I was a auto painter for about 12yrs. Good call on going with gloss clear. The flat will stain! All of the major paint systems will work fine. All have quirks. Just stick with one brand from primer to clear, and You will be good to go. My personal preference on 2tones, is to put the darker color from the body line near the door handle up,and lighter color the rest of the way down. I like Your color combo! As far as the Yellow. Black,or Chrysler had a course metallic pewter that looked good together. Or go all yellow. Lots of people like to look at bright yellow cars, but not many would buy one. I had a bright yellow F-150, and it was a cop magnet!!

Chrome yellow from 70-80's Corvette, Steel City Gray, same car, same era. Ford Midnight Blue and Dodge PCH blue. HOC Tangerine over Orion silver base with 3D black flames, my sportsters colors. My favorite, Candy Black Cherry. Black at night with burgundy highlights and dark burgundy in daylight.
