    Keto Chocolate Pudding
    8 eggs
    1 Tbsp butter
    Pinch of salt
    2 Tbsp cocoa powder
    1 tsp instant coffee
    1/4 cup cream (+ more as needed)
    2 Tbsp allulose
    2 tsp monk fruit blend
    1 tsp vanilla
    1/2 tsp cinnamon
    1/4 cup water (as needed for texture)
    Scramble eggs with butter and salt. Add to blender. Add cocoa powder, coffee, cream, allulose, monk fruit, vanilla, and cinnamon. Blend on low. Add more cream and/or water as necessary to get a smooth texture. Blend on high for 20-30 seconds or until smooth. Refrigerate and serve.
    Savory Carnivore Egg Pudding: This recipe is for 8 eggs. My video above I used 12 eggs. Amounts may differ but ratios are the same.
    8 eggs
    1 Tbsp butter
    1/2 tsp salt (to taste)
    1/3 cup chicken or beef broth
    1/4 cup cream
    1/3 cup shredded cheese
    1/2 tsp onion powder
    1/2 tsp garlic powder
    1/4 tsp white pepper
    1/8 tsp cayenne pepper
    2 tsp chives
    2 tsp parsley
    2 tsp beef gelatin
    Scramble eggs with butter and salt. Add to blender. Add chicken broth, cream, cheese, and seasonings/herbs. Blend on low. Add more cream and/or broth as necessary to get a smooth texture. Blend on high for 20-30 seconds or until smooth. Add beef gelatin. Blend on high another 20-30 seconds. Serve immediately for a hot mousse or refrigerate and serve cold for a savory pudding.ii

    I love the versatility of this recipe. I’m already thinking sour cream instead of heavy cream, onion powder, chive, dill and capers blended with some smoked salmon would be divine! 🥰

      I was coming to say this. These recipes have been around for more than a decade. I’ve been keto for 17 years and have had this in my weekly rotation for almost as long. I cycle between egg whites and whole egg recipes. Dairy free? you can use canned coconut milk or cream or even almond milk. Unfortunately, there’s nothing new under the sun, but I hate when people try to take credit for something they KNOW they got from someone else. This savory option is the same as my filling for chicken or beef pot pie gravy…just thin it out. We’ve used it as standard protein gravy for years. I’ve got no time for people with no integrity. He definitely gets a 👍 for his honesty.

      Doing my best to be transparent with that. All recipe creators stand on the shoulders of a few thousand years of recorded cooking. Nothing is ever really new. Sometimes rediscovered or repurposed maybe.

    MAKE THIS, everyone who watches this video needs to be make this! My hubby and I can't believe how good the chocolate version is - I plan to always have a batch on hand for after dinner. IT IS SO GOOD and NO egg taste - seriously no egg taste just creamy goodness and very filling. I felt so satisfied and healthy after eating it. Thank you again Chris!

    I just made modified versions of both of these. I'm doing an egg fast right now so I had to modify them a little bit.
    I made the chocolate one but with more butter and some cream cheese and I caramelized an allulose monk fruit blend and half the butter. I used the cinnamon but no coffee and added a bit more vanilla plus stevia as it wasn't quite sweet enough with just the allulose-monk. Water instead of cream. I'm going to sprinkle it with some coarse salt for a salted caramel flavor. It is delicious warm. I bet it will be chilled too.
    For the savory, I used a bit of homemade chicken broth powder and hot water instead of the chicken broth, half Pecorino and half Cheddar. I used 2 oz. of cream cheese and half the amount of gelatin. I also increased the amount of butter to fit the egg fast. It is delicious warm. I could see this tossed with some egg fast or carnivore noodles when warm/hot. Thanks so much Chris! I'm one happy camper! 🙂

    Chris, to change it up do an egg custard. Sweet or Savory. The base is volume of raw eggs plus same volume of liquid (milk, cream, broth etc), blend. I cook mine in the Instant Pot covered. Time depends on volume. Can season any way you want. Just made it with the liquid from braising some oxtail, heavily seasoned--it was so good--if I don't say so myself.

      I’ve done that too. More of a Chinese egg pudding style or a French custard. Very tasty.

    Oh-----Sweet-----Mercy!!!!! Rather, Savory-----Mercy!!!!! (I haven't tried the sweet chocolate----yet! 😉) I want to hug your neck!!!!! 🤗 I made a half recipe of the savory. Big mistake!     OH M GEE this is amazing!! Because my non carnivore kids used up all the cocoa I had to tweak a bit. I used bittersweet chocolate melted in the heavy cream. It worked perfectly! LOVE LOVE LOVE this! I crave eggs and custardy things and this is so quick. I think I can eat this for breakfast! High Protien chocolate egg pudding for breakfast! WIN!!

