We made the candied walnuts and the loaded tater tots. I gave my sister a jar of the walnuts when she came to visit and the loaded tater tots were a huge hit! Looking forward to making the corn dip and pinwheels for Easter.
Becky, My father was a Bee Keeper and all you need to do is warm the honey in warm water to bring it back to its golden sweetnes, it will run out of the jar easily.

Eggless candied nuts are easy (for those of us who are allergic or averse to eating eggs) 1/4 C heavy cream or coconut cream, 1/4 C brown sugar & 1 tsp Vanilla, 1/4 tsp good salt. I use Pecans, Almonds & Walnuts together for a little variety & keep them whole. For spiced candied nuts, add 1/2 tsp Cayenne. You can also use 1/4 C Maple Syrup in place of brown sugar if you prefer a maple-y flavor.

Hi Becky I just found out at 50 years old that we are supposed to wipe the blade after we sharpen it or steel it. My sister used to work in the kitchen full-time showed me. I was shocked to see a white cloth how much metal what's left on the blade. She said it's because when you're sharpening it you're shaving shards of metal off the edge. Just wanted to share with you because I was shocked.
Becky my mouth is watering. Your videos could be 10 hours long and they still go by so fast. It never feels like enough...LOL. That's a testament to how enjoyable they are. I'm going to definitely try the crescent roll snack.
Hello Friend! for cutting the roll ups, have you ever tried the dental floss (unflavored) trick of sliding the floss under the pastry and lifting the ends up and over, criss-cross and pull to cut the pastry? I love that trick, even cutting cake like that, too. Also, when loosening the Potato Bites from you new nonstick mini muffin pan, use a wooden skewer instead of a knife to protect your nonstick surface.

Most home growers in SA don't garden over winter or very limited, because we don't have high tunnels or green houses. It's just too expensive for home use. That might be why she's lying in bed, staying cozy and watching others garden. I also use my off/low season to watch all my American channels for inspiration for when my growing season is near. Me and my husband do have a winter garden though, but very limited, but our winter is very mild. So depending on where in SA she is, she might not be able to garden through winter. 🤗
@@SB-mw7lgThank you for sharing that, it is always to learn how others do things, how they grow and their seasons. I am American but live in Scotland. Our Scottish growing season is very short, and quite cold compared to both SA and the US. I am fortunate that we were able to find a relatively inexpensive poly tunnel and we created our own greenhouse using windows we found at the tip. It is not the prettiest greenhouse, but it allows us to actually grow our tomatoes. In the US I used to grow them outside and we had buckets of tomatoes per plant. Here in Scotland they must be grown in a poly tunnel or under glass to actually ripen. Corn, something I also always grew in the US must be grown in a poly tunnel here otherwise it won’t ripen. Boy do I miss corn fresh cut and eaten raw as I walked back to the house with enough cobs for dinner lol, or just eating a fresh picked tomato warm from the sun lol. My father used to make me sing loudly while I was in the garden picking vegetables so he knew I was not just having a feast 😂 SA is one of the countries I want to visit but have not visited yet, and would love to visit to see what everyone grows. My husband is a research scientist and is working on a cure for African sleeping sickness so we would love to see many of the African countries. I raise Malawi cichlids and would love to see where they originate from in the wild. But we travel all over the world for his conferences and rather than buying a lot of touristy things, I always buy seeds to grow, usually flowers and edible things but grasses, ferns, I am happy when growing plants…whatever I find being used in the foods when we visit or that I have never tried growing before always make it into my purchases so I have a living souvenir either outside or growing in the house. There is always something new to try growing or food and culture to learn about and the internet makes it so much more accessible.
I love your videos I noticed that you say you sharpen your knife when in fact what you use is for honing a knife. The difference is that the honing is straightening the edge that can start to roll. In order to sharpen you need a sharpening stone, which actually does take minute amount of metal off the edge which creates a sharp edge. Honing does extend the time in between sharpening.
Hi Becky...a tip on cutting rolled dough (of any kind), whether it's cinnamon rolls or such is to use dental floss. I keep a container of it in my kitchen. When I need to slice rolled dough, I take a piece about 10-12 inches long and lay it under the dough where I want to slice it, then bring up the ends and cross them over and pull thru the dough. Clean, precise & even cuts each time.
Hey Becky! It’s important to wipe both the surface/cutting board and knife down after you sharpen your knife, as you are getting metal shavings in your food!
We had an awesome home economic teacher, and toward the end of our sinior year, we all got to plan a large dinner for our teachers/faculty and their wives. we planned our menu and set up tables like a fancy restaurant. We did our budget and went shopping on a field trip. It was so much fun to serve our wonderful school staff that kept our school in great shape for us students. To finance it throughout the year, we had bake sales and candy sales. Our best seller was our ribbon candy for Christmas.

