I tried it, it tastes fantastic. The caramel is perfect too. Only two things : freeze the cake OVERNIGHT before removing the mold. I waited only five hours as said in the video and the cake started to melt and fall apart. Also the caramel is so good you’ll want to pour on each slices, so I needed a full recipe for the cake. Ahhh superb! Cheese cake has always been a huge weakness of mine but after eating dairy I've often felt unwell so the more dairy free cheesecake recipes the merrier I'll be. ☺
Okay we are so late in seeing this video...But we have to say that when our little one saw this video, he said that the cake I want for my birthday. We made it and it is GREAT. We decided to share it at our church, and they almost ate the whole entire thing before our little one could even get a piece. We had to remove it from the table so that we could save him some of the cake. This is definitely a keep for our go-to desert. It's a WINNER in our book. We actually made it without the oil. We used the coconut milk for the cream part and skipped the oil for the crust. It turned out to be WONDERFUL. The caramel is perfect and super easy to make. We thank you for sharing this recipe with us. LOVE IT, Loved it and still LOVING IT... THANKS a LOT!!!!
This video came to me at the perfect time. I just watched a video about the horrors of the dairy industry and vowed to never use dairy again. You can, but keep in mind that the reason you soak nuts (in addition to making them soft) is to remove enzyme inhibitors, like phytic acid. That's why it's generally recommended to throw out the water.

I successfully made the sauce, but it doesn't taste like regular caramel that uses heavy cream, white sugar and butter. I won't make it again 😪 it's just *so* coconutty and doesn't taste at all like my regular caramel recipe that uses the traditional ingredients (white sugar, butter, heavy cream, vanilla).
I tried it, and while the caramel is delicious, the cake itself didn't hit the spot for me. First, the recipe is quite long, if you consider the soaking and the freezing time, but it was mostly the taste of coconut that was to present. If I'd do it again, I would not put shredded coconut in the crust, or switch the coconut oil for something else.
Looks so good. The price of nuts here in Nz this cheesecake is half my weekly food allowance 😭 I love vegan cheesecakes though. This woukd be a special dinner item only for me. Looks so good though
