Yes, I’m seriously making low carb / keto / carnivore friendly refried beans to help you enjoy one of your favorite Mexican dishes without all the carbs and oxalates of pinto beans! Saddle up for a wild ride across the border as we make high fat, high protein, low carb, totally animal based frijoles refritos (refried beans)!

    Recipe:
    1 Tbsp lard
    4 oz cream cheese
    8 large eggs
    2 tsp cumin (more to taste)
    1/2 tso garlic powder
    1/2 tsp paprika
    1 tsp toasted gelatin
    Salt to taste
    8 oz (200-250g) no-sugar bologna
    Water as needed for blending
    4 tsp egg white powder
    Toast 1 tsp of unflavored gelatin in a dry skillet stirring constantly over medium heat until a yellow/brown color is achieved. Add to a blender.
    Add lard to a skillet over medium to medium/low heat and melt. Add cream cheese to skillet and melt. Add eggs, pinch of salt, cumin, garlic, and paprika, and scramble until eggs are fully and firmly cooked and no liquid remains. Add to blender.
    Tear bologna into pieces and add to blender. Turn blender on low. Add a little water (about 1/4 cup) to help eggs and bologna start blending together. Stop blender, shake carafe, and turn on low again. Repeat this process untik ingredients combine. Use water as necessary to get ingredients to flow but try not to use more than necessary. If you use too much water the end product will be runny. Once the mixture begins to combine, turn blender on high for 20-30 seconds.
    Open blender and taste for seasoning. Add more salt and/or cumin (or other spices) as necessary for your taste. Add 2 tsp egg white poeder. Blend on high to combine. Add an additional 2 tsp egg white powder. Blend again on high to combine. You should have a thick pudding texture.
    Scoop about 1/3 of this mixture into a microwave safe bowl. Cover and microwave for 2 minutes until set. Remove from microwave, add to a large mixing bowl, and break into small pieces with a whisk.
    Add the other 2/3 of the pudding mixture to this bowl of pieces and combine with whisk until texture is as smooth as you want.
    Top refried beans with cheese if desired and serve immediately.
    (Note: refried beans will not reheat very well as the egg white powder will set up. If you want to reheat leave out the egg white powder and only add it to the portion to plan to microwave. Add egg white powder as you wish to each serving after reheating it to get the desired texture.)

    I just made the beans. I decided to add a couple pieces of bacon that I made this morning. So good. I made myself a bean and cheese burrito with the carnivore tortillas. I am one happy Mexican right now :) Thank you Mr Chris.

    Made these last night. I didn't have to add extra egg whites at the end and skipped the microwave stage so we could reheat. I used bacon grease to cook, and also added 1/2 tsp New Mexico Chili powder and used smoked paprika instead of plain paprika. I think adding the extra spice made the color pretty spot on. The taste is spot on. Texture was fine. Pre-keto I used to add a little water to my regular refried beans when reheating; texture of these was the same. NO egg taste whatsoever, and I am really sensitive to that. It didn't have to gas out over night...just straight up refried beans from the get go. No reason for anyone to hesitate making these; just awesome. Thank you!

    Chris, your channel is gonna blow up dude. Your creativity is unmatched by anyone else in this community. And that’s no hate to the rest of my carnivore peeps out there cause I’m a fan of LOTS of carni channels and they have all helped me on my journey in different ways, but in terms of recipes the stuff you come up with is so out of the box in the best way!     You have done it again! I just made your mashed "potatoes" the other day, all I can say is WOW. I am doing carnivore this month, usually more Ketovore, you are helping this month be a lot easier than it already is. Also have made your carnivore pizza crust, alfredo sauce, the butter mayo., wow!!

    Many of us are never going to be able to get the accuracy or balance right and would LOVE if restaurants would include a few such items on the menu.
    We can all pretty much cook a chop or steak, maybe not as well as you but these things would make dining out something we looked forward to.
    Chefs need to learn a few.

    Amazing!!! I used half a small Camembert with some cream ( it’s cold out and I don’t have cream cheese) I added some smoked duck, ( no bologna in the country I live, but always slices of smoked duck) then I put in all the spices and followed the recipe. I watched this one hour ago. I’m already done eating. I served it with some Mexican style chicken I had in my freezer. My family loved it for a late breakfast. Thank you for sharing you great ideas.

    I just wrote this review on Keto with the Keto Twins on Facebook.
    I finally got around to making Chris Cooking Nashville's Carnivore Refried Beans. I happen to love refried beans. So much that I personally believe they deserve to be their own food group. I've always bought canned (LaPrefereda brand with green chilies) because they are so easy and so dang good! But, they just don't fit with a low carb lifestyle.
    If you aren't acquainted with Chris, the man is an absolute genius. His brain must work overtime to come up with some of his recipes. For instance, his carnivore mashed potatoes are off the hook! Now I know his refried beans are too. **Chris' brain: Hmmmm, we need to come up with a sub for refried beans. Afterall, Ash (his wife who is keto) loves Mexican food and traditional refried beans just don't work anymore. You know what? I bet if we melted some cream cheese, added some eggs to scramble along with some spices and blended that with bologna we'd have something that tastes the same.**
    Incredible! Here is his video showing how to make them. The only thing I did different is I felt like when you take out the 1/3 to microwave to firm it up, I ended up microwaving for a total of 6 minutes instead of 2. Also, at the end when I stirred it all together I stirred in a small can of green chilis. It is a bit time consuming but worth it, IMO. We will see how they reheat. The jury is out on that but man, they were good!

