This is a brilliant and simple recipe that I had used a few times. And then I hit on the idea of simplifying it further by using a jar of ready prepped salsa, draining off some of the liquid. Ok it's a bit more tomato-ey than the original but it makes things go even faster and with less fuss, ergo arguably even lazier. But good!
