Follow the recipe the twins gave for amounts. But I have halved the recipe and it worked fine. Just don’t scramble the eggs until dry. Leave them a little moist but fully cooked. Cool a little and put in the blender just like the boiled ones in the video.

True, only the whites are used and then a boxed/carton nutmilk of choice to further reduce the fat (about a cup vs the 13.5 oz of canned coconut milk. All of us started out with this recipe though and all of us were very surprised that we ended up loving it… Cool thing is that you can change the flavor profile and leave out the cocoa powder and add different extracts. Banana almond butter is my personal fave.
I make mine with cooked egg white only, which I use carton eggs and cook them very quickly in the microwave. If you use allulose sweetener, you can freeze it for chocolate ice cream. So good! (I also omit the cinnamon)

Use your instant pot to make the eggs, it takes about 6 minutes start to finish, and you then dump in the ice water, and the peeling is a breeze. After overnight refrigeration the egg smell completely goes away. It is delicious topped with whipped cream.
Totally agree !!!! Hard boiled eggs in the pressure cooker is THE EASIEST way ever to do them! I hated making them for hubby until I started doing them in my Ninja Foodi. Now it’s a breeze 😃 The peels literally come off in one piece usually. Oh and I agree with you, Emily.. hard boiled eggs and pudding DO NOT go in the same sentence lol 😂
@@gigivarnum oh I LOVE my pressure cooker! I’m on my 3rd in the past 10 yrs lol I usually do about 10 for Hubby for the week. Pour about 1 cup of water in your instant pot pot, set either a rack in the bottom and set your eggs on it. Or I use a wire mesh colander from Amazon that has little feet on it. Super easy then to take the eggs out and sit them in the ice bath. So once eggs are in the pot. Close the lid, seal the vent and do high pressure for 8 mins. Once the 8 mins is done, let it naturally release for 2 mins then do a manual release. Once the pressure has released, remove the eggs and immediately put them in a bowl of ice water. Let sit for 7-8 mins. Drain water from bowl and shake the eggs good in the bowl. I just sit my strainer in the bowl and then just shake the eggs in it when they are done. Shells usually just peel right off. I teach classes and have a personal group on cooking with air fryers & pressure cookers. Send me a msg if you’d like more info. 💜
So I did make it and it was a hit! I didn't tell anyone what was in it until after they tasted it and said how good it was. Everyone was absolutely shocked! And I was so happy to see that Marie also has a recipe for egg nog also using hard boiled eggs, everyone has loved that too!

I don’t think I will be making this pudding 🤢, but thank you for giving so many laughs whilst watching you make it. I love your little dog, he/she is very sweet in a little old man kind of way. I make a chocolate pudding. One can of coconut milk, twenty grams of cocoa powder, sweetener to taste, forty grams chia seeds. Mix til all combined, pour into four ramikins and chill in the fridge for a couple of hours. Depending on how thick the coconut milk is you might need to use less chia. My husband loves them. You can also add some orange flavouring to the mix which is very nice.
I have made these egg recipes & find scrambling the eggs in the microwave instead of boiling & and all that peeling also helps eliminate that boiled-egg Sulphur smell. I made some AWESOME eggnog last Christmas using scrambled eggs, heavy whipping cream, almond milk, powdered Swerve & nutmeg. I think it was Maria Emmerich's recipe as well. (I HATE peeling eggs!)

I had to come back and leave a comment because I’ve been making this lately to help me get past a weird egg aversion I’ve been dealing with ever since I had a bout with severe food poisoning. Eggs didn’t cause it, but my stomach just balks at certain foods. I’m adding both beef gelatin and collagen to my diet on a daily basis, which is helping to heal the damage to my gut, but I am struggling with getting enough protein. This has been a great way to add a good amount of protein to my daily food intake. Thanks again Sarah and Emily! (And of course, Maria E also!)
For perfectly-boiled, easy-to-peel eggs: let eggs sit out and reach room temperature. Bring water to medium boil and gently place eggs in pot to cover eggs by an inch. Set timer for 12 minutes (for medium-hard boil). After 12 minutes, Immediately remove from boiling water and place in ice water bath, set timer for 15 minutes. After 15 minutes, remove. To peel: gently crack shell all over (including the ends) and then gently roll the egg between your palm and the counter, including end over end to loosen the shell. Eggs will peel easily. If storing in refrigerator, leave unpeeled to retain moisture. Voila! Love your channel, you girls brighten my day!
I've done a half batch of this, was worth putting in a container overnight, got rid of the smell. I also did a lemon/coconut version, which was super tasty!

