Today we are making Moo Goo Gai Pian (蘑菇鸡片). The name of this dish literally means mushroom and chicken. In this recipe, mushroom already contains plenty of nature MSG. I didn’t use that many seasonings, just soy sauce, and oyster sauce mainly, which also contains MSG. That is why this simple dish is packaged with umami flavors.
INGREDIENTS FOR MARINADING THE CHICKEN
400 g (14 oz) of Chicken breast
1/2 tsp of salt
1/2 tbsp of soy sauce (Amazon Link - geni.us/ViCsApj)
1/2 tbsp of oyster sauce (Amazon Link - geni.us/nmsF8)
1/2 tbsp of Chinese cooking wine (Amazon Link - geni.us/Bhf1r)
1/4 tsp of baking soda
A drizzle of sesame oil
INGREDIENTS FOR STIR-FRYING
2-3 tbsp of oil
85 g (3 oz) of carrot
85g (3 oz) Snow peas
100g (3.5 oz) of shiitake mushroom
100g (3.5 oz) of white button mushroom
4-5 cloves of garlic, minced
A splash of water
1 tbsp of soy sauce
1/2 tbsp of oyster sauce
INSTRUCTIONS
- Slice 400g of chicken meat into 1/8 of an inch thick pieces. Marinade it with 1/2 tsp of salt, 1/2 tbsp of soy sauce, 1/2 tbsp of oyster sauce, 1/2 tbsp of Chinese cooking wine, 1/4 tsp of baking soda, and a drizzle of sesame oil. Let it sit for 20 minutes.
- Slice some mushroom into 1/4 of inch thick pieces. Prepare some snow peas, carrot slices, and minced garlic. For snow peas, be sure to grab the tip and pull out the tough string that runs along its side. It will give you a much better experience when eating.
- Turn the heat to high and heat the wok until it is smoking hot. Add 2 to 3 tbsp of cooking oil. Toss the oil around and wait for the oil to be smoking as well.
- Add the marinade chicken and cook. This way, The meat can be seared as soon as it hits the wok so it doesn’t stick to the bottom. The chicken should be cooked through within in a couple of minutes. Do not stir the chicken for too long. Otherwise, the meat will come out a bit dry. Take the chicken out.
- Use the same wok to cook the carrot, garlic, mushroom, and vegetables over medium heat until they are soft. It will take 2-3 minutes. Add 1 tbsp of soy sauce, 1/2 tbsp of oyster sauce. Mix well.
- Introduce the chicken back into the wok. Stir well and you are done. Enjoy! Хобби

Yeah, people are so ignorant about msg, which is present in so many foods that a lot of people eat, like Doritos, KFC, etc. Wasn't aware that it's naturally occurring in some foods though.
Look up Uncle Roger's videos on fried rice. He's hilarious, but i haven't actually seen him cook. Come back to Souped Up Recipes to really learn to cook.

I'm a senior living alone so I cut your recipe in half. It was AWESOME good! I don't have a wok and no room for one in this apartment. So I made sure all ingredients were ready, set, go, even my rice was done and kept warm. Cutting it in half was still enough for two meals for me so I can't wait for tomorrow night! Thank you! I'm sure I will be trying more of your recipes in the future. I can't stand the Chinese restaurants in this area of Florida. The best Chinese restaurants were in Denver metro believe it or not. Their spring rolls were huge, loaded with shrimp and crisp raw vegetables in a rice roll. I will check to see what else you have.

I got a confession: i'm so glad that i that found your channel. It's nice to know that even after 2-3 of generations what my family eats is roughly still the same with the ones in china. Some style of cooking is still used, but many aren't. My family don't eat chinese food tbat much even though we're chinese. As a third generation immigrant i don't even speak hakka anymore, and the only connection with my chinese root is through some chinese new year cookings and traditions (even that is quickly fading in favor of hotpot and barbeque lol). Finding your channel feels like reconnecting with my roots. Now i'm learning to use chinese spices and condiments, it's been great. Thanks for that, keep up the good work.
That's a really nice and thoughtful comment. Just to throw in Im a Jewish girl who grew up with a lot of authentic traditional cooking but I have a huge love for Chinese cooking after living in the Bay area many years ago. Her authenticity and technique teaching makes her my favorite channel. Very few people take the time! You may want to also check out Chinese Cooking Demystified. @@knightsofneeech Wow thanks! Definitely gonna look it up. I totally agree with you on authenticity, lots of yt vids abt chinese foods is just chinese take outs. Not that i don't like it (who doesn't love take outs), but it's just a shame when there's a whole other world of chinese cooking beyond typical take outs that's not exposed due to language/cultural barrier. Sure, the ingredients might be strange but it's all about learning and trying sth authentic.

They heat very fast, and yet you have complete and instant temperature control. Ideal for your carbon steel wok and other cooking vessels made of carbon steel. Use a magnet to test on the base of your cooking vessel. If the magnet sticks to it, then it is suitable for induction.

Hey there, i made this dish today and it was a succes. I replaced the beans with small chunks of broccoli because the shop didn't have beans. I am not a good cook but this was very easy for me to do. I even cut the carrots the way you did. My son and wife liked it, as did i. I added chillies myself for a kick.

I love this recipe! I have been blessed in that I've found an incredible patch of beautiful oyster mushrooms that keep on flushing and this dish works great with them! I also like to add cashews and a little celery sometimes; hope that's not a horrible thing to do! I love your videos and have learned to make many great dishes that have become part of our lives on a regular basis. It's impossible to find good Chinese food around here so it's great to be able to make my own, thanks to you!
