      Deb Stein I just had a friend make this. I can't taste the coconut at all so if you don't like it you won't taste it.

    I tried it, it tastes fantastic. The caramel is perfect too. Only two things : freeze the cake OVERNIGHT before removing the mold. I waited only five hours as said in the video and the cake started to melt and fall apart. Also the caramel is so good you’ll want to pour on each slices, so I needed a full recipe for the cake. Thanks!

    I made this cheesecake the other day and it turned out so perfectly! I added a bit more lemon juice and didn't do the caramel sauce, but this recipe is a really good guide to follow! I'm not usually that good at making any food more complicated than beans on toast 😂
    I posted a picture of my cake on a vegan page and more than 1200 people liked and commented on it, and I feel so good about how it all turned out! Thank you for posting this!!

    4 cups of soaked chashew
    1 can of full fat coconut milk
    1/2 cup coconut sugar
    1/2 teaspoon salt
    1 teaspoon cocnut oil
    1 teaspoon vanilla extract
    1 cup of Almonds
    1 cup of shredded coconut
    10 medjool dates
    I cup of water
    3/4 maple syrup or honey
    2/3 cup coconut oil
    1/2 cup lemon juice
    2 vanilla beans

    Ahhh superb! Cheese cake has always been a huge weakness of mine but after eating dairy I've often felt unwell so the more dairy free cheesecake recipes the merrier I'll be. ☺

    Okay we are so late in seeing this video...But we have to say that when our little one saw this video, he said that the cake I want for my birthday. We made it and it is GREAT. We decided to share it at our church, and they almost ate the whole entire thing before our little one could even get a piece. We had to remove it from the table so that we could save him some of the cake. This is definitely a keep for our go-to desert. It's a WINNER in our book. We actually made it without the oil. We used the coconut milk for the cream part and skipped the oil for the crust. It turned out to be WONDERFUL. The caramel is perfect and super easy to make. We thank you for sharing this recipe with us. LOVE IT, Loved it and still LOVING IT... THANKS a LOT!!!!

    This video came to me at the perfect time. I just watched a video about the horrors of the dairy industry and vowed to never use dairy again. I immediately thought of not being able to eat cheesecake again. A dessert I enjoy. I'm so happy I don't have to miss out on cheesecake since viewing this recipe. It looks very delicious!       Well when you buy a whole cheesecake pie at a restaurant it’s about the same in cost, or maybe more. This recipe is homemade and a lot healthier. You’ll know exactly what you’re putting into your body.

      Yes! You can use other types of sugar. Depending on which one though, might have to change the amount just a tad bit.

    Hello Lisa it is my birthday today and I plan to make your Cheesecake which looks awesome !
    I just have a few questions please dear Lisa if you can anwer..
    You use Unrefined Coconut oil or not (desodorised?)
    As you use a huge quantities of Cashews for filling why Coconut oil is useful?
    I can substitute with Coconut Butter (manna)? Taste is awesome and less fat...
    Last how long before serving you let out from freezer please ?
    You could make a Vegan Caramel with Dates? Im a huge fan of Dates!

    can you use the cashew water and just add more water if needed instead of using new water for the filling?

      You can, but keep in mind that the reason you soak nuts (in addition to making them soft) is to remove enzyme inhibitors, like phytic acid. That's why it's generally recommended to throw out the water.

    random question..do we let the cheesecake sit out fro 30 mins before adding the caramel on top as well? or do we add it as soon as we take the cheesecake out of the freezer and then let it sit out fro 30 before serving?

    Hello Lisa your Caramel Cheesecake looks so amazing I plan to make it for my daughter birthday coming soon!
    Is it possible only using Cashews not Coconut oil ? ( You use desodorised Coconut oil?)
    For Crust possible to use only Dates & Almonds and if yesin which quantity ?
    Is it possible to pour on the Caramel Sauce after freezing Cheesecake a few hours then freeze it again before serving?
    Maybe night before or few hours? Caramel will thicken and stay on top on the Cake like when we use Agar-agar or will flaten on the cake when out of Freezer?
    You keep in Fridge or at Room temperature and how long before serving?

    I successfully made the sauce, but it doesn't taste like regular caramel that uses heavy cream, white sugar and butter. I won't make it again 😪 it's just *so* coconutty and doesn't taste at all like my regular caramel recipe that uses the traditional ingredients (white sugar, butter, heavy cream, vanilla).

      Caramelize sugar, use cashew/almond milk and vegan butter!

    I tried it, and while the caramel is delicious, the cake itself didn't hit the spot for me. First, the recipe is quite long, if you consider the soaking and the freezing time, but it was mostly the taste of coconut that was to present. If I'd do it again, I would not put shredded coconut in the crust, or switch the coconut oil for something else.

    Looks so good. The price of nuts here in Nz this cheesecake is half my weekly food allowance 😭 I love vegan cheesecakes though.
    This woukd be a special dinner item only for me. Looks so good though

    Hey Lisa Im doing your Cheesecake right now and asked myself if you think we can substitute Maple Syrup with MEDJOOL Dates for the filling and same amount (250g)?
    Besides MEDJOOL Dates sweeten near the same for 100g of product..
    I love Dates even if Maple Syrup taste so great too...

    Vegan desserts are really the BEST! 😩💕🙌🏽 “flow smoothly”. Imagine she didnt do it before hand and we have to wait for 4 days for her to finish. Lol 🤣🤣!!

    How long can you freeze the cheese cake for? Thinking about making this a couple days in advance for a family birthday. Imagine that its all about making sure to plan for the time It will take to thaw out properly