The corn dip can also be converted into a casserole by adding a couple cups of cooked rice and baked at 350 for about 20-30 minutes. My mother-in-law used to make it often.

I make a version of corn dip that is baked and has bacon bits, cream cheese and ranch powder in it. It’s so good! Like a brighter non spicy buffalo chicken dip for the people who don’t do spice.
I love watching you work in the kitchen Becky, you impress me so much with what you’ve learned as a self taught cook. I’m a chef (ret) and have so much respect for what you’ve accomplished. A helpful hint though, when you’re cutting hard cheese, please cover the pointy tip of the knife (that your left hand is pressing down on) with a cloth. I’ve witnessed a coworker severely cut the tendons (palm of the hand) when their hand slipped from pressing with such force. I get nervous every time I see you cutting hard cheese in a hurry. This recipe was an original recipe my late dad won 1st place of a appetizer contest in a recipe contest in Kingston daily freeman years ago. Kingston Ny in Hudson valley annual recipe contest. He won in between 1985-1994 It’s stuffed mushrooms/ Make or buy stuffing with sautéed onions and celery both diced finely. Make stuffing with water or chicken broth and butter. Buy seedless green grapes and sliced Gruyère Swiss cheese cut in 1inch squares. Fill mushroom caps with stuffing and hide grape in middle. Put cheese on top. Bake in oven until cheese is melted. Serve. Stab with long decorative toothpicks Absolutely delicious !
Great way to use the Crescent rolls: Breakfast Bake! Spread out two packages worth on a baking tray. Seal the seams. Soft scramble 6-8 eggs. Finely chop onions & peppers. Saute up some sausage or other meat. Shred some cheese. Thinly slice or chop a few apples. Start by topping the crescent base w eggs, then meat then veg & apple & top it all with cheese. Bake it off at 350 for 15 minutes to warm it all through. Cut it into individual servings. Finish w chopped chives and/or parsley or cilantro. You can add whatever veg & seasonings you like, the gist is that the crescents make a good crusty base for anything, even pizza toppings.
Sound yummy. I save all of my potato chip crumbs left in the bottom of the bags. (I hate waste) Any & all flavors. I mash them in the bottom of a casserole dish & top the with cheese then pour my cooked meat/veggies on top. Pour over the scrambled eggs then add more cheese. The potato chips & cheese make a great crust. Not very healthy but it’s so good. Makes my breakfast for the entire week.
Any suggestions to replace the crescent rolls dough. In South Afirca we do not have crescent rolls in a dough form. We do have puff pastry and shortcake pie dough or phyllo dough in the refrigeratioin aisle at the shops.
You should keep your cilantro stems!! They have so much great flavour (almost more flavourful than the leaves). Just cut off the roots and clean em well :)
So enjoy "joining" you in the kitchen, Becky!! I have made similar sausage rolls, and I like it when I can find the crescent roll sheets, too. We have also used the pizza dough rolls because it's a little bit hardier, and we don't have to worry so much about tearing the dough. The end product is a bit more savory but quite delicious! 😊
I'm certainly going to try your balsamic dressing! But, because I'm Canadian, I might try to substitute maple syrup instead of honey(although honey is my husbands preference). If you want your sausage or ground beef/pork/turkey in smaller lumps, I use my pastry blender, it works great! Thanks for sharing your recipes Becky! I've been cooking and collecting recipes for 50 years now, so something new is always welcome!
Hubby and I are at my sisters home in Florida (it’s 92 degrees out)…….. fresh strawberries are all over the place for such a great price soooooo what do I do? Looked up Becky’s strawberry jam recipe and put up 18 half pints ……. Lol! Who knew at age 76 I would be canning again….. I do it all from a sitting position too.
I’ve done the crescent rolls roll ups with a cheeseburger theme (ground beef, salt, pepper, garlic, splash of Worcestershire sauce. Added the cheeses, egg washed tops and added sesame seeds, and have done as pizza, and taco flavors. I’m going to do the Taylor tots you did but add a jalapeño under that bacon! Thank you!
I did a breakfast version of the tater tot appetizers but I used a regular sized muffin tin, frozen hash browns, and mixed together scrambled eggs, cooked breakfast sausage, shredded cheese and green onions for the filling, which cooked up nicely together as the potatoes turned brown and crunchy. My contribution to a Sunday brunch which everyone loved.
Becky, PLEASE wipe off your knife and wash your surface after sharpening!!! You're leaving metal bits that then gets in your food. Also, keep your nose out of stuff that you're making. I can't stand when people stick food right up to their nose and then expect me to eat it.
I'm a first-time viewer. Great video! Every year I attend an annual Christmas ornament exchange party where everyone brings some kind of dish, savory or sweet. I always tend to look last minute on what to bring, this year I want to be on top of it and make a day or two ahead. You have given me a few good ideas that won't break the bank and sound delicious I am wondering how the tater tots and pinwheels taste at room temperature? I know they're delicious hot no doubt. This is what I ran into last year; I wasn't sure about the recipes I was considering would be tasty not being hot.

