I was on Oman a few years ago for work, and I loved it so much. Unfortunately I didn't have the time to taste any of the local cuisine but from the little time I spent in the city, it was amazing. The friendliest people, and the entire city smells of beautiful incense. Never have I smelled those smells before, it was incredible. Very very hot place but would love to visit again.

Here's how pre-Islamic Persia influenced Middle Eastern food: 1. Use of Herbs and Spices Persian cuisine is renowned for its use of aromatic herbs and spices like saffron, cinnamon, turmeric, and dried lime. These ingredients became staples in Middle Eastern cooking, adding depth and complexity to dishes. The balance of sweet and savory flavors, common in Persian dishes, influenced Middle Eastern stews, rice dishes, and desserts. 2. Rice and Pilaf The Persian method of cooking rice, particularly the development of pilaf (cooked rice flavored with spices, herbs, and meat or vegetables), spread across the Middle East and into Central Asia. Techniques like creating a crispy rice crust (tahdig) were unique to Persian cooking but inspired similar practices elsewhere. 3. Stews and Soups Persian stews like khoresh were precursors to Middle Eastern stews such as tagines . The use of dried fruits (apricots, raisins, prunes) alongside meat, a hallmark of Persian cooking, became widespread in Middle Eastern stews. 4. Bread Persian flatbreads, such as sangak and lavash, influenced the development of bread across the region. These breads remain staples in Middle Eastern diets. 5. Sweets and Desserts Persian desserts like halva, baklava, and noon-e nokhodchi (chickpea flour cookies) influenced Middle Eastern sweets. Persian techniques of using rosewater, cardamom, and nuts in confections were adopted widely. 6. Pomegranate and Citrus The use of pomegranate in Persian cooking, particularly in sauces and as a garnish, became a defining element of Middle Eastern cuisine. Citrus fruits, introduced through Persian agricultural innovations, also became integral. 7. Agriculture and Irrigation Persia's advanced agricultural techniques, such as the use of qanats (underground irrigation systems), supported the cultivation of fruits, nuts, and grains that became staples in Middle Eastern diets. 8. Fermented and Preserved Foods Techniques for pickling and preserving food, such as making yogurt (mast) and pickled vegetables, were central to Persian cuisine and became widespread in the Middle East.

I showed the previous Oman video to my South African bestie living and working in Jeddah, Saudi Arabia and asked her if she visited this beautiful place. She sent me a map and said that Oman is a 2 hour flight away and once again she invited me to Jeddah and said that she'll take me on a tour to Oman. One day is one day and I can't wait to visit all these places and also to visit South African family & friends living in Qatar too. I noticed that in many of the Muslim countries, the meat is almost always freshly cooked. Is it because they don't have fridges in the desert to store the freshly slaughtered animal .... or is it a culture / tradition ¿?
That could be the reason. But in most cases, large amounts of food like this gets shared amongst people and then also given around. Hospitality is big in the Middle Eastern culture.
The Sultanate of Oman is rich in oriental and Arabic cuisine. In addition to Omani barbecue, there is also arsiya, harees, mashkak, and many other different foods.
I love the Middle East and the people, the culture, and I can’t wait to return again here very shortly I go twice a year but I want to make it over to Oman.
