How to Make Moo Goo Gai Pan (Chicken w/ Mushrooms), 2 methods: stir-fry and boiled.

  • Ingredients:
    Chicken Breast: 420 g or .92 lb
    Low Sodium Chicken Stock: 1 cup or 237 mL
    Mushrooms: 6 oz or 170 g or more
    Nappas: 100 g or 3.5 oz
    Carrots: 28 g or 1 oz
    Snow Peas: 40 g or 1.4 oz
    Bamboo Shoots: 28 g or 1 oz (optional)
    Waterchestnuts: 28 g or 1 oz (optional)
    Garlic: 1 tbsp
    Green Onion Roots: 1 tbsp (cut)
    Salt: 1/2 tsp + 3/4 tsp
    Sugar: 1/2 tsp
    White Pepper: 1/8 tsp + 1/8 tsp
    Garlic Powder: 1/4 tsp
    Corn Starch: 2 tbsp
    Oil: 1 tbsp + 3 tbsp for stir fry or 1 tbsp for boil
    Water: 1/4 cup + 1 tbsp (slurry)
    Sesame Oil: 1 tsp
    Shao Xing Wine/Sake: 1 tbsp
    Potato Starch: 1 tbsp
    Chicken Powder: 1/4 tsp (optional)

    I love Moo Goo Gai Pan. I just had it at my favorite little Chinese Restaurant in Greenwood Indiana called Egg Roll Number #1.

    42 years ago, I ate my first Chinese meal. It was Moo Goo Gai Pan. It started my love affair with Chinese cuisine. I've been cooking this for a long time and thought I had it mastered, but I learned a few things from this video. Thanks you!

    I love the look of both of these recipes. The stir fried version because I am sure it is packed with flavor. The second version looks so bright and like it would have a much more delicate taste. Beautiful!

    I made this tonight, followed all your stir fry instructions (included the water chestnuts and bamboo shoots along with other veggies I had on hand), it was very good!     Thank you so much love this video. I made it and messed up a bit but it still turned out good. I take out the bamboo shoots to cut cost.
    I added broccoli because I had some and couldn't find the snow peas at the store. Family loved it. I LOVED THE CHICKEN. It was so tender
    and flavorful.

    Wow, learning from a master chef. You are definitely a pro. I've been checking out different ways to slice chicken breast. This is great because it is so thin and won't be under cooked and also gong to try to slice my carrots like that. I already learned to slice my bok choy separating the stalk and leaves. Thank you and want to see more of your videos.

    Hi Chef Raymond. I love cooking and learning about Chinese food. Your channel is a huge eye opener and I've learned so many techniques and tricks. Thank you.
    I made this dish tonight almost exactly. I only had Lee Kum Kee chicken bullion, so I adjusted the salt knowing my stock was saltier than what you called for. It came out perfect!! My wife and I loved it! We also make the salt and pepper shrimp on the regular. Like you said, addicting!

    OMG-I love this recipe! Moo Goo Guy Pan was always one of my favorite dishes, but the Chinese restaurants in my area do not make it this way anymore. They only put carrots and mushrooms in the dish and I am not even a fan of carrots. I have missed this dish so much. I honestly didn't know where to start since I didn't even know the names of the vegetables used, Nappas and Bamboo Shoots! I will be making my own now. Thank you for posting this recipe and the video. You are awesome!

    One of my (many) favorite Chinese dishes, thank you! I think I'd have to try the boiled way. My gas range has a hot flame but I don't think it compares to the heat that you need for real wok cooking. Thanks for the great recipe.

    I make this atleast once a week now. I use the boiled version but instead of sautéing the garlic, I add it to the leftover boiling water with salt, pepper and mirin and boil it down, then add in the slurry and put the chicken and vegetables back in. Now I don't have to order this whenever I want it. Thanks very much!
