    Made it yesterday and my turkey turned out to be fantastically moist and full of flavour! Thank you Jamie :) I added some garlic to onions and vegetables and it worked really well.

    we tried the recipe for the last 2 Christmas: in 2022 with a turkey and in 2023 with a capon! wonderful! so tender! The stuffing, the gravy...uhm!!! thank you! Have a very Happy New Year!

    Delicious Jamie - time to tuck in! For years I have also been roasting my bird upside down. Keeps the breast meat remarkably moist. All that's needed is a deeper trivet base of veggies; easy-peasy. Works every time.

    I never comment somthing on youtube but I really have to fo it this time. I did everything exactly like you with the Turkey and the gravy and it came out fantastic good. I have never had gravy before, maybe its not normal here in Norway, but gravy really rocks . Takes it to an whole other level...Thank you again and happy new year. And sorry for my bad english...

      Omgg lol, it's that time of year now. Any ideas with the butter rub besides salt and pepper... might just do salt and pepper. Last year I did lemon and thyme.

    I cooked a turkey for the first time 2 years ago using your method, along with a brine/marinade. My wife said this is the first turkey she ever liked!! So I’m doing another one right now, just for the fun of it, I hope it turns out just as good.

    On christmas day mum makes the turkey for 11am and we eat at 1:15pm so the idea of resting it must have been around for years. It is never cold even after two hours!

      Hi Jamie, thanks for you Turkey recipe, i did what you suggested minus the stuffing & the al foil & my turkey was 3.5 kilo at 2 and a 1/2 hours on the bbq once cooked left on bbq with a closed lid, i take it out to rest. Itv was delicious & my family enjoyed. I'm going to try the pork belly on the bbq next. I hope you had lovely Christmas with your & thank you so much for your easy meals on your cooking programm which i make also. 😀😀😘😘

    Made turkey for the very first time ever this yr following these instructions. And it turned out unbelievable. Couldn't use the clementines though due to allergies of some guest. But boy! Did I get compliments.

    The 'polite' way would be to put the butter or any other fat under the skin... but the skin never gets quite as crispy that way! You go, Jamie!

    Hi Jamie, we'll be doing this recipe tomorrow for sure! Any chance of a video on pots, pans, roasting tins!!!! Which brands do the best job at different price point? Do I need to be building my collection with All-Clad are are there cheaper alternatives which do the job just as well?

    Can't tell you how many people I've taught to roast a turkey. It's the easiest meal to feed a crowd. I actually do this thing though where I mix olive oil, spices, lemon juice together and pulverize it into a pesto and rub that underneath the skin (between the skin and the meat) so it has more staying power. I place herbs in the cavity too. I include lavender generally...because I like it. Also, I roast at 500 for about 15 minutes at the outset and then turn the temp down. Will try your version though!

      Surely it goes baltic freezing in 2 hours!?! Who wants cold turkey at dinner?? I understand it allows the juices to come out, but I'd rather have mine warm thanks.
