Sorry that i can' think of other substitute for cashew considering the texture and taste (cashew has a relatively mild taste comparing to other nuts) If you are okay with non-vegan option, then go for the regular cheesecake options, like cream cheese, ricotta...etc.
i got it in taiwan and i think they are manufactured in Korea. It's difficult to find in US at least i couldn't find it here, so that's why i had to buy them from Taiwan.
I use your ingredients to made this cheese cake, but it come out very soft even I put it in rerrigerator for 24 hrs, the cake will fall as soon as I took of thee mold, looks like malt icecream. How you can do it with solid texture! I think it is something to do with the milk you put that in!
It lacks a coagulant agent, for example: agar agar powder, it's like unflavored gelatin, 2 or 1 and a half tablespoons for the cream of a 20 cm diameter cake