Doesn’t matter if eggs are cold but if you are doing very many cold eggs will cool the water a bit. 3. Simmer for about 15 minutes. 4. Drain and shake pan to crack shells. 5. Cover with cold tap water 6. Peel immediately. Shells will come off easily and often practically fall off. Really!
Hey keto twins, it worked great and I’m glad you said you had to blend it forever because I was a little worried in the beginning, but I hung in there and it turned out perfect. I bought the ready-made hard boiled eggs at Walmart and they don’t have that sulfur smell and it saved a lot of work. Keep being awesome.
Maria's newest version of the recipe calls for you to cook the eggs in a frypan instead of hard boiling. So much easier & faster and it ELIMINATES ALL or most of the egg smell. The PSMF version uses egg whites (no egg yolks) and the Keto version uses the entire egg. I use coconut milk in the carton (not the can) as it's a lot lower fat and heat the milk when I want to eat the pudding warm, otherwise I use cold milk and pop it in the frig after I make it. I also cut back quite a bit on the cinnamon. I love it!
I don't eat lower-fat anything so can you explain to me why you would use a lower fat product? That's going to prevent me from making it. can I substitute full fat instead?
@@marceasusanna7749 the low-fat is for PSMF which would be if they were using only the whites. If your using the yolks and making it keto you can adjust the fat level to your personal macros.
I've made the keto chocolate pudding for a number of years now. Well over 30x and usually take it to potluck luncheons, I do not tell what the secret ingredient is unless asked, and always get a 'no way' reaction, because it is so dang good!
I hard boiled the eggs and kept in refrigerator for 1-2 days before making the pudding and no sulfur smell. No smell at all. Honestly, if I didn't make the recipe myself I wouldn't know it was made with eggs. Great recipe thank you for testing it out and sharing.
The best way to be successful at shelling eggs you must boil the water first and then slowly drop the eggs in the water turn the burner down and cook them for 5 to 7 minutes when you drop them in the hot water it releases the white film from the egg makes it a whole lot easier to peel
I broke down and finally bought the Dash egg cooker which essentially steams them in about 15 mins. Cold from the fridge. Never had one sticking egg shell which used to make me mental on my farm fresh eggs 🥚 Life changing!!!! And also no overcooking. I have also heard Instant Pot does the same because “steam” and yes use the hole poker thingy…I think it lets steam in so that helps with the peeling probably
Thank you for trying!! I still stand by the pumpkin version too. sub in pumpkin for the chocolate and replace cinnamon with pumpkin pie spice. If anyone wants this lower in fat, you can also use just egg whites. You'll need to use the volume of one egg, so 3 tablespoons of egg whites for 1 whole egg. (normally 2 tablespoons of egg whites in one egg).

The easiest way to peel eggs after the ice bath...tap each end of the egg a few times on the counter, then roll the side of the egg all the way around with light pressure. From finger tip to the end on your palm. Vuala the shell is completely separated from the egg.
For years I used to start my hard-boiled eggs in cold water, but no longer! Start with boiling water, then add a generous splash of vinegar. Simmer on medium for 10 minutes, then turn off the heat and let them sit for 2 minutes. Put in an ice bath until the eggs are totally chilled. When peeling, always put them under cold running water. Voila! The shells slide off, each and every time. Next, replace the cinnamon with 2 tsp of instant coffee granules. It makes it DELICIOUS! Also, we (my picky husband who asked for me to make the pudding again) use some whipped cream. 😋
You can also take this base recipe (eggs, coconut milk/milk alternative, sweetener, pinch of salt) and do just about anything to it and it still works. (I don’t use it for PSMF. Just for a keto dessert.) Like adding cream cheese and berries for a cheesecake pudding.

Also, I use my electric pressure cooker to cook my eggs and the shells practically fall off by themselves. Very little effort in pealing them. Parting your hair either way looks great!

