Lovely! Made these last night as a foray of KA mixing of high-hydration doughs. My 50+ years experience is beat w a holey spoon, knead w greased hands & sometimes turn air blue ;). 100g oat flour in the dough as I want to use it up, 10g instant yeast (current 1# pkg best-before Dec 2022, stored always in freezer, corner of pkg cut, double-folded & Bulldog clip so air-tight - previous pkg was good to the last crumb 3 1/2 years past best-by), 365g apf + 15 gluten (my usual in lieu of keeping “strong” as well), shaped 12 for 9x13” pan (portion control), parchment in bottom strewn with rolled oats, milk wash (couldn’t bother to open another egg) & more oats on top.
Mr. Kirkwood, not only are you a master baker, but you are a master teacher as well. Even if I never pick up a spoon to stir some batter, I get such pleasure from watching your videos and listening to your reassuring voice. Mission accomplished. Definitely a John thumbs up. Beautifully soft and delicious. I had to have a bit of a think to adapt to fresh yeast - ran out of dried and haven’t yet found any at a normal price. I boiled 170 g water and dissolved 20 g yeast in 70 g water. I was a bit concerned I’d short-change the oats but it worked well. These breadcakes (as we say in Sheffield) are definitely going to feature regularly. Thanks John

I tried these today! I made half a batch, reduced the yeast to 1 tsp and after kneading I chucked it in the fridge overnight. In the morning I continued the steps and had a really nice fluffy flavourful roll! Thank you for your recipe! This is definitely a keeper!

BAKED THESE TODAY! So Mr. Kirkwood, I wrote you the other day about how taken my daughter is with your channel and how you are. I showed your channel to my mom who is equally delighted. We wanted to try these today (though I had to convert things because I don’t have a scale) OH MY GOODNESS! They are still warm! Delicious. Just the perfect amount of sweet and the texture is lovely! Just made a batch of these …and as I just recently bought a grain mill, I milled hard Red Methow wheat just seconds before adding it to the wet mixture. They are proving right now in the oven …in their baking dish …and they just look fantastic. Can’t wait to bake them off. They will join my homemade pork stew for supper tonight. Thank you for a great channel John. Over the years I have attempted to make bread which have been disastrous to say the least. I came across your channel by chance as recommended. Due to lockdown I thought I would again try to make bread. I dusted off the cobwebs on my food processor and then proceeded to follow your instructions to the exact weight and temperature and timing. SUCCESS I made my first bread and it was delicious. I have since made several loafs of bread and will continue to make my own in future. As I write this I am waiting for my soft rolls to cool. Mission accomplished. Definitely a John thumbs up. Beautifully soft and delicious. I had to have a bit of a think to adapt to fresh yeast - ran out of dried and haven’t yet found any at a normal price. I boiled 170 g water and dissolved 20 g yeast in 70 g water. I was a bit concerned I’d short-change the oats but it worked well. These breadcakes (as we say in Sheffield) are definitely going to feature regularly. Thanks John

I tried these today! I made half a batch, reduced the yeast to 1 tsp and after kneading I chucked it in the fridge overnight. In the morning I continued the steps and had a really nice fluffy flavourful roll! Thank you for your recipe! This is definitely a keeper!

OH MY GOODNESS! They are still warm! Delicious. Just the perfect amount of sweet and the texture is lovely! I only used one cup of bread flour because that’s what I had. Perfection!!!!

Just made a batch of these …and as I just recently bought a grain mill, I milled hard Red Methow wheat just seconds before adding it to the wet mixture. They are proving right now in the oven …in their baking dish …and they just look fantastic. Can’t wait to bake them off. They will join my homemade pork stew for supper tonight. Mine will be “ Whole Wheat Honey Oatmeal” rolls🙂

Thank you for a great channel John. Over the years I have attempted to make bread which have been disastrous to say the least. I came across your channel by chance as recommended. Due to lockdown I thought I would again try to make bread. I dusted off the cobwebs on my food processor and then proceeded to follow your instructions to the exact weight and temperature and timing. SUCCESS I made my first bread and it was delicious. I have since made several loafs of bread and will continue to make my own in future. As I write this I am waiting for my soft rolls to cool. I know I am showing off here but thanks again John you are a wonderful teacher.
