TODDY - Toddy is the name of palm wine, but really the sap that is tapped from the freshly cut flowers of a palm tree - it’s the sweet juice nectar. From a coconut palm, it’s totally different from the coconut fruit, or coconut water. It’s the sap of the flowers. One of the reasons you won’t find it bottled up or sold far away from the palm trees, is that it spoils and ferments extremely fast.

In Kerala, especially in the backwaters area, coconut toddy is a very popular local beverage, and there’s an entire South Indian, Kerala, culture that revolves around it - including very spicy food. I was thrilled to have a chance to learn about the coconut palm toddy culture of Kerala, taste some toddy, and especially eat some food to pair with it.
First, we started off on a boat, and visiting a toddy tapper. The best coconut palm toddy comes from coconut palms that lean over the water, and the best toddy is from brackish water palms. He showed us the process of slicing the flowers, and draining the sap into a ceramic vase to collect the juice. The sap ferments so fast, in just a few hours, it already turns alcoholic. We had the chance to sample fresh toddy, the juice right out of the flowers. It was sensational, much different from coconut water (from the fruit), and sweeter. Then we continued to a Toddy Shop.
Toddy Shop - Rajapuram Kayal Shop (goo.gl/maps/qc...) - About a 2 hour boat ride, we arrived at Rajapuram Kayal Shop, an amazing location, on its own island in the middle of lakes and lagoons. They were already starting to cook the amazing spicy food, including fish head curry, beef and pork chili fry. Toddy shops are known for cooking very spicy Indian food, with lots of spice and strong flavors, that pair well with coconut toddy. The food was unbelievably spectacular, and one of my favorite dishes of the day was the duck mappas.
For the toddy, we had a fresh toddy, a slightly fermented toddy, a grape infused toddy, and most importantly, and best of all, a chili and ginger toddy.
It was an extremely fun day to learn about Kerala food and culture and meet some amazing people!

I have many philipenos here as good friend. We suggest them to avoid the tin food, like sousage, noodles, and kind of some.. and teach to eat chillies and spices. With fully boiled. I saw they eating fishes chicken and some meats with half boil. Its not proper food for human digestion, we avoid them for un necessary habit..
Now surely they have good health, they like to eat spicy&chilly.. chilly reduces cholestrol and keep bld prssre parrallel

Since I am from Kerala and tasted most of these dishes, I would strongly recommend to all non veg (and spicy) lovers to visit and taste these items once in their life time. I can personally assure, this will be a great experience, this was never boring for me in each vacation. Especially on all varieties of Fish, Beef, Pork, Duck, Chicken, quail, rabbit and many more.... with the natural & fresh Toddy. - I have to say that, this video was great because Mark has covered most of the major things in a Toddy Shop here. My Kerala trip, originally scheduled for this month, got cancelled due to COVID-19, but this series helps fuel my desire to reschedule our trip for a future date. Also, can I say that Mark totally overlooked the delicious fermenty goodness of the coconutty appam itself in favor of all the meats he stuffed it with?! 😂 I just love the pure flavor of appam on its own, and it would be even more spectacular made the traditional way with the toddy as it was here!

What a beautiful culture. I honestly felt like I was there. Reminds me of a pulque experience in Mexico City when I was traveling almost a decade or so ago. This wonderful guy I’d befriended on a bus ride in Chiapas to Mexico City let me stay with him when we arrived and he showed me one of the oldest markets where went into a seedy underground room. Next to the dimly lit bulb was a chunk of carcass hanging on a hook and chain. Mi amigo had me wait with some older fellows who’d greeted me Gringo with handshakes and smiles. Nice fellows too. He came from a back room with a liter of fresh pulque and we’d had a bite in the market and he showed me around from his campus to an ancient ruin. The pulque would wisp from the lips in the wind and I’d felt such a rich buzz from not only the brew but the connection. Was such a grand experience. Thank you for sharing your experiences with us.
