Makes 8 bars
Ingredients:
2 cups (180g) Rolled oats
1 teaspoon Baking powder
1/2 teaspoon cinnamon
1/4 teaspoon Salt
1/4 cup (35g) Dried cranberries
1/4 cup (35g) Sunflower seeds
1/4 cup (30g) slivered almonds
2 bananas, ripe
1¼ cups (300ml) Almond milk, or any milk of your choice

3-4 tablespoons maple syrup or honey
2 tablespoons coconut oil
Directions:
1. Preheat oven to 350°F (175°C). Line an 8-inch (20cm) square baking pan with parchment paper, set aside.
2. In a large bowl, mash bananas, add honey and stir. Add milk, coconut oil and whisk to combine.
3. Combine wet and dry ingredients. Stir in almonds, cranberries and sunflower seeds.
4. Pour the batter into prepared baking dish.

Your recipe gave me a great starting point, thanks. I didn't have any bananas, but have an abundance of apples now it's Autumn, so I cooked up some apples with some frozen blackcurrants I had left over from earlier this year and used a few spoonfuls of that as my base. I also subbed almond slivers for pumpkin seeds, and sultanas for cranberries, and added some desiccated coconut. I didn't use additional sweetener as I like to taste the natural fruits and seeds. It turned out great!
I watched the entire video. I then went and checked and made sure I had all the ingredients, and then made immediately. 👍👍
Thank you for this vegan recipe. I used chopped dates and sliced almonds and only 1 cup of almond milk, I did not want them too soft. They turned out good. Next time I will try adding ginger.
i left the oil out, added raisins and crushed flaxseed mixed with a bit of water...PERFECT!

I do make with out milk.
It's always come out crispy
But the amount of the oil and syrup little bit extra also cut out bananas
Use 1 cup oats , 1 cup oats powder , 4 tbsp melted butter , brown sugar , baking powder , raisins and chopped almonds
Bake for 20 mins at 180 C
It’s super crispy
You could add essence like almond or vanilla if you like. Don’t use any other liquids or banana as they make the oats soggy.

These are moist and squishy. It's more like having baked oatmeal than a dense, chewy bar.

Stop using grease under and over parchment paper. It's non-stick paper so just peels off easily.

You can use Honey. The amount of honey to be used is half the amount of maple syrup and add some powdered sugar to it.

These are only healthier than packaged bars in that they contain no preservatives,additives and other stuff. The fat in them is from coconut oil which is high in saturated fat and raises the levels of good and bad triglycerides.
If you think they don’t contain a ton of sugar, fat and calories, you are kidding yourself. Maple syrup and banana are both extremely high in glucose and fructose. Dried cranberries are sugar beasts.
Just trying to shed some light on the “health aspect” of these bars. They are definitely not a “diet food” or recommended for heart health and diabetes sufferers.
They are fine without the oil and maple syrup. There’s nothing wrong with eating bananas. They are loaded with fiber and nutrients. A few dried cranberries are also fine.