15 years or so ago, after my grandpa died, grandma finally let my aunts and uncles begin to clean out the basement. And, to nobody's surprise, they found a hoard of Cold War era food supplies. Powdered milk (powdered everything, really lol), canned goods, and (my personal favorite) something called "Stripple Zips." aka rock hard preserved bacon bits. Kinda crazy to think we've come full circle and I'm now storing my own canned goods due to coming shortages. Thank God they stopped making "Stripple Zips!" Yes...we all tried them!
Back in tHe 60’s when I graduated from high school I took the home Ec. Study. My diploma says I graduated with a home Ec degree. They need to bring that back.
I like watching you Becky because I am the eldest of 8 kids and had 4 of my own and I enjoyed cooking and have my dozens of nieces and nephews at my house regularly. You add joy to my life, I live alone in Mexico now. I came to teach the bible in sign language. When I miss cooking my friends here enjoy my treats.

I'm sure lots have told you what you "should do" I"m not doing that just want to say when you sharpen your knife your you are leaving little metal on the knife and the cutting board I sharpen mine over the sink and rise before use.. just a though keep you healthy :)

My tip for breaking up sausage in smaller bits is to add cold water to the pan - 1/4 to 1/2 cup - with the sausage - it will slow the cooking down a bit and let’s the sausage break up small. If you don’t want the oil, you can drain and then brown or just allow the water to cook off and then brown. 😊
Can you use brown sugar instead of white with the candied nuts? I do Easter, Christmas Eve and Sunday dinners. These recipes are going to come in handy.❤

Personal preference. Becky does use her food processor if she is grating cheese for multiple recipes or to freeze shredded cheese. When she just needs a small amount of cheese, she has previously said it is quicker & easier for HER to use the hand grater with less clean up.

