- Here is my favorite recipe for a vegan steak! All the flavors, texture and looks are guaranteed to leave you speechless! All the ingredients are easy to find, affordable and the whole recipe is easy to put together so give it a try, serve it to your meat lover family member or friend and let me know how much they liked it!
INGREDIENTS:
FOR THE STEAKS:
1 small onion, chopped
2 1⁄2 cups of cooked and drained red beans
1 cup mashed potatoes
1 cup potato starch - it can be less
2 tablespoons of soy sauce
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 drop of liquid smoke - DO NOT EXCESS 1 DROP
1 tablespoon of olive oil
Black pepper to taste
Salt to taste
Vegetable oil for pan searing the filets
FOR THE ONION SAUCE:
Olive oil
1 small onion, sliced
1 whole garlic clove
Fresh thyme
Fresh rosemary
1 tablespoon of soy sauce
A splash of water
METHOD:
MAKE THE STEAKS:
Saute the onions until golden, and set aside.
Add all the ingredients for the steaks to a blender, except the vegetable oil for frying the filets and the potato starch. Blend until smooth
Pour the mixture into a bowl. Gradually add the potato starch until it forms a semi-mouldable dough. This dough, unlike a hamburger dough, gets softer, it is expected
The steaks will be shaped as they are fried. So with a spoon, take a little bit of dough and pour it into a frying pan with the hot oil, allow the balls of dough to fry for a minute, after that with a spatula press the steaks until they are the thickness of your taste. Flip the steaks so they cook properly on both sides. Repeat the process until the dough comes to an end.
Don't add too much potato starch so the steak doesn't lose the flavor of the ingredients. This is not supposed to be a moldable dough, that's the idea, so don't worry.
MAKE THE SAUCE:
Add olive oil to a skillet over medium heat, then add the sliced onions and allow them to saute until golden, then add the herbs, saute for a few seconds, add the soy sauce and a splash of water, stir to combine, and turn off the heat and serve it over the vegan steaks.
CUP CONVERSIONS:
1 cup = 250 ml / 8.45 oz
1/2 cup = 125 ml / 4.22 oz
1/3 cup = 85 ml / 2.87 oz
1/4 cup = 60 ml / 2.02 oz

im not vegan but i ve been exploring vegan food at the moment. In my country, we dont have commercial vegan patty like that and a lot of vegan meat on the internet is using expensive hard to get ingredients here like xanthan gum, soy chuck and nutritional yeast. so, having these type of easily accessible and cheap ingredients really really fuel my interest to make it

Excellent. 👍👍👍👍We make burger patties with boiled potatoes and mashed boiled black whole chickpea. Can also add grated cottage cheese in it.

I will be making this again soon! I am going to try to bake it as I had to use A LOT of oil. I too use WAY more liquid smoke.

For this recipe I was wondering if you can use finely grated potato instead of mash (puree)? I have a tip ingredient if you want it to taste like a sausage steak adding toasted ground fennel gives it a nice taste 🙂

Your 'bean-beef' looks delicious! (As does everything that you have made here on your show).
How you served it reminds me of a 'dish' that I liked as a kid.
It was called 'Biffsnadder' (Beef-goodies??), and was served all over Norway.
The beef was prepared in small chunks fried alongside with the onion slices,
and served with a side dish of salad, fries or rice, and 'Bearnaise sauce'.
Do you have your own vegan version of 'Bearnaise Sauce'?
That question also goes for 'Hollandaise sauce' by the way...

Great question! It depends on how thick you make your fillets, thinner ones are a bit firmer and thicker ones are a bit softer and it also depends on the temperature you're cooking them, higher temperatures make them firmer outside and softer inside and vice versa. :)

Jana, are you familiar with cast iron pans ? If you grind and polish them to a smooth surface, and season then properly with high heat, they will become non stick just as a new teflon pan, but without the toxicity of the teflon compound which degrades with use and contaminates all the food being prep upon it. I've banned all teflon in my household and I've been using the same iron skillet for more than 10 years and by taking good care of it, it is still rocking the perfect smooth non stick surface.
How do you grind and polish the surface?
Oi Thiago! Yes, I do have some, and since I'm rearranging my kitchen I have completely forgotten about them, but yes, I LOVE my cast iron pans, they are so versatile, arent they? :=)
@@justcarineinparis I used power tools such as an Orbital sander and an Angle Grinder, and then hand polished with high grit sandpaper. When it reached a smooth shiny surface, like a stainless steel, I then seasoned it with canola oil. From that, you only have to maintain the seasoning after each use. I find that even pre-seasoned skillets do not have a smooth enough surface, that's why I went through with all this work. I pays off, I tell ya. Worth it.

Can you substitute a different starch for the potato starch as in corn starch or arrow root with those things work just as well?
I haven't tried arrowroot but I think it'll work as well, I know corsntarch does the job tho... ;)
