

      I highly recommend the traditional kimchi recipe by Maangchi on RUclips. However, she has many different kimchi recipes but all are delicious! I am never without kimchi in my fridge.

    For your spaghetti squash, I highly recommend making a casserole sometime! I made out a clean out the fridge casserole recently with half a jar of white sauce, a bit of heavy cream to stretch the sauce, chicken, spinach and a little bit of mushroom. There was mozzarella and parmesan too. It was DELIGHTFUL!
    I've been really motivated lately by your videos to preserve and use my food better to reduce food waste. Thanks for all you do!

    Becky, one of my favorite but simplest ways to enjoy spaghetti squash is bake it then scoop it out in a casserole dish with onions butter egg, and cheddar cheese and bake it for about half an hour on 350. Best squash casserole ever.

    For spaghetti squash I do freezer spaghetti squash “lasagna.” I add cooked squash mixed with butter, Parmesan, and an egg to the bottom of a 9 by 13. Then spread seasoned ricotta on top of the squash. Then a final layer of marinara with ground beef. Top with mozzarella 👍
    Love ur channel- I made homemade gluten free bread crumbs with the heels of my bread loaf. This is a big deal because I am typically a pretty big food waster 😕

    Have you ever tried sautéing with a pinch of baking soda in your onions (with salt)? Saw it in an ATK recipe. Completely changes the way they cook down-very sweet and soft

    Dear Becky. I Love your Channel. You we're asking about what a caper is. It ist basically the blossom from the caper plant before they Bloom that gets pickled. After the capers comes the caper apples which are the caper fruits. They are also pickled and the plant itself grows in brick Walls everywhere in southern countries Like Italy or Spain. I'll use raised beds and containers this time and see where I go from there. I am thinking of trying to grow mushrooms, something I have never tried in the past. I am so anxious to get started again.     I love watching your cooking videos because it instills cooking confidence in me. I have been cooking for YEARS and I still doubt myself if I go "off recipe." But last night I wanted to make a fried rice and I wasn't into any of the recipes I found. So I just picked random ingredients from the cabinet and veggies that were going to go bad soon and made up my own measurements. My boyfriend said it was the best fried rice he's ever had, so thanks for instilling the confidence to just wing it

    A caper is a pickled flower bud of the caper bush. I have been trying to grow one from seeds for 3 years. Hahaha. The flowers are incredible beautiful too (if you don't eat them all).

    One way we enjoy quinoa is by making a "one pan mexican quinoa"! corn, roasted tomatoes or salsa, black beans, broth, spices, peppers, protein of your choice. Good for lunch or dinner served with cheese, avocado and tortillas! Yum. Love your videos!

      @@kathrynwitte3398 Perhaps I am using my own broth, homemade tortillas and salsa. I was only trying to give out an option to use up quinoa; there are plenty of recipes out there and ways to customize them.

    Your pickle onion reminded me when I was growing up my parents would take small yellow onions put a little cut and put them in a jar with red wine vinegar. They were so good . Growing up Portuguese we ate good from scratch made by my grandmother. Memories are the best. Thank you for sharing.

    Becky, I want to tell you that your seasoned salt has been absolutely wonderful IMO. I made some and then have been using it. I put in less actual salt than the other spices, but it has made such a difference. I can't believe how much energy you have to do everything, but there are many years in age different from you and me. Thank you for brightening my days.

    I somehow scored a brownie batter elenos yogurt the other day for free (it wouldn't ring up and the manager just shrugged and put it in the bag) it was sooooo good.

    Many people (myself included) do not like quinoa by itself. I have found that adding it into other dishes is the best way to eat it, as I can add it to rice (you could have done half and half or mostly rice with 1/4 or 1/3 quinoa), soups, chili, lasagna, spaghetti, etc. The list is very long of things you can add it to. I don't even notice it in most dishes and it adds great nutrition without even really being noticeable. When adding it to cold dishes, such as potato salad, you would want to cook it beforehand and cool it, but usually any hot dishes it can just be tossed in when cooking.

    Really enjoyed the way you created the casserole. Not doing the pantry challenge myself, but I try to keep an eye on expiration dates and move "should be used soon" items to a separate shelf. And then type combinations that might go well together into google and see what comes up for ideas and then try to be creative with what I have.

      I do that too! Little bits and bobs into something like an episode of chopped. Not saying it always turns out amazing but I have rarely made anything bad.

    Becky, try growing cilantro in the cooler times of year. I've never been successful growing it until this fall/winter. I've always tried it in the late spring, but I just tossed a bunch of seed in my garden late fall/early winter and I've had cilantro growing everywhere!
    I'm in Bakersfield California, and we do get freezing temperatures, but not too much below freezing. I just tossed some more cilantro seeds out for an early spring crop. I hope this helps, because I know the feeling of thinking I couldn't grow cilantro, and it's definitely my favorite herb!😊

    I have been stocking up on the Thrive freeze dried foods for the times when I don't feel like going to the store but need a quick meal on the table! It is a great supplement to what I already have in the fridge, deep freeze and pantry

    I love watching your videos! I improvise a lot when I cook, so I enjoy seeing you do the same. We eat a lot of leftovers over here and sorta do the same thing you did with the remaining beef. I can’t get in the habit of true meal prep or freezer cooking, but I want to!
    Also: for the spaghetti squash, grilled sweet Italian sausage with marinara sauce is the best over roasted spaghetti squash “noodles”

    My wife is officially hooked on the pantry challenge. It's a great way to cycle out the older foods. She saw the "gadget" you used for opening the lids on the canned jars. Help... I can't seem to find it anywhere!!! Thank you, I also enjoyed your channel. looking forward to more.