We serve the Corn Dip with Chili Cheese Fritos. Just adds an extra zing from the spices on the Fritos. We also add some diced red pepper to the Corn Dip for added color... tastes delicious as well! You need a tart maker from Pampered Chef. Not sure if that is exactly if it is called that, but it is a wooden stick with2 sizes of balls on either end so you can press into your dough (or tater tots) to make the divot for the toppings. I love mine and now I have a new use for it thanks to you!! THANK YOU for these wonderful ideas!!! I am so hungry!!!

Hi Becky, just a tip my mom always told me. Never sharpen your knife over your prep surface. You could get metal shavings in your food.

I watch your videos almost every day, they lift my mood a lot and encourage me to get working in the garden when im not feeling motivated your vegetable harvesting videos are my absolute favourite and i hope to see more of them in the near future. My personal definition of "comfort" is laying in my bed all warm and cozy while watching you pick veggies and flowers, i hope you have and awesome day/night! @@shesatitagain234I'm also from South Africa and we're currently in the end of fall, going into winter next month. Most home growers in SA don't garden over winter or very limited, because we don't have high tunnels or green houses. It's just too expensive for home use. That might be why she's lying in bed, staying cozy and watching others garden. I also use my off/low season to watch all my American channels for inspiration for when my growing season is near. Me and my husband do have a winter garden though, but very limited, but our winter is very mild. So depending on where in SA she is, she might not be able to garden through winter. 🤗
@@SB-mw7lgThank you for sharing that, it is always to learn how others do things, how they grow and their seasons. I am American but live in Scotland. Our Scottish growing season is very short, and quite cold compared to both SA and the US. I am fortunate that we were able to find a relatively inexpensive poly tunnel and we created our own greenhouse using windows we found at the tip. It is not the prettiest greenhouse, but it allows us to actually grow our tomatoes. In the US I used to grow them outside and we had buckets of tomatoes per plant. Here in Scotland they must be grown in a poly tunnel or under glass to actually ripen. Corn, something I also always grew in the US must be grown in a poly tunnel here otherwise it won’t ripen. Boy do I miss corn fresh cut and eaten raw as I walked back to the house with enough cobs for dinner lol, or just eating a fresh picked tomato warm from the sun lol. My father used to make me sing loudly while I was in the garden picking vegetables so he knew I was not just having a feast 😂
SA is one of the countries I want to visit but have not visited yet, and would love to visit to see what everyone grows. My husband is a research scientist and is working on a cure for African sleeping sickness so we would love to see many of the African countries. I raise Malawi cichlids and would love to see where they originate from in the wild. But we travel all over the world for his conferences and rather than buying a lot of touristy things, I always buy seeds to grow, usually flowers and edible things but grasses, ferns, I am happy when growing plants…whatever I find being used in the foods when we visit or that I have never tried growing before always make it into my purchases so I have a living souvenir either outside or growing in the house. There is always something new to try growing or food and culture to learn about and the internet makes it so much more accessible.
I love your videos I noticed that you say you sharpen your knife when in fact what you use is for honing a knife. The difference is that the honing is straightening the edge that can start to roll. In order to sharpen you need a sharpening stone, which actually does take minute amount of metal off the edge which creates a sharp edge. Honing does extend the time in between sharpening.

Hi Becky...a tip on cutting rolled dough (of any kind), whether it's cinnamon rolls or such is to use dental floss. I keep a container of it in my kitchen. When I need to slice rolled dough, I take a piece about 10-12 inches long and lay it under the dough where I want to slice it, then bring up the ends and cross them over and pull thru the dough. Clean, precise & even cuts each time.

