    Description:
In this video, raw food chef and author Jennifer Cornbleet shows you how to prepare raw Kheer, a flavorful and exotic dessert from her book Raw for Dessert
Kheer, a beloved traditional dessert from India, is delicately flavored with sweet spices and golden raisins...and heavy with cholesterol-laden cream, unhealthy processed sugar, and high-carb white rice. In this demonstration, Jennifer shows how you to use Thai young coconut, agave, and spices to create a delicious alternative that's rich in taste and nutrition, too.
Jennifer begins her demonstration with an overview of the recipe and a brief "lesson" on Thai young coconuts. She discusses how to easy open the seemingly impenetrable fruit husk and explains how to use both the meat and the water to create a creamy pudding base.
As you'll discover, your blender does most of the hard work. Jennifer shows you how to add ingredients for best processing, including the agave sweetener and dried coconut. The rice in this raw kheer is replaced by the dried coconut, which looks a lot like rice and plumps when you let it sit in the coconut mixture.
The flavors of traditional Indian desserts are exotic, but also familiar.
Jennifer shows you how to combine spices you probably already have in your kitchen like cinnamon, and a few you may not, like cardamom, to make your kheer special. Jennifer then demonstrates how to chop pistachios, another traditional Indian ingredient, to add another dimension of flavor and texture to your raw pudding.
A quick trip to the refrigerator is all this raw food recipe needs to develop into its lusciously smooth texture and mild-flavor. Best of all, this dessert can be served as a comforting anytime treat or as an elegant end to a meal!