      And, I recently started putting recipe cards in the refrigerator. I just put right with the ingredients. Then, I cannot misplace it between planning and preparing.
      Also, that helps me to stick to my original plans.

    Decided on a form of breakfast casserole for my eating this week, transitioning back to keto for health reasons, those casseroles are a lifesaver, everything you need to thrive and instant gratification and no decisions on what to cook when you are hungry. Prepped my meats so I would be ready to incorporate into the next casserole.

    My name is ichem and i'm from France (Marseille). I love your video and your energy, it's so refreshing ❤. I just want to say that you should mix your quinoa with other ingredients like lentils, bulgur, carrots, rice etc.... it's delicious
    My family are originated from Morocco, it's an amazing country with an amazing cuisine. You should try to make a tajine with chicken (it's with onion, green olive, saffron, paprika, cumin, black pepper, potato, parsley or coriander, chicken) so yummy🤤😍 you should give it a try.
    I also want to say that I'm huge fan of gochugaru (Korean chilli flakes) and you should try gochujang (korean chilli paste) it tastes amazing if you cook Asian curry.
    Sorry for my English it's not the best.

    I am trying to use up what we have this month too! So far so good! Also a tip: if you have googles (I have snowboard goggles) you can wear then when you cut onions to eliminate crying. A game changer. And it looks hilarious! And quinoa is made beautifully in the instant pot. Perfect every time!! I freeze it and use it later

    I had my own pantry challenge this morning when I promised cookies and was out of brown sugar and out of almond flour and not enough gf flour! Sugar with maple syrup and a mix of gf flour, coconut flour, and tapiaco starch. It actually worked. We are a gluten free kitchen.

    As an American living in south America (Chile) I can give you two tips with quinoa. 1. Toast it with oil first, to give it a more smokey flavor, we do the same with rice here. Then cook it like rice BUT after you turn off the fire, leave the pot with the lid on to continue to steam for as long as possible, it will create fluffier better texture. Quinoa takes practice, but once you have it you will love it so much. The protein will keep you so much more full. Highly recommend quinoa with a sunny side up egg on top.

    I never liked sauerkraut until we made it at home. I always thought I wasn't a fan, I'd begrudgingly eat it once a year on New Years day and "suffer" through the experience and then I had extra cabbage from the farmers market bc it was a great deal and my husband loves sauerkraut...well I made it and begrudgingly tried it. I'm totally in love with sauerkraut now. It just has to be mine. The canned stuff from the store just does not cut it for me. If you've never made it at home, it's worth a shot to try.

      This is literally me! My husband loves it and I cannot stand it. I fermented homemade as a gift to him after watching Mary on Mary's Nest. I of course had to try it and I loved it!!! I also love to fry it for my Reubens.

    I like your energy and efficiency. Truly I do. To be perfectly honest though, I've heard you say "I bought every last one of them" many times, leaving none for people coming behind you. I have come in behind people who do that, who can afford to do that, people who may only be able to afford one of them, but there are none left because people stockpile.

    Becky, you have inspired me so much the last 10 months. I preserved all of the fruit from our fruit trees this summer completely blind and started bulk buying at the grocery liquidators as a way to learn w/b and pressure canning. It was you who inspired me to get involved in the rest of the homestead YT and branch out from there. I'm literally right in your neighborhood and you've provided me with the ambition to follow through on some pretty lofty dreams! I hope someday I'll run into you to be able to express my gratitude. We just put an order in for some runner ducks. I'm hoping goats will follow soon. And I'm working on building my garden beds through the next few rainy months. I just can't wait to start growing my own food. Thank you so, so much for all of the inspiration, light-heartedness, and wisdom you provide.

    When all my kids still lived at home at least once a week we had what we called hodge podge, it was all the leftovers in the fridge from the past week! Had some weird combinations but those meal nights were some of our favorites!

      Did it with my kids as they were at home. Some nights, it was called "Luck luck" because the lucky ones got the last of (whatever it was) that someone else was too slow to get to! Lol

    Love the meal prepping instead of left overs. I have a cookbook called Cook Once Eat All Week and it’s such a great way to repurpose foods in different ways. I got mine at the library to see if I liked the recipes before I bought it to have. Love all the meals you make everything I’ve tried from your site has been a hit in my house.

    The quinoa needs a bit more seasoning, I think. Do a starbucks copycat black bean/quinoa/corn wrap type filling but skip the wrap and eat it as a side dish. That's good use for quinoa. Becky, you are the best youtuber out there! I love your videos!

    The first time I tried quinoa I found it to be really bitter. Now I toast the quinoa in the oven before cooking and it removes the bitterness and gives it a nice nutty flavor. My 2 favorite recipes for quinoa are quinoa, veggie and bean burger patties or quinoa tabbouleh.
    Becky you may fall in love with both recipes if you try :)

    Please show how you make your pumpkin steel cut oats. I’m Australian so for us pumpkin is usually a savoury dinner food. I’m happy to expand how I cook it. My husband and I love your baked oatmeal (new to us, once again not a normal Aussie food) and I’ve even done a pumpkin version, although I had to work out what pumpkin spice was comprised of. Delicious! Thank you for your inspiring and also strangely soothing videos. As well as inspiration in the kitchen, you have provided me much comfort over the last few months during a very hard emotional time in my life. Thank you for being you and having your channel.