Serrated knives work better than the straight kind.
Hey Becky! It’s important to wipe both the surface/cutting board and knife down after you sharpen your knife, as you are getting metal shavings in your food!
We had an awesome home economic teacher, and toward the end of our sinior year, we all got to plan a large dinner for our teachers/faculty and their wives. we planned our menu and set up tables like a fancy restaurant. We did our budget and went shopping on a field trip. It was so much fun to serve our wonderful school staff that kept our school in great shape for us students. To finance it throughout the year, we had bake sales and candy sales. Our best seller was our ribbon candy for Christmas.

I've made the loaded tater tots and crescent sausage roll appetizers before- they are BOTH SO GOOD! My kids love them, even though they're in their 30's, they always request them for family gatherings.

The corn dip can also be converted into a casserole by adding a couple cups of cooked rice and baked at 350 for about 20-30 minutes. My mother-in-law used to make it often.

I make a version of corn dip that is baked and has bacon bits, cream cheese and ranch powder in it. It’s so good! Like a brighter non spicy buffalo chicken dip for the people who don’t do spice.
I love watching you work in the kitchen Becky, you impress me so much with what you’ve learned as a self taught cook. I’m a chef (ret) and have so much respect for what you’ve accomplished. A helpful hint though, when you’re cutting hard cheese, please cover the pointy tip of the knife (that your left hand is pressing down on) with a cloth. I’ve witnessed a coworker severely cut the tendons (palm of the hand) when their hand slipped from pressing with such force. I get nervous every time I see you cutting hard cheese in a hurry. I hope this helps you from becoming injured. Thank you for all you do for all of us, your advice and fellowship. Take care my friend.

This recipe was an original recipe my late dad won 1st place of a appetizer contest in a recipe contest in Kingston daily freeman years ago. Kingston Ny in Hudson valley annual recipe contest. He won in between 1985-1994
It’s stuffed mushrooms/
Make or buy stuffing with sautéed onions and celery both diced finely. Make stuffing with water or chicken broth and butter. Buy seedless green grapes and sliced Gruyère Swiss cheese cut in 1inch squares. Fill mushroom caps with stuffing and hide grape in middle. Put cheese on top. Bake in oven until cheese is melted.
Serve. Stab with long decorative toothpicks

If you feel like your knife isn't getting sharper, it is because that is a honer. It straightens the edge of the blade, but does not sharpen it.

Great way to use the Crescent rolls: Breakfast Bake!
Spread out two packages worth on a baking tray. Seal the seams. Soft scramble 6-8 eggs. Finely chop onions & peppers.
Saute up some sausage or other meat. Shred some cheese. Thinly slice or chop a few apples.
Start by topping the crescent base w eggs, then meat then veg & apple & top it all with cheese.
Bake it off at 350 for 15 minutes to warm it all through.
Cut it into individual servings.
Finish w chopped chives and/or parsley or cilantro.
You can add whatever veg & seasonings you like, the gist is that the crescents make a good crusty base for anything, even pizza toppings.

Sound yummy. I save all of my potato chip crumbs left in the bottom of the bags. (I hate waste) Any & all flavors. I mash them in the bottom of a casserole dish & top the with cheese then pour my cooked meat/veggies on top. Pour over the scrambled eggs then add more cheese. The potato chips & cheese make a great crust. Not very healthy but it’s so good. Makes my breakfast for the entire week.
Any suggestions to replace the crescent rolls dough. In South Afirca we do not have crescent rolls in a dough form. We do have puff pastry and shortcake pie dough or phyllo dough in the refrigeratioin aisle at the shops.

You should keep your cilantro stems!! They have so much great flavour (almost more flavourful than the leaves). Just cut off the roots and clean em well :)

So enjoy "joining" you in the kitchen, Becky!! I have made similar sausage rolls, and I like it when I can find the crescent roll sheets, too. We have also used the pizza dough rolls because it's a little bit hardier, and we don't have to worry so much about tearing the dough. The end product is a bit more savory but quite delicious! 😊
I would love to see a video on different salad dressings. I LOVE Balsamic Vinaigrette, so I'm definitely going to try this one :)
I'm certainly going to try your balsamic dressing! But, because I'm Canadian, I might try to substitute maple syrup instead of honey(although honey is my husbands preference). If you want your sausage or ground beef/pork/turkey in smaller lumps, I use my pastry blender, it works great! Thanks for sharing your recipes Becky! I've been cooking and collecting recipes for 50 years now, so something new is always welcome!

