    HOW TO MAKE THE GREEN BANANA BIOMASS (GBB)
    NO PRESSURE COOKER RECIPE HERE: • MY OIL-FREE GLUTEN-FRE...
    You will need about 6 unripe (green) bananas OF ANY KIND. Half ripped, or bananas with yellow spots won't work, the bananas need to be unripe because, unlike green (unripe) bananas, ripe bananas are not rich in resistant starch and resistant starch is the core of our ingredient here.
    Detach each banana by cutting them ON THE STEM, way before the pulp, otherwise, it compromises the resistant starch.
    Wash the bananas with a sponge and mild soap
    • Pressure cooker: Add the bananas to the pressure cooker with boiling water until the water covers the bananas (be careful not to exceed the limit of your pressure cooker), set the pressure to high, and cook them for 5 to 7 minutes. When the cooking time is done, allow the bananas to cool until a mild warm temperature, do not release the pressure manually, as the bananas are still cooking inside.
    • If you are using a regular pot (non-pressure cooker), follow the same steps, only you will semi cover the pot with a lid, bring the bananas to a boil, then to a simmer and let them simmer for 20 to 30 minutes. The banana peels will break during cooking, which means it is ready and cooked enough. When the timer is done, turn off the heat and allow the bananas to cool in the pot with the water until they are still a bit warm.
    BLENDING THE BANANAS:
    Add the bananas while still warm to a blender, adding a little bit of hot water, little by little, this way they will blend easier. Discard the cooking water, it is not clean, it is too tannic, dark, and bitter.
    Blend only the pulp - if you have a Vitamix type of blender or any high-speed blender, you can also blend the skin, but it will turn out more fibrous, darker and the taste will be not so neutral
    FREEZING AND DEFROSTING THE GBB:
    You can separate the amount of GBB you will use for the week, put it in an airtight container, and put it in the fridge where it will last for 5 to 7 days; then freeze the rest of the GBB as follows:
    To freeze the GBB, put them into smaller containers and don't fill all the way to the top as the biomass will expand as it freezes.
    Remember that one should not exceed the amount of 2 tablespoons of green banana biomass per day so it is smart to freeze it in smaller portions, or you can freeze them by adding them to ice cube trays, and once they are frozen, remove them from the trays, put them in a sealable plastic bag and freeze them.
    The GBB can be frozen for a period of 3 to 6 months.
    When you freeze the GBB, it will change its structure completely so you will have to reconstitute it again by doing the following steps:
    Remove the GBB from the freezer and place it on your kitchen counter 3 to 4 hours prior to using it, or leave it on your fridge overnight.
    You will see that once thawed out, the GBB resembles a bit like a sponge or frozen tofu, and the water will be completely separated from the GBB, this is normal, you just squeeze out this excess water, discard this water, then put the GBB in a pot and add a little bit of hot water little by little, then turn on the heat to low, whisk the GBB until you reach the desired consistency
    Different bananas, different colors!
    Every banana is different and it is normal to make GBB and observe that sometimes the color will be darker, yellowish, grayish, or even pink, this is totally normal, and the taste is the same, pretty neutral so don’t worry about it and have fun!
    3. USING THE GBB IN RECIPES:
    PESTO ALLA TRAPANESE RECIPE:
    INGREDIENTS:
    2 to 3 tablespoons of banana biomass (IN REPLACEMENT OF RICOTTA CHEESE)
    1/2 lb of seeded ripe plum or cherry tomatoes
    2 cups fresh basil leaves
    1/4 cup of almonds
    2 cloves of garlic
    Salt and pepper to taste
    1/4 cup of extra virgin olive oil
    1/4 cup of nutritional yeast
    Blend all ingredients together until combined

    I just made it and you were right, it's life-changing!!! Because it's neutral tasting, but very thick and creamy, it can substitute for so many things. This is a godsend for those of us vegans who need low GI diets and cannot have flour and sugar, or for those avoiding gluten. How did I not know about this before?? And it's super cheap!       @@ChefJana Isn’t the starch in raw bananas jostle resistant starch which is in effect fibre. As the banana ripens, the starch is converted to glucose and fructose, which means, sugar. This is why raw bananas taste neutral and ripe ones taste sweet. Chef Jana specifically states raw bananas.

    No wonder I never got very sick as a child. When we had no food my grandma and aunt will cook green bananas. My grandma would smash them and make patty cakes and or just eat like potatoes salad with some oil and onions. It was actually so yummy. I am going to start doing it again following this recipe. I do not know about bowel problems, but we ate a lot. Between that and beans we were very poor but healthy.

      That’s when bananas had the 3 black dots in the middle! They were real!!! These gmo bananas are trash. No flavor and they spike sugar in your body. The good old days were good to us.

    THANK YOU! Wow! For me, this is a HUGE game changer! The only suggestion I have, off the top of my head, is to freeze the green banana biomass in ice cube trays, then after they are frozen solid, the frozen cubes can be removed from the trays and kept loose in a big bag or container and taken out of the freezer one ice cube at a time. Thank you again. I feel your love. I wish I could hit the like button 100 times! You have just changed the way I shop and live.