    Ok, I am just blown away by the chocolate pudding recipe!! I would never have believed it was that good unless I tried it myself. You cannot tell it's anything other than homemade pudding. (Well it actually IS homemade pudding!) Genius recipe Chris!!!! 👍 I still have to try the chicken flour.

    I made the savory version, despite my aversion to the idea. I ate some of it warm. HEAVENLY. Yet, even the cold version is quite good! WINNER!
    Here's a thought: when I dipped into the warm version, it reminded me of "cream of whatever soup." THIS (maybe thinned a bit) could be used in the classic Thanksgiving Green Bean Casserole. (Just gotta replace those French friend onions.) My brain is churning, thinking of ways to incorporate this into other recipes.

      No you don't have to replace the French fried onion rings if you are keto. Carnivore may be different but I know FF onions are low carb. Check label.

    So amazing! I made Maria’s (chocolate) version just last night but scrambled the eggs because my blender isn’t as powerful as the one she described as being needed. The funny thing is, I added all the exact same spices & ingredients that you did, right down to the instant coffee, and I have never had a better pudding in my life. Now I need to try the savoury version, because I’m a savoury girl through and through! Thank you once again, Chris!

    Thank you for your video. Can't wait to try it. IMPORTANT NOTE: Look up the "extra" ingredients in heavy whipping creams before you buy them. Search for what they do to your body. Its better to use just heavy whipping cream without the extra unnecessary ingredients.

    Chris I have done a simular recipe for protein ice cream using Ninja Creami. I use a nut milk to cut carbs and calories. I do the sweet version the allulose helps crystalizaton and softness when freezing.

    I don’t know how I missed this video before. I scramble the eggs when I make it too. So much easier than peeling boiled eggs! I’ve only made the sweet version, but sweet is becoming problematic for me, so I’m going to try the savory version.

    Love, love all your recipes...you have such amazing techniques and know how that it makes it easy to tweak slightly to my favorite flavors...keep it up!! We had an amazing french smoke salmon quiche with chunks of cream cheese...I can see making the savory pudding then mixing in chunks of cream cheese and smoked salmon, topping it with dill and wow France!

    Thank you for your recipes. I noticed that the 1 tsp Vanilla is verbally mentioned in your video but 'missing' as an ingredient in the written directions for the Chocolate version. You might consider correcting this as you mention it is an important addition to this version. Thanks again!

    Ok. I did the chocolate pudding last week and it was great to have a little dessert dish. Tonight I made the savory pudding and it is fantastic. Rich, herbal, and delicious pudding for anytime. Great recipe. Thanks Chris.

    Love the pudding with the scrambled egg version. It doesn’t have that smell like when you use boiled eggs. Quite tasty. Looking forward to trying your savory recipe and all the other creations you’ll be coming up with I’ll be watching.

    I would try it without any sweetener. For me the cream would probably have enough sweet to it. Since being on carnivore for 6 months, everything tastes really sweet even if there's no sugar. I can't even use the LMNT Flavored packages anymore because they taste too sweet. I loved that mango Habanero when I first started, but it's too sweet now sadly. I'll have to experiment. Looks good though

    Amazing ideas. I follow Keto, and I'm brainstorming and wondering if the savory version would make a good mashed potato substitute on a cottage pie. I'm going to attempt it and hoping it works out because I miss potatoes!!! Thank you for these recipes.

    I have made the chocolate version for years. I use Vita Coconut Unsweetened milk instead of cream. You can also make a lower calorie version with just egg whites (equally as good but not as rich). I haven't tried the savory version but it looks good and I'll give it a try. I can also see the possibilities of adding a bit more liquid and using the choclate version as a topping over a keto cake perhaps and the savory version ss a gravy or sauce for chicken or turkey dishes.
    I've also seen Janet Greta make all kinds of cream pies with it using PSMF bread. Yum! She's not doing Keto right now, but if you look back at some of her older videos...you'll find what I'm talking about.

    Just made this. Didn't have instant coffee around buuuut did have a bottle of Kahlua around, soooo....also didn't have heavy cream around but did have heavy cream powder, which was sitting next some coconut milk powder I had around, soooo, used both...also, didn't have the sweetener you had but did have some stevia, soooo....and yes, turned out awesome! Can't wait to spring it on the hubby, thinking of topping it with some "candied" pecans (toasted in butter with stevia).