    I knew the refried beans recipe would be terrific but I didn't have any bologna. And I had no desire to drive 15 miles one way to buy any. My solution: chopped beef hot dogs. Perfect! I know what is for lunch today!

    You’re blessed you have a supportive wife. My family thinks I’m crazy even after 2 years of being carnivore and get gaslit and attacked at times. Even after losing 50 lbs and clearing up acne

      It is 7 layer taco dip...refried beans spread on dish, salsa on top, then guacamole, shredded cheese, sour cream, cut up rotisserie chic or cooked hamburger...you'll just have to look it up...and take your tortillas, cut up and fry til crisp for dipping?

    Vienna sausages work for the bologna or hot dogs!
    I wanted to make your refried beans but all I have is a small ninja blender, like used for smoothies. I found it worked for a half batch. 1 can drained Vienna sausages was right for a half batch. They are shelf available whenever I want to make a batch. It is so good!! Thank you!

    Finally got around to trying the refried beans recipe today! It was excellent! Your instructions were clear and easy to follow and the video was also helpful in achieving my final mixture. I didn’t have a big blender so I blended the meat ( I used a couple of hot dogs) in my small blender then utilized my stick blender for the eggs. Next time I’ll add a bit more moisture for a smoother texture, but it’s definitely a keeper recipe! We made some pork rind nachos…the beans, hamburger and a sprinkle of cheese!❤

      I’m using my stick blender for nearly everything now. I think it might work for this recipe.
      It’s just such a pain to clean the high-end Waring blender I own, and there are only a few things that absolutely demand it.

      Yeah that’s the issue with any recipe using a blender. They’re great but they’re a bit of a pain to clean.

      @@ChrisCookingNashvilleunlike the older glass-jar Oster blenders, the modern ones have a polycarbonate container and the blades aren’t easily removed from it. I’m scared that my dishwasher (machine) will trash the blades if I just wash the container in it rather than run the blender with a mix of detergent and water before rinsing it. Maybe the blades can endure the machine but I’m afraid to try.

      Om really curious about what brand of bogna is made without sugar , dextrose or maltodextrin. You mentioned Boarshead so is it truly sugar free?

    I think I'm going to hybridize this recipe and your chili recipe together for a thick carnivore chili. I didn't do your chili since the liquidity read to me like (as Ash commented) the meat sauce to go on hot dogs or chili soup. I used to, as another commenter mentioned, use Eden Black Soy beans (a little whole and mostly mashed) to thicken and glom together the meat in chili. After having estrogen-receptive cancer, its a no-go on the the soy so this re-fried bean texture would be a great replacement. Thanks so much!

    Actually, another bad thing in beans is lectins, as well as the oxalates. Lectins can block the absorption of nutrients and are hard on the digestive system.

    P.S. both cumin and paprika are high oxalate so if a person is sensitive, go real easy on those spices.

    I am Technically Keto. I found a recipe for a nice low carb crispy tortilla taco shell . Its perfect for a tostado with ground beef, guacamole, salsa, cheese and shredded lettuce. but I miss the refried beans of the simple bean and meat and tomato sauce tostado. I'm gonna try this for my next Taco/Tostado Night.
    I don't even know where to find bologna in my store anymore. I'll have to check it out. Happy New Year!

      Haha sounds good. Hope you enjoy. I’d suggest the deli counter if they have one as they usually have better quality bologna without sugar. The major brands tend to add corn syrup to it.

    Made these tonight and I'm absolutely blown away! I was happy with the results before adding the egg white and I'm find without the chunkiness so I'll probably skip that in the future. That way I can also reheat the leftovers with no worries.

    Going to try these! Request: I love carnivore and would like to texturally have a meat chip that is like a potato chip. Crisp but tender. I have made chicken chips from sliced chicken meat and while they are chip like they are sharp chards. Can you make meat chips that are potato chip crisp? 🥔🥩

      ​@@ChrisCookingNashvilleyou could do a quick post of Mexican dinner with "refritos", Spanish "rice" and burritos or tacos using your tortilla recipe. Doesn't need to necessarily be a cooking video, just make a meal and post a picture with the links to the videos you already made. Only extra work would be plating it up nicely for the picture.

    Chris…is there a way to reheat your mashed potatoes and not have them taste like scrambled eggs? I live alone and the recipe is too much to eat all at once. Love your channel…thanks!

      Thank you so much. Yes make them without the egg white powder. Heat gently with lots of stirring. You can always add in a little egg white powder to each serving as necessary to get the texture right if need be, but you probably won’t need to when reheating. 😊

      I’ve made and reheated the potatoes a couple of times without them having an eggy taste. It’s probably because I used a generous amount of butter while reheating!! Love me my butter!! 🤤🧈🤤
      Oh, and the second time I made them, I just did a half recipe- perfect amount for about three servings!!

      I’ve found that 11 second bursts in the microwave, stirring between, work to gently reheat them without scrambling (even with the egg white powder in the initial batch). Obviously not much stirring can be done the first couple of goes, but after that it starts to get softer and stirrable (or at least break-up-able then stirrable).