      @@halinanowak-malisiewicz9553 dear halina i am sending name of recipe and you can see it on you tube. There are many variations. If you do not have any particular masala for gravy don’t worry . Even a plain gravy made with onions,tomatoes,garlic,ginger,chillies will suffice.
      1). Kache kele ka kofta/ raw banana curry. By. Foodzlife
      2) kofta recipe with raw banan. By. Foods. and flavors
      The raw bananas are boiled whole in water in pressure cooker or for open boiling you can cut into two inch pieces.
      Remove skin and mash the banana into a pulp. Add small cut onions,chillies,ginger,corinder leaves ,little gram flour for binding(besan). You can add masalas like cumin powder,garam masala and amchur powder(dry mango powder) for flavor . Make small balls and deep fry.
      These koftas can be had as a snack or added to a gravy also
      Gravy can be plain tomato gravy or onion and tomatoes curry.

      Paprika can replace red chilli powder
      Besan or gram flour can be replaced by little corn flour for binding but not much-or else kofta becomes hard

    A suggestion for longer storage and convenience...spread out thin layers of the paste on dehydrator trays and dehydrate all moisture out. Powder, and store in jars. To use, scoop out what's needed and add water to desired consistency. :)

    So so amazing Jana, we as kids kind of leaved on these green bananas.
    Coming from Uganda ( East Africa) these been a staple food for Africans but we coming from India got so used to eating green bananas too.
    Very delicious. My mum used to make curry out of them, one were she would peel the raw bananas and cut them in small pieces and cook them in tomatoes, green chilli, ginger and add some roasted coarse peanuts, so yummy and i still cook them in the same method and now my children and my grandchildren love them too.
    But loved your method too, so going to try that out for sure, thanks so much for sharing.

      Peanuts have a lot of Omega 6, which isn't good. You might think of using another nut like walnut, pecan, brazil, almond, which are Omega 3's < very healthy.

    My Mom used to make bread, cake, fritters, tortillas from bananas. We also made a flower from the green bananas, but that has a unique flavor. My mom also made us porridge from green or ripe bananas.

    In some Caribbean restaurants you can order a green banana dish and it will be 3 or 4 bananas on the plate. It's starchy, much like potatoes. A different texture of course but it can be a meal not just an ingredient of 3 or so of cooked blended starch.

    My refrigerator has always been loaded with this ingredient for many years. When my friends come into my kitchen and see me making this, they are not very appreciative of how different it is, and nutritious too. I've used it to substitute potatoes and a burger where you used potatoes. It makes every type of food that I eat, but I like the idea of the desserts and also the substituting of eggs. Thank you.

      Yes I too use green bananas a lot and substitute it for potatoes. But now will try desserts and smoothies. It is really a good gut friendly starch. I remove the thin fibrous peel and use the soft thick peel inside when cooking. It has a lot of fibre.

    Wow - thank you so much for bringing our attention to Green Banana Biomass and it's many many uses. I was told never to eat green bananas, so boiling them, the processes needed to make them usable and not using more than 3T in a recipe makes them safe to ingest. Thank you so much Chef Jana!

      Try a Giant Tiger (Tigre Geant). I'm in Pembroke, ON, and the Giant Tiger here seems to stock mostly green bananas. This new superfood makes me so excited because now I don't have to wait for the bananas to ripen. Good luck in your search~

      It doesn’t upset me that you say things like “If you don’t like me taking so much…” it upsets me that there are people out there that make you feel like you need to say things like that.
      I wish people didn’t make you feel like that. You don’t deserve that. You’re wonderful.
      I love watching your videos, I love how you speak through your smiles, and how happy you are all the time, how excited you are to share, how positive you are that we are going to love whatever it is you’re going to show us or tell us about.

    Thanks for another great video! If you took them from the pressure cooker, sliced, dehydrated, and ground into flour, do you suppose you could reconstitute the flour with water and have nearly the same thing?

    Thank you so much! With all my diet restrictions I needed something else for sauces and baking. Mine is in the instant pot right now. I will freeze some in a silicone mini muffin pan, they hold a 1/4 cup, that should be perfect for what I need. New Sub here 🤩

      I just made the most amazing Creamy Gravy with Mushrooms and Spinach over rice. I added broth, almond milk, couple teaspoons of coconut milk powder and the rest of my gluten free and dairy free gravy recipe. The green banana biomass or purée really made it thick and creamy! Such a big difference! Thank you, Thank You, Thank You!

    This reminds me and looks like banana pudding, this would also be good to sweeten it by blending it with soaked date water, I did that one time for chocolate pudding. I'm going to try that with this one and maybe with some overnight oats and coconut mango toppings. Getting hungry already :-)

      Soaked blended dates look a lot Iike banana biomass just a little darker ... it works great for substituting sugar

      @@marymorningstar6832 DATE SYRUP is made by soaking dates in boiled water 2 TIMES, then filter through cheese cloth; NOT blended dates.

      @@brendastolecki4755 yes you can do that too..I’m sure it would be more concentrated and syrupy.. and that’s fine if that’s your goal but you would be amazed at how well this works too and the way you describe well it’s been cooked at high temps which puts it in the refined food category which I want to avoid and I try to preserve as much nutrition and avoid high concentration of refined sugars.. so it’s another way that’s all

    Hi :) thanks for the video - very useful.
    Perhaps I missed this part in the video, but if you don’t mind mentioning the ratio of eggs to BBM in different recipes (like mayo, cake, etc.) it would be most helpful.

      Great point, however, like I've mentioned, I could easily spend hours talking about recipes but for this introductory video Ive chosen to just explain the best way I could how to prepare the biomass first and rest assured that there are many videos ready using the GBB and amongst them are pancakes, a brownie, a flatbread and much more. ;)