Hubby and I are at my sisters home in Florida (it’s 92 degrees out)…….. fresh strawberries are all over the place for such a great price soooooo what do I do? Looked up Becky’s strawberry jam recipe and put up 18 half pints ……. Lol! Who knew at age 76 I would be canning again….. I do it all from a sitting position too.

I’ve done the crescent rolls roll ups with a cheeseburger theme (ground beef, salt, pepper, garlic, splash of Worcestershire sauce. Added the cheeses, egg washed tops and added sesame seeds, and have done as pizza, and taco flavors. I’m going to do the Taylor tots you did but add a jalapeño under that bacon! Thank you!
I did a breakfast version of the tater tot appetizers but I used a regular sized muffin tin, frozen hash browns, and mixed together scrambled eggs, cooked breakfast sausage, shredded cheese and green onions for the filling, which cooked up nicely together as the potatoes turned brown and crunchy. My contribution to a Sunday brunch which everyone loved.

Becky, PLEASE wipe off your knife and wash your surface after sharpening!!! You're leaving metal bits that then gets in your food. Also, keep your nose out of stuff that you're making. I can't stand when people stick food right up to their nose and then expect me to eat it.
I'm a first-time viewer. Great video! Every year I attend an annual Christmas ornament exchange party where everyone brings some kind of dish, savory or sweet. I always tend to look last minute on what to bring, this year I want to be on top of it and make a day or two ahead. You have given me a few good ideas that won't break the bank and sound delicious I am wondering how the tater tots and pinwheels taste at room temperature? I know they're delicious hot no doubt. This is what I ran into last year; I wasn't sure about the recipes I was considering would be tasty not being hot.

15 years or so ago, after my grandpa died, grandma finally let my aunts and uncles begin to clean out the basement. And, to nobody's surprise, they found a hoard of Cold War era food supplies. Powdered milk (powdered everything, really lol), canned goods, and (my personal favorite) something called "Stripple Zips." aka rock hard preserved bacon bits. Kinda crazy to think we've come full circle and I'm now storing my own canned goods due to coming shortages. Thank God they stopped making "Stripple Zips!" Yes...we all tried them!
Back in tHe 60’s when I graduated from high school I took the home Ec. Study. My diploma says I graduated with a home Ec degree. They need to bring that back.

I like watching you Becky because I am the eldest of 8 kids and had 4 of my own and I enjoyed cooking and have my dozens of nieces and nephews at my house regularly. You add joy to my life, I live alone in Mexico now. I came to teach the bible in sign language. When I miss cooking my friends here enjoy my treats.

My tip for breaking up sausage in smaller bits is to add cold water to the pan - 1/4 to 1/2 cup - with the sausage - it will slow the cooking down a bit and let’s the sausage break up small. If you don’t want the oil, you can drain and then brown or just allow the water to cook off and then brown. 😊

Why dont you get out your food processer to grate cheese..
Personal preference. Becky does use her food processor if she is grating cheese for multiple recipes or to freeze shredded cheese. When she just needs a small amount of cheese, she has previously said it is quicker & easier for HER to use the hand grater with less clean up.

We serve the Corn Dip with Chili Cheese Fritos. Just adds an extra zing from the spices on the Fritos. We also add some diced red pepper to the Corn Dip for added color... tastes delicious as well!
You need a tart maker from Pampered Chef. Not sure if that is exactly if it is called that, but it is a wooden stick with2 sizes of balls on either end so you can press into your dough (or tater tots) to make the divot for the toppings. I love mine and now I have a new use for it thanks to you!!
