Raw soups are a great way to get more greens into your diet, and they're much faster to make than cooked soups. Cream of Zucchini Soup is one of Jennifer's favorites, with a refreshing taste she says she never grows tired of.
Jennifer begins by talking about the choice of vegetables in raw soups. She'll explain what makes a 'good' soup vegetable and way zucchini and celery are at the top of the list. You'll also learn what makes a 'good' raw food broth and why a having a light touch with seasonings is important.
Jennifer will introduce you to some of her favorite soup seasonings, including citrus juice and mellow white miso. This classic Asian ingredient gives the soup a rich depth of flavor that far surpasses what you can achieve with salt or even stock or bouillon.
The next step is where the magic happens. Jennifer shows you how to use healthy avocados to replace the dairy in traditional cream soup. Thanks for opening my mind to raw foods! I've had apps for my phone for raw recipes, but not like the ones you do (simple, fast, nutritious). Your the best! :) The Creamy Zucchini Soup was great, and I added 1/2 onion, some fresh cilantro, and extra garlic cloves to balance the miso paste flavor.........awesome! :) The avocado really gives it that creamy taste, just like regular cream! I'll be buying your book for my tablet and I'm excited to try your other recipes! :)
