Hello my beautiful family, the best beans are made at home, they are not in a can or in a restaurant, make them at home because they sure are super easy to make 😊 my goal is to get my kids in the kitchen as much as possible because the best memories are crated in our kitchen around food !!!!😊❤

For fartless beans, boil for 20 minutes, dump the water and replace it with boiling water. Do that twice, then finish the cooking like regular. It gets rid of some sort of a compound that causes gas.
My Mom was from Oklahoma and moved to California when she was a girl. Almost every other week she would make a pot of Southern style pinto beans with ham hock. Those were served whole the first day (with fried potatoes, cornbread). The next day she would make refried beans for burritos or as a side dish for tacos. She used bacon grease as well for her refried beans! Between the smokey flavor of the ham hock and then the bacon grease to fry them they were so good! When I saw your recipe and that you used bacon fat it just reminded me of how she did it!
My mom never soaked the beans. She would just have the pot simmering all day! I do soak them overnight and they literally take about an hour to cook. I add a clove or two of garlic, half a whole onion, salt, and maybe one or two chiles de arbol. I also add a bay leaf. To make refried beans, I just use a bit of oil (no bacon since I'm vegetarian, altho my mom would use it), add beans, and smash. Also, add cubed cheese at the end just to melt, and then enjoy! Comes out super yummy each time and I will also just eat them whole with a bit of the broth and queso fresco for a quick meal :)

Slow cooking the beans over a very long time would have given them a creamier texture. Low heat over extended time breaks down the starches in a way that just enhances the umami/mouthfeel. It’s the same principle the North Indian dish, Dal Makhani (Creamy Lentils) which was traditionally cooked overnight over a wood fire. Your mom knew what she was doing!

Lot of great memories in the kitchen. Even though ive watched her make beans millions of times, mine never come out the same as hers. Moms just have that special touch i guess.
Homemade frijoles are the best. My grandmother makes her in the crockpot but I struggled to get the perfect consistency. I will definitely be trying this recipe and using my instant pot! 🩷 I also love when you include your family. 😊

My friend's mom used to add a little bit of whole milk, and sub a little butter melted into olive oil for lard or bacon fat. Those were yummy beans! My mom cooked the beans with ham hocks! Thanks for reminding me about the jalapeno!!!💕💕😋
I was litterally going to ask this question. I dont eat bacon or lard so I wasnt sure if I could sub with avocado oil with smoked paprika for the smokey bacon like taste. Thank you so much.
Whenever we eat at a Mexican restaurant, I love refried beans with Spanish rice. I could just eat them by themselves. I didn't realized it is so easy to make. I like refried beans as much as hummas, which is much more complicated to make. I will definitely make the refried beans from now on.
As for your beans being a hit or miss. Are you using fresh beans? The dark colored pinto beans are usually old & they can be like that straight from the store. The ones with a nice light color make the best beans from my experience. The real dark one just never seem to cook right.
@@CD-hc5ds oh that's interesting. I had no idea. While I'm cleaning them and ensuring there are no rocks, etc I will be sure to check for and remove any darker colored ones going forward. Frijoles have been a favorite of mine since I was a kid, my grandma made the absolute best frijoles, and I absolutely regret not paying attention or asking how she made them. Unfortunately, she passed when I was 15 and my mom doesn't even seem to make them as good as my grandma did. I've been trying for several years to come up with a tried and true recipe that I love and is great every time so I'm hoping this will be it 😊
I not talking about the individual dark ones mixed in. Pintos have a two tone color, the lighter color needs to be a light almost creamy color not dark brown. I believe they darken with age, ive cooked them for 8hrs on hi & they never did soften right. LOL. Just a suggestion 😊
@@CD-hc5ds Oh I see, I can't say I've ever had issues with my beans softening, my issue is more the flavoring. I remember my grandma cooking her beans with a ham hock for flavoring but aside from that can't remember what else she added but I'm giving Claudia's recipe a try and hopefully can get a delicious outcome 😋
I made this last night and it was delicious!! I have wanted to try making my own refried beans for the longest time because I can’t take a can version any longer and this recipe is as simple as it gets and it is the BEST!!! I made it with rendered bacon fat as specified and sooo yum 🤤

Oh I’m sorry. Put a pan on the stove, add enough oil and heat up oil to 350. Then toss the tortilla in the oil and cook until golden. Pull out and drain it on a paper towel immediately and while still hot add a sprinkle of salt.
When I was living in Germany for a few years, I was really craving refried beans but couldn't buy any beans... they only had canned ones. I caved in once because I thought maybe it wouldn't be so bad if I took a "short cut". It was horrible I regretted the taste.. I will never make that mistake again no matter how lazy/quickly I want to have a pot of refried beans. 😂
I'm really good at making charro beans but never have been good at refried beans. I had always drained the juice so they always came out dry. Your video helped me a lot. Perfect refried beans. Wish I could send you picture.

The recipe worked great for me, thank you so much, now my next question is if I need to do a bigger batch in the insta pot do I add more time and water? Do I just add another 45mins and another 8cups per extra pound???
Almost like fry bread tostada. Nice and crunchy sounding. Looks all right to me. I add a few more seasonings like Maggis, Knorr's Chicken Bullion powder, smoked paprika, lil fresh ground dried Ancho chili P. Garlic powder... That Maggis though does something awesome with the bacon grease combo.

I've always added salt to my water I still do it the old way I'm 58. I have done it with the instapot but I'm just so use to the old way and I get it done 3 hrs for 2 lbs.
I don’t think it’s true I have always added the salt I feel like the beans get more flavor this way otherwise I feel they taste too watery idk if it makes senses 😅

So glad I found someone who makes them the way I was taught from a woman I worked with at a Mexican restaurant way back in the 80’s.
