Sure you can, when it comes to using it as a thickener. I am not certain when it comes to marinating a protein. I've been using tapioca starch for decades in my stir fries. You can also use potato starch or rice starch as a thickener. Experiment with each to find the proper amount to use according to how thick you want your dish. I haven't tried it for tenderizing but I will give it a try next time to see if it works well.

I followed his foot steps and I make mine with a clear/white gravy as well. You mentioned in the video that there is two ways to make this dish and one way is to make it with very little gravy. Is that similar to the white/clear gravy? I'm interested to see if you have a recipe for clear/white gravy. Thank you.

Maybe try avocado oil, it has one of the highest smoking points and is fairly neutral, not imparting much flavor. 🥘♥️