I eat a lot of “boiled” eggs, but I use the air fryer now. For 8 eggs, I air fry them at 275 degrees for 17 minutes. Then gently smack the egg on cutting board and ROLL the egg to crack and peel. Easy peasy. I discovered Allulose from you two, and LOVE it.
Get a vegetable steamer basket that fits in a large-ish pot, put water in up to the bottom of the steamer, and place your eggs on the steamer. Bring the water to a boil, then steam the eggs for a good 15 minutes. When done, put the eggs in ice water to cool quickly. There you go! Steaming to hard "boil" makes them easy to peel.
Perfect boiled eggs every time for me is put eggs in cold water. Bring to a boil, once boiling set timer for 10 minutes. Remove from heat, run cold water over…I find they peel, easier when still pretty warm or hot and I use a spoon to peel and it works beautifully most every time.
To peel eggs easily put them in cold water for a few minutes, then drain most of he water. Put the cover on the pot and shake it gently and you will hear the shells cracking. Just watched your video. I had never heard of the PSMF keto egg pudding. Where have I been? I read in the comments below that scrambled eggs can be used for this recipe. I have 1 1/2 cartons of whole eggs that must be used this week, and this is the perfect recipe. I just made it with 1 c. almond milk and 1 1/3 c. eggs, scrambled. Most of it went into the fridge to chill, and I ate a small portion warm. Delicious!! Thank you for sharing this recipe. I'll make it again later in the week using coconut milk. BTW, I love the center part in your hair. It makes you look glamorous.
Just so happens I had just hard boiled some eggs before watching this vid. I made 1/2 recipe and yes the smell was bad, but dissipated as you said. The taste was excellent. Its amazing how you guys were able to convince me to make this. It's by far the strangest keto item I've ever made.
I have not tried this recipe but am wary. I tried one of her other sweet egg-white based recipes and it was awful. However, I have tried Keto Naturopath's "Dairy Free Egg Yoke Chocolate pudding" several times and I love that one. I've even substituded the chocolate with a few TBs of pumpkin puree and it was quite good. It uses only 6 egg yokes (a win for me) and tastes divine. Plus, she (KN's wife) has such a wonderful, down-home friendly vibe. Love her cooking videos.

Using an egg spoon makes peeling easy. It's the kind used with a egg cup for serving soft or hard boiled eggs (I first found them in Europe). It is specialy formed to fit the egg shape.
@@ketotwins I really enjoy your channel. Maybe it's the combination of my 3 gentle wacks around the side edge of the egg, on the counter top, plus using the egg cooker with the egg spoon. Also, the thicker the spoon edge and the larger the spoon, the harder it is to peel a egg. I've never tried it, but some people place all the eggs to peel in a leakproof, sealable container, somewhat like a chicken lunchmeat container. Then they shake it up. I thought that might leave marks on the egg whites so haven't tried it when doing deviled eggs.
Always add a good pinch of salt to water, while cooking eggs to assist in peeling afterwards. Or, a splash (a tsp or so) of white or apple cider vinegar to water, will also make peeling easier.
Good job and you are hysterical with your reactions. I made it too, and was surprised but for me I felt like there was still some of the texture of the yolks. I might try the scrambled egg version to see if that helps but it is hard to believe what it is made of. I added some liquid Stevia to mine and it helped a lot. I make a home-made ice cream with 4 raw egg yolks and a small piece of frozen raw liver (size of a silver dollar or two) as an extra vitamin boost. You pulverize the liver with the other ingredients while it's frozen. If you use a strong base flavor like chocolate or coffee, you cannot taste or see the liver. I will try your recipe. I agree, far easier doing the scambled eggs method. Experimented making a low-carb version of this by adding 1 can of pumpkin. Created the most delicious pumpkin pie pudding ever with an even better texture!

You know you can do the same recipe with scrambled eggs. You avoid the sulphur smell and having to peel them. Scrambled gives you the exact result.

No matter how I cook them, I cannot successfully peel eggs.
I like it even better with scrambled eggs. I have a cheap old 20 year old blender and it blended totally smooth for me with scrambled!

Hey keto twins, it worked great and I’m glad you said you had to blend it forever because I was a little worried in the beginning, but I hung in there and it turned out perfect. I bought the ready-made hard boiled eggs at Walmart and they don’t have that sulfur smell and it saved a lot of work. Keep being awesome.

Maria's newest version of the recipe calls for you to cook the eggs in a frypan instead of hard boiling. So much easier & faster and it ELIMINATES ALL or most of the egg smell. The PSMF version uses egg whites (no egg yolks) and the Keto version uses the entire egg. I use coconut milk in the carton (not the can) as it's a lot lower fat and heat the milk when I want to eat the pudding warm, otherwise I use cold milk and pop it in the frig after I make it. I also cut back quite a bit on the cinnamon. I love it!
I don't eat lower-fat anything so can you explain to me why you would use a lower fat product? That's going to prevent me from making it. can I substitute full fat instead?

