  • Pakodi ki Kadhai is a unique and totally delicious recipe from Chhatisgarh in Northern India and also features one of my books 'A Culinary Passage Through India' for good reason. The dish comprises some onion pakodi (onion bhaji) placed on top of a simple but well balanced yogurt based curry sauce. This combination creates one of the most satisfying dishes I've ever tasted, hencethe longer video. Try it for yourself and see!

    INGREDIENTS - Serves 2 mains /3 sides
    -For the Pakodi/Bhaji
    onions 2 medium
    potatoes 2 medium
    Green chilli as required
    fresh coriander 1/2 cup
    Salt to taste
    Turmeric 1 tsp
    chilli powder to taste
    gram/chickpea flour 1 cup
    Slightly crushed; Ajwain, Fennel Seed, Cumin seed & coriander seed - 1.5 tbsp
    water to combine
    oil for deep frying
    -For the Sauce
    ghee/oil as required
    Cumin seed 1 tsp
    onions 3
    chopped garlic 4 cloves
    garlic & ginger paste 3 tbsp
    Turmeric 1 tsp
    Salt to taste
    coriander powder 1 tbsp
    Cumin Powder 1 tsp
    Garam masala 1 tsp
    green chilli as per taste
    chilli powder to taste
    fresh tomatoes 6
    full fat Greek yogurt 600ml
    water as required

      No, I've changed the recipe for yesterday. Tomatoes and potatoes in the bhajis etc
