I am so glad that Max is back in Saigon. Somehow, I felt that Max's personality is more suited for Saigon (South) than Da-Nang/Hoi An (Central) or Hanoi (North). Soon, Max should open a local food tour business for Westerner tourists in Saigon with a business visa. With business visa, he can stay in Vietnam almost indefinitely. ;-)))

The last place you visited looks AMAZING. I've always loved bun thit nuong so anything that is similar to that is delish to me. Her bun is packed with all kinds of goodies. But yeah, you should have eating the bun nam last as it's more potent/pungent. :)
I find it interesting that you sound a lot more confident in speaking Vietnamese back in HCMC with your southern accent compared to your trip to Hai Phong where you seemed to speak a lot less if not tentative when you were up there.
As for the two street food vendors, those 2 ladies are gems. They work hard as hell, don't know how they are so upbeat while having to work so hard and under intense heat and noise. And the footage we see, when you arrive, is after 3-4 hours of ingredient shopping and preparation that probably started around 4-5am. That freshly grilled meat banh mi is beyond belief compared to the refrigerated processed crap we eat here in the West.