Is this just because it is PSMF which uses low fat on those certain days?
@@marceasusanna7749 the low-fat is for PSMF which would be if they were using only the whites. If your using the yolks and making it keto you can adjust the fat level to your personal macros.
I've made the keto chocolate pudding for a number of years now. Well over 30x and usually take it to potluck luncheons, I do not tell what the secret ingredient is unless asked, and always get a 'no way' reaction, because it is so dang good!

I hard boiled the eggs and kept in refrigerator for 1-2 days before making the pudding and no sulfur smell. No smell at all. Honestly, if I didn't make the recipe myself I wouldn't know it was made with eggs. Great recipe thank you for testing it out and sharing.

The best way to be successful at shelling eggs you must boil the water first and then slowly drop the eggs in the water turn the burner down and cook them for 5 to 7 minutes when you drop them in the hot water it releases the white film from the egg makes it a whole lot easier to peel
Yes, but cook them for ten minutes or the yolk won’t be cooked.

I broke down and finally bought the Dash egg cooker which essentially steams them in about 15 mins. Cold from the fridge. Never had one sticking egg shell which used to make me mental on my farm fresh eggs 🥚 Life changing!!!! And also no overcooking. I have also heard Instant Pot does the same because “steam” and yes use the hole poker thingy…I think it lets steam in so that helps with the peeling probably
I own a DASH EGG steamer just for the convenience…even though I had perfected boiled eggs….let the DASH do it…

Thank you for trying!! I still stand by the pumpkin version too. sub in pumpkin for the chocolate and replace cinnamon with pumpkin pie spice. If anyone wants this lower in fat, you can also use just egg whites. You'll need to use the volume of one egg, so 3 tablespoons of egg whites for 1 whole egg. (normally 2 tablespoons of egg whites in one egg).

Just a tip, fresh eggs are the hardest to peel once they are hard boiled. Use ones that are about a week out from purchasing at the store!

I cut the recipe in half but scrambled the eggs. Tasted great and hubby liked it, too. Scrambling was easier than boiling.
The easiest way to peel eggs after the ice bath...tap each end of the egg a few times on the counter, then roll the side of the egg all the way around with light pressure. From finger tip to the end on your palm. Vuala the shell is completely separated from the egg.
For years I used to start my hard-boiled eggs in cold water, but no longer! Start with boiling water, then add a generous splash of vinegar. Simmer on medium for 10 minutes, then turn off the heat and let them sit for 2 minutes. Put in an ice bath until the eggs are totally chilled.
When peeling, always put them under cold running water. Voila! The shells slide off, each and every time.
Next, replace the cinnamon with 2 tsp of instant coffee granules. It makes it DELICIOUS! Also, we (my picky husband who asked for me to make the pudding again) use some whipped cream. 😋
You can also take this base recipe (eggs, coconut milk/milk alternative, sweetener, pinch of salt) and do just about anything to it and it still works. (I don’t use it for PSMF. Just for a keto dessert.) Like adding cream cheese and berries for a cheesecake pudding.

That's the spirit I like to see in the Keto Twins! 😂🤣 I was pretty confident you wouldn't hate it as I've seen several people try it and as long as you let it sit a while everyone seems to agree it's not horrible. I myself am not a pudding fan, but it does seem to be a winner of a recipe for those who do. I think of it in my brain as PS MF (I can assure you my brain doesn't say Modified Fasting).

I absolutely love love love this so pudding. I leave out cinnamon, and have a super high powered blender helps.
I also leave out the cinnamon but I have a super old blender and it still works. I think everyone should try this. I love it and my ten year old loves it too.
I'd love to see more recipes that don't require kitchen appliances. I'm a minimalist, so I don't own blenders or mixers of any kind (or even a toaster or coffee pot lol). Love your channel!

Thank you for trying the egg pudding for me! My thoughts were exactly like yours, i.e. sounds too gross to try. It was fun watching your before and after reactions! Also, I use my electric pressure cooker to cook my eggs and the shells practically fall off by themselves. Very little effort in pealing them. Parting your hair either way looks great!

I eat a lot of “boiled” eggs, but I use the air fryer now. For 8 eggs, I air fry them at 275 degrees for 17 minutes. Then gently smack the egg on cutting board and ROLL the egg to crack and peel. Easy peasy. I discovered Allulose from you two, and LOVE it.

