    For a caramelized taste, I melt brown butter in the pan before adding the crème brulée batter, it's delicious.
    The brown butter floats on the surface and creates a nice tasty crust. I also like to put it under the broiler to create a more charred surface.

      @@tammyc1812 about 2 tablespoons, i put it in the pan and warm it in the oven until melted, then I pour the batter in the pan and bake it as Anita did.

    You could make your puddings in individual ramekins for portion control as long as they are oven compatible. 😋

      I made some in individual silicon muffin cups that I put into a metal muffin tray. It worked great.

    I've made the egg pudding a few times, it's interesting but I do prefer the custard with cream and a little vanilla. So rich and yummy!

    I tried the egg pudding. Even biught a special pot for it. I just couldn't get past the texture.
    I made creme brulee but I made it with whipped egg whites, folded into a mixture of egg yolks and cream cheese. Got all of the folks at church loving it. They were shocked that it had zero sweetners. ❤

    Happy Birthday!
    Mine was last Sunday. I made myself a keto cheesecake, in water bath, and my grandson thought it had creme brulee on top!! It was just whipped cream as I don't have a kitchen torch! I'm going to try these goodies for sure!

    Im not 💯 Carnivore & I want to make Earl Grey Crème Brûlée this way! (Simply steep 1-2 teabags in the cream while it warms). I think I would do mini ramekins too for portion control. And maybe before enjoying chilled, sprinkle some allulose & broil or torch it. Yum! 😎

    Hi Anita! Look forward to watching this video. Question: have you ever done (I'm new, so maybe you have) a video on where you were when you started your diet and how you have healed and oh, are you still healing certain issues? I see younger people start carnivore and it seems they miraculously heal in a week. 😆 But I'm 52, 2 months in, and I know it's going to take a while.

      I'm not carnivore so I dress up the egg pudding with canned coconut milk/cream instead of water along with some collagen with stevia or plain, some extracts, a bit of glycine & come up with wonderful rich flavors!!
      I use a keto vanilla collagen with some MCT & stevia with maple extract & it reminds me of french toast!! SO yummy!
      My version of non-dairy, non-carnivore creme brulee 🎉😂

    I do the egg pudding in my Instant Pot as I don't have the Ninja Grill and it turns out perfect every time. Tenting with foil prevents some of the issues mentioned using the IP as does blending in my Ninja single cup blender prior to pouring into whatever container is to be used. I use a well greased ramekin.

    I agree, Anita, I love dairy but it doesn't love me back. I think I just gain weight by looking at it.😅 I love, love, love eating Carnivore, but life would be sooo complete if I could include dairy...so it has to be a rare occasion. Plus, I find the sugar, or galactose, in dairy makes it sooo addicting.

      The egg pudding is surprisingly very similar to the crème brûlée, if you add sweetener and vanilla and eat it chilled.

    I put English toffee flavor drops and a pinch of Redmond's and then the browned butter on top. Too yummy. I've also found that I have to use a stick blender because I can't stand the little squiggly bits. Inconsistent texture issue with the egg.

    Great video. Question though… can the air fryers handle that much concentrated moisture blowing around ? I have no idea, but I don’t see any discussion of this in the manual so am wondering . (I just have the basket type. )

      I think so. My Ninja also has a dehydrator option as well as bake, roast, etc. It's pretty multipurpose.

      Thank you so much for your support! Yes sadly dairy does stall me as well as give me acne, so the creme brulee is a special treat only! This recipe is not on my website but it's just 2 yolks and 1/2 cup cream. I have not yet tried with ramekins although that sounds like a great idea for potion control! I would divide the mixture into 4 small ramekins, that should work fine!

    Question…..What app are you using to figure out the macros of a meal? I use My Fitness Pal and I can not input recipes, so can’t figure out what a serving size macros would be. Do I need to use the Premium paid version?

      I use cronometer and don't know how My fitness pal works. Cronometer does let you make recipes and I think so does carb manager on the free version.

    Nah don’t wait to refrigerate before eating. I have some as soon as I can deal with the heat. Then the rest of the moulds go into the fridge. Giving up crème brûlée was so hard as I made 6 moulds with 600mls of cream every week for nightly deserts. So now after 2 weeks of carnivore I’m loving having my desert again. Thank you so much.

    I'm glad I'm not the only one having trouble getting the silky texture. I used chicken broth instead of water and it was not very tasty. Also the texture was grainy and clumpy like very runny scrambled eggs. I did put a wire rack in the pan like she did. I thought maybe I put too much water in the pan because the bottom of the bowl was a little submerged (about 1/2 inch or less) rather than just sitting on the rack so the steam and heat could cook it. I thought maybe that made the part in the water cook faster than the rest of the mixture. I haven't had the gumption to try it again. I watched SBG's video several times and thought I copied her exactly. Just proves how exact you have to be in cooking sometimes and it can really be a chemistry experiment.

      Definitely! I cannot tell you many times I watched and analyzed Bella's making of the egg pudding and others who made it as well! The only thing I will do different on my next one is to use beaters to whip the eggs so there is no bits of white left. But I've been super happy with how silky it is each time and no messing and guessing around!

      I made Bella's recipe numerous times before I got it right with a good pot, a proper stainless steel bowl and a decent rack that has one inch high feet to keep the bowl from touching the simmering water. I've been having it for breakfast every day for months with butter melted on top , and I never tire of it. I add about a tablespoon of solĕ water and use chopsticks to beat the eggs.😊

    Anita, Thanks for this. I’m doing something called PrecisionPSMF which is defined by Dr Karl Goldkamp - Keto Naturopath. It’s a combination of clean keto a couple of days a week and essentially carnivore PSMF on the other days in the week. This video reminded me of your PSMF egg bites a year ago. I made them and they are fantastic but I conclude this would be an easier way to make them. I’m going to combine these two video recipes and try and make this using egg whites for my PSMF days (I’ll use better stevia cinnamon vanilla as the flavoring and will try and add Further Food vanilla collagen). I’ll make this exact egg pudding recipe for my clean keto days as that’s when I make sure to get in the whole egg as they aren’t allowed on the PrecisionPSMF days so that will be a nice addition rather than always having scrambled eggs (plus, I just came across your egg fast keto shake looking for the PSMF egg bites so plan to add that as well). Thanks for the ideas - I’m thinking the egg white one should work out but won’t know until I give it a try. I have the ninja grill as a result of your videos.

    I've seen people making the creme brulee without heating the heavy cream. Why do you heat it?

      I have no past experience making creme brulee other than watching Kelly make hers in a pan on the stove. She heated hers so I heated mine! 😂

      It's a Canadian product but it's basically organic coconut aminos. The 'Naked Sauce' is the brand name, I think if you search for coconut aminos where you are located you will find it under another name brand.

    I used to make baked egg custard in the microwave, would microwave work with this... The only difference in ingredients is sugar and milk

    Anita, Your eggs are not silky because your water is off. (water ratio: 1:1.5 ) I didn't know if I was allowed to put in links but search for Chinese silky eggs and you will find some great recipes. Flo Lum is a good one and Made with Lau,. I love your videos! Keep them coming. I am currently following your egg fast and then doing the sardine fast next. God Bless!

    So why do you say dairy is not good to you? Like what type of symptoms do you get after eating dairy? I wonder if dairy is what is keeping me from eliminating my body aches.

      Dairy is very inflammatory. Many people will tell you that when they eliminate dairy their bloating and aching joints go away. As well as weight stalls. Some people are just sensitive to dairy.
