Instant Pot Refried Beans--As good as ANY Mexican restaurant--and SO much better than canned!

Recipe:
1 pound dried pinto beans or 2 cups of pinto beans
4 cups chicken stock or vegetable broth
2 cups water
1 small onion peeled and quartered
3 cloves of garlic peeled
1 jalapeno seeded and de-stemmed (optional)
2 teaspoons chili powder
1 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 tablespoon apple cider vinegar optional
1/2 to 1 teaspoon kosher salt to taste
INSTRUCTIONS
Rinse dried beans and remove any rocks or broken beans.
Place rinsed beans in inner pot. Add in stock, water, onion, jalapeno, garlic cloves, vinegar, chili powder, paprika, cumin, onion powder, and garlic powder.
Close Instant Pot and be sure valve is turned to "seal." Set to cook on high pressure for 50 minutes. Hit manual or pressure cook and use +/- buttons to adjust cook time to 50 minutes.
Once cook time has elapsed, allow pressure to release naturally for at least 15 minutes.
Remove lid drain beans over a large mixing bowl, to reserve cooking liquid. Discard jalapeno, then return beans, onions, and garlic to inner pot or blender. Add in 1/2 teaspoon salt.
Blend with an immersion blender or food processor, adding 1/2 cup of the reserved liquid at a time until beans are smooth and the desired consistency is reached. Taste and adjust seasoning/salt if needed. Хобби

This is my first instapot recipe and now I’m in love with my insta pot and trying all your recipes. I added two cups too much water and my beans still turned out perfectly. I also didn’t have a jalapeño at home so I added some red pepper flakes and it tastes great still. Will be trying again with a jalapeño.

Thanks for the great recipe. I don't find putting the beans in to soak overnight to be big deal, so I'll do that and reduce the cooking time; no problem.

Delicious and detailed recipe! Tastes similar to the canned bean dip you can buy from the store. My family enjoys it as well.
Tip: blend in a bowl if using an immersion blender rather than the internal pot. I made this mistake and scratched up the sides inside of my pot. Whoops!

My recipe is very similar to yours, but I usually cook 6 cups of beans. I remove some of the beans and liquid to a bowl and eat with a side of cornbread. Now, tonight, I cooked pork spareribs in the instant pot, I will save the liquid and use it when I make my next batch of beans. I do. the same thing when I cook chicken.

Adding vinegar will toughen beans. It’s an acid. You need sodium to break down the pectin in the skins. Using a small amount of baking soda will accomplish this. If I feel my beans are a little on the older side, I will soak the beans in water a few hours with a small amount of baking soda, then rinse. You can also add the baking soda to the final recipe. Use 1/4 tsp per cup of beans to soak, 1/4 tsp to final recipe before cooking.
Thanks for the video!! I screwed up and added a bit too much salt. I discovered that fact after I had blended everything. Adding some sour cream and lemon juice helped cut the salty taste. I had quite a bit of left over stock after straining. Not wanting to throw it away I decided to make a medium size pan of soup. Knowing that it was salty I first diced some potatoes to help cut the salt. Adding chopped carrot, celery, poblano pepper, leftover pork rib meat, and a squirt of lemon juice cooked down to a tasty soup for lunch. (If I do say so myself. FWIW.)

I make refried beans old school, I boil salt pork in water for 45 minutes to flavor the water them slow cook them for hours, then mash them by hand, so I am trying this recipe today I did throw in a couple of slices of bacon and saute just for extra kick and fat, so I hope this comes out similar to mine, cause I now have a cheat recipe, its either this or can beans, this recipe looks awesome.

Just made this recipe using pinto beans. Super easy and delicious. I’ve substituted a can of diced green chilies instead of jalapeños since I didn’t have any fresh jalapeños. I wonder if I can also make this recipe with dried black beans too without soaking the beans?
Yes! For black beans, you only need to cook for 40 minutes.

Hi Kristen, great recipe, thanks! My only concern is the use of the cooking liquid. The sugars produced when beans are cooking is what is gas producing. Beans should be well rinsed during and after the cooking process to avoid this unfortunate “side effect”.
Feel free to rinse the beans after cooking if you are worried about that. I would then suggest using vegetable broth for blending to add flavor and season again.

A couple suggestions:
1) the pepper seeds do not contain much (if any) capsaicin, thus, they are not the source of heat. If you don’t believe me, try a seed on its own, then try a piece of the flesh. :)
2) I believe you are referring to “cotija” cheese, not “cojito.”

We eat a lot of refried beans at our house. I’m wondering if the beans can be frozen? We also do a lot of meal prep and try to make double recipes and freeze one for later. Regardless I’m going to be trying your recipe.
I LOVE to freeze a batch myself--so yes! Just allow to cool and portion into freezer-safe containers and freeze for up to 3 months. Enjoy!
Considering salt interfering with the beans cooking- the broth is salty too. Otherwise, everything else looks solid.
Using unsalted broth mixed with water won't be an issue. I make beans almost weekly :)

Feel free to add, I would personally rather pass :)
It is not necessary to cook your beans for 50 minutes. 2 cups beans = 1 lb, cook for 25 minutes. 2 lb cook for 30 minutes. 3 lb cook for 40 minutes. Cook on high pressure. It will take about 40 minutes for 1 lb of beans to depressurize, and a full hour for 3 lb of beans.
For really soft beans for refried beans, I do suggest a much longer cook time than just cooking pinto beans. The results are worth it!
what can you do with all the leftover bean juice
I typically discard, as it is not all that flavorful (no salt added until after cooking process.)

I would reduce the cook time by 10 minutes and only use 4 cups of broth (no water needed)

Hey there! So kosher salt actually works to enhance the flavor. Iodized salt (or table salt) has added iodine, which can leave an aftertaste. It also can make things taste salty, rather than truly enhancing the taste :)
Is that regular paprika or smoked paprika?
I use regular, but personally LOVE smoked paprika. It is a bit spicier, so my little one objects.
How many servings is this recipe for?
This makes about 16 servings (1/2 cup each)

That particular jalapeño, is not very spicy at all.
Full of flavor lol refired beans are normally not as flavorful cause u use them with alot of other flavors
I have had many unseasoned refried beans and really well seasoned beans. These are well seasoned :)

I followed your recipe except I used 1/8t of Jalapeno powder which is hot so I didn't want them to be too hot and wasn't sure how much Jalapeno pwdr. to use if I need more I can add more, so we'll see how it goes after the hour. Thanks!
