    I made this for lunch today, and we (2 adults & 2 kids) absolutely loved it! Chicken came out so tender. I did not have any limes on hand but squeezed some lemon juice after it was cooked. Worked well as well. Thank you for the recipe! Will definitely cook this again for an easy go-to lunch or dinner.

    Thank-you this is a very tasty recipe. I am going to rotate it in for meal prep, as I try to eat more efficiently and healthy.
    Here are some things I had to learn the hard way as an Instant-pot novice:
    Tomato, beans and starches can stick easily to the bottom and trigger the "Burn" warning. In retrospect the light submerging of the rice and the lack of mixing towards the end of the recipe is very important. Also note that the tomatoes are not mixed in.
    I have been struggling with triggering the burn warning every now and again; this recipe forced me to learn what I was doing wrong.

    Hello, I cooked it for dinner but I didn't add the jalapeños, I put 2 sweet peppers and the black beans I didn't remove the juice and it was delicious! My husband liked it very much, he had to repeat it, we ate it with chips. Thanks for your recipe!

    Awesome video! I love how detailed you are. Question :What if I wanted to put in another pound of chicken and twice as much rice. What would I set the timer too ?

      You would need to double the entire recipe, keeping in mind that you never want to fill your inner pot more than 2/3rd of the way full when cooking a starch. Keep the cooking time the same, but it will take longer to reach pressure and for pressure to release.

    I just made this as described minus the jalapeño (because I didn't have one). I also forgot to rinse the rice but that's ok, I like it sticky. The finished pot was ok, but i felt it was missing something so I added a 10 oz. can of green enchilada sauce to the finished rice and mixed it up. It tasted much better so I think that adding the green sauce before cooking would work well. Also, I felt it needed some vegetables so I added some cooked frozen mixed vegetables (which I had on hand.) For more zing, I added some guacamole salsa to the finished plate. Thanks!

    Thank you for this video and recipe! I made the Chicken Burrito bowl recipe and it was great though one thing i am changing is I will keep the rice and cheese separated to give me the option to control the portion of rice and cheese. Great tasting dish!

    Tried this. We made the mistake of doing extra chicken (extra water content so it came out much mushier) which is our fault, but my goodness. Criminally underseasoned that. Other than that, pretty good!

    Hi Kristin! I have been watching for quite some time and made several of your recipes. All were winners. So it's high time I said thank you for sharing your blessings with us. I have chronic issues also so I know what it's like to never know how each day will go. Tonight I made four pounds of chicken breasts using pineapple juice as you suggested. I am shredding them and portioning for future meals. Big difference in tenderness and hubby was impressed! For this burrito bowl, I know you said the chicken could be omitted. I plan to make this without chicken then add it in after the cook time, along with the cheese. So do I need to make any adjustments in the other ingredients? Thank you again for your videos.       I hope you enjoy, but basmati rice has just as many carbs as regular rice. If you mean using brown basmati to add fiber and balance out carbs--that I totally get :)

    Can I do this without an instant pot? Would I just have to cook it longer?

      Hi there! Yes! You can make this without an instant pot, but you would need to change the timing and the amount of liquid used. I would saute the chicken, onion, and jalapeno, and seasonings as directed. Add in 3 and 3/4th cups of chicken broth and rotel tomatoes and bring to a boil. Stir in 2 cups of rice and reduce to a simmer. Simmer as package of rice directs. Once the rice is cooked, add the beans, corn, and cheese and fluff with a fork. Finish with juice of a lime. Enjoy!

    What do you mean natural release? Do you leave it seated until the presser is gone? Or can you open the vent?

      Hey there! Natural release means to leave it sealed until the pressure is gone. Quick release is to open the vent. For this recipe, don't open the vent for at least 10-15 minutes.

      Hey there! I don't recommend brown rice for this recipe, as it needs to cook for 22 minutes on high pressure. In that time, the chicken will overcook. Doable, just keep that in mind :)

      Hey there! Keep the cooking time the same, just keep in mind it will take longer to come to pressure and for pressure to release.

      Hey Sierra! For this recipe to work right, the chicken should be defrosted fully (or the rice will overcook) I would suggest placing your chicken in a bowl of cold water in the fridge to speed up defrosting and then you should be good to go!

      Hi Julia! The chicken would likely get overcooked as brown rice needs 22 minutes on high pressure. You can certainly do that, but the chicken could turn out tough. I would maybe try this recipe WITHOUT the chicken or stir in cooked chicken after pressure cooking.

    I wonder if adding come cooked brown rice to the pot in place of uncooked white rice will work?

    Fail. Burned on bottom of pot, never did fully cook. Tried to finish it off in oven., but probably will end up throwing it out.

    So basically if you wanted to use brown rice, just don’t sauté the chicken and it won’t be overcooked since the brown rice will take 22 minutes in the instant pot. Right?

      Even not sauteed, the chicken will cook much faster than 22 minutes. It is doable, but the chicken will be well cooked.

    This looks amazing I’ll give it a try