Get a vegetable steamer basket that fits in a large-ish pot, put water in up to the bottom of the steamer, and place your eggs on the steamer. Bring the water to a boil, then steam the eggs for a good 15 minutes. When done, put the eggs in ice water to cool quickly. There you go! Steaming to hard "boil" makes them easy to peel.

Perfect boiled eggs every time for me is put eggs in cold water. Bring to a boil, once boiling set timer for 10 minutes. Remove from heat, run cold water over…I find they peel, easier when still pretty warm or hot and I use a spoon to peel and it works beautifully most every time.
The hair looks fabulous.
To peel eggs easily put them in cold water for a few minutes, then drain most of he water. Put the cover on the pot and shake it gently and you will hear the shells cracking. When you go to peel the eggs, the shells will come off easily. Good luck. Love you guys...you are perfect doing this together.
Just watched your video. I had never heard of the PSMF keto egg pudding. Where have I been? I read in the comments below that scrambled eggs can be used for this recipe. I have 1 1/2 cartons of whole eggs that must be used this week, and this is the perfect recipe. I just made it with 1 c. almond milk and 1 1/3 c. eggs, scrambled. Most of it went into the fridge to chill, and I ate a small portion warm. Delicious!! Thank you for sharing this recipe. I'll make it again later in the week using coconut milk. BTW, I love the center part in your hair. It makes you look glamorous.

Just so happens I had just hard boiled some eggs before watching this vid. I made 1/2 recipe and yes the smell was bad, but dissipated as you said. The taste was excellent. Its amazing how you guys were able to convince me to make this. It's by far the strangest keto item I've ever made.
I have not tried this recipe but am wary. I tried one of her other sweet egg-white based recipes and it was awful. However, I have tried Keto Naturopath's "Dairy Free Egg Yoke Chocolate pudding" several times and I love that one. I've even substituded the chocolate with a few TBs of pumpkin puree and it was quite good. It uses only 6 egg yokes (a win for me) and tastes divine. Plus, she (KN's wife) has such a wonderful, down-home friendly vibe. Love her cooking videos.

Using an egg spoon makes peeling easy. It's the kind used with a egg cup for serving soft or hard boiled eggs (I first found them in Europe). It is specialy formed to fit the egg shape.

@@ketotwins I really enjoy your channel. Maybe it's the combination of my 3 gentle wacks around the side edge of the egg, on the counter top, plus using the egg cooker with the egg spoon. Also, the thicker the spoon edge and the larger the spoon, the harder it is to peel a egg. I've never tried it, but some people place all the eggs to peel in a leakproof, sealable container, somewhat like a chicken lunchmeat container. Then they shake it up. I thought that might leave marks on the egg whites so haven't tried it when doing deviled eggs.

I really LOVE eggs. So I got to try this.
I used hardboiled eggs from Costco, didn't boil my own. Maybe that's why I didn't have the strong egg smell. Add some vanilla, maybe some cinnamon.

Always add a good pinch of salt to water, while cooking eggs to assist in peeling afterwards. Or, a splash (a tsp or so) of white or apple cider vinegar to water, will also make peeling easier.
Use an instant pot to hard boil your eggs. They will peel easy every time no matter if they are fresh or older eggs.

You can do this recipe with gently scrambled eggs - fully cook them but don't let them get brown - no peeling necessary!
Good job and you are hysterical with your reactions. I made it too, and was surprised but for me I felt like there was still some of the texture of the yolks. I might try the scrambled egg version to see if that helps but it is hard to believe what it is made of. I added some liquid Stevia to mine and it helped a lot. Thanks for sharing your trials - and the middle part looks great - balances your face nicely!

I make a home-made ice cream with 4 raw egg yolks and a small piece of frozen raw liver (size of a silver dollar or two) as an extra vitamin boost. You pulverize the liver with the other ingredients while it's frozen. If you use a strong base flavor like chocolate or coffee, you cannot taste or see the liver. I will try your recipe. Thank you for posting it.

I agree, far easier doing the scambled eggs method. Experimented making a low-carb version of this by adding 1 can of pumpkin. Created the most delicious pumpkin pie pudding ever with an even better texture!

Put the eggs in boiling water and take them out immediately when done and put in a ice bath. Put in a cup shake up and peel. They come out perfect.

I’m always looking for recipes I can do with my 4 year old without worrying about salmonella from raw eggs so I’d try this just because of that! Love you girls! And I refuse to give up my side part because my forehead is too big and i heard a side part is better for a big forehead 🤷♀️ the middle part looks good on you though!
