  • How to Make A Restaurant Style Vegetable Kadai - Veg Kadai Recipe - How To Make Kadai Vegetable

    Ingredients required for making kadai vegetables -
    * 87 gm/ 3 oz/ 1 large carrot
    * 100 gm / 3.5 oz/ 1 small to medium potato
    * 60 gm/ 2.1 oz/ 1/2 cup chopped green beans
    * 100 gm/ 3.5 oz cauliflower
    * 4 to 5 small florets of broccoli / 1/2 of a large green capsicum
    * 1/2 of a large red bell pepper
    * 1 small onion cut into quarter and leaves taken out individually like petals
    * 1 large onion finely chopped
    * 2 teaspoon grated garlic
    * 1 teaspoon grated ginger
    * 2 + 3 tablespoon oil
    * 2 teaspoon salt or to taste
    * 1 teaspoon sugar (optional)
    * 1 teaspoon cumin seeds
    * 1/2 teaspoon garam masala powder
    * 1/2 teaspoon kasoori methi (dried fenugreek leaves)
    * 1/2 teaspoon turmeric powder + 1/4 th teaspoon used while frying cauliflower, potatoes and carrots
    * 1 heaped teaspoon kashmiri red chilli powder or paprika
    * 4 tablespoons/ 1/4 th cup heavy cream/cooking cream/sour cream
    * 1/2 cup canned crushed tomato
    * 1 cup hot water.
    For the spice blend -
    * 1 teaspoon coriander seeds (dhania)
    * 1 teaspoon cumin seeds (jeera)
    * 10 black peppercorns
    * 1 dry red chilli (seeds taken out)
    * 1/2 teaspoon fennel seeds (totally optional)
    Serve this with naan/paratha/roti/pulao/biryani/rice

    Loved how the cream made the individual veggies into a posse of friends.
    I’m learning from watching your recipes that I needn’t bomb my foods with spices. Some seeds x2, some powders x3 and a splash of garam masala at the end.
    I find fennel rather potent, not one of my favourites too (use sparingly at best).
    Cardamom is my delight, especially when it’s soft and shiny in a rich meaty curry type stew.
    Which spice is a stand-out for other viewers??
    A trifecta I often use is cardamom, chili and yellow mustard seeds.

      For me it is Bengali five spices (panch foron) . A combination of cumin seeds, nigella seeds, mustard seeds, fennel seeds and fenugreek seeds. Makes even an ordinary bland curry stand out.

    This is definitely what we are having for dinner! I don’t have cauliflower but I have lots of broccoli so that should be an easy swap.     The great thing about this recipe is that you can use it to finish whatever vegetables you have left in your fridge. If you don't have or don't like one of them, just leave it out and add a bit more of the others. I think this would go well with rice and/or naan.

    This is indeed a delicious recipe and with winter at our doorsteps we can look beyond the pointed gourds and the bhindis. I do a kadai recipe very much like this but also add a few cubes of paneer.

    I just made this and will make it again. It is awesome. I did 2 things differently. I made a cashew cream in my blender for this. I used 1 part cashews to 4 parts water by volume. Also, to make it hotter, I added a heaping tablespoon of a chili paste (in with the garlic and ginger). I make this from whole green Thai chilies. I don't consider an Indian dish hot enough unless it makes my face sweat.

      @@CurriesWithBumbi I simply grind up the whole raw chili peppers in a food processor. The down side is the burning cloud of death that is also produced.

    Tried making this for the first time. I didn't have the exact same ingredients (powdered ginger and fenugreek, and creamed coconut) and I think I messed up my proportions a bit, but still tasted good! Excited to try again and improve! Thanks Bumbi

    I tried the vegetable kadai last night. What a lovely curry!! Unfortunately I had forgotten to pick up some dairy free cream when I was out shopping, and I had no other alternative at home, so I just had it without the cream, it was still such a lovely curry! This recipe will definitely be making it into my recipe notebook.

      @@CurriesWithBumbi the thanks are all mine, Bumbi - I watch your cooking videos, over others available (except for Happybellyfish!), because I love the authenticity of them. I lived in Sri Lanka for a year and really got into authentic home cooking, which I loved, except for the heaps of salt, in my opinion Sri Lankans use salt as a spice. So when I cook Sri Lankan food I vastly reduce the amount of salt that is recommended.
      I messed up with your Vegetable Kadai, as I forgot to add the 2 dried chilli's, but it still tasted wonderful! I'm looking forward to your upcoming recipes, Bumbi. My confidence in cooking real, authentic Indian food has grown a lot because of your simple, well explained advice, your recipes and the your subtle, soothing voice as the backdrop. Excellent!     I came across your videos looking for some Indian recipes. I watched a few and so far I love them all. I started cooking the Indian style several months ago. I only shop at Indian stores as well. The spices and the way I feel after eating is different compared to the American food. My husband feels the same way. This way of cooking and the relationship you have with the food and mindfulness of eating for nutritional value for your body is so smart. Your videos are so enjoyable to watch.     So... Dinner sorted! I've been trying to use what's in the fridge, rather than go out and buy especially for 1 recipe. This checks all the boxes.... One question, if I may...I bought (a while ago) fenugreek seeds, but now all the recipes I see use "leaves". Can you substitute seeds for leaves in a recipe? Nice to hear your voice again 😊

      Fenugreek seeds is not a substitute for fenugreek leaves. Just leave out fenugreek leaves it will still be delicious. Thanks for leaving a comment

    Bumbi how about using yogurt? Should i use the same wisking technique before adding?

      Yes if you have followed my videos using yogurt then please use those same tips.1. Taking out the yogurt half an hour before starting to cook 2. Whisking 3. Heat off when adding to pan 4. Stirring continuously on low heat till bubbles start showing up 5. Adding salt after you see the bubbles

    My wife love it, so I have been cooking about once a week since you oublished the recipe. I find it difficult to make for more than 2. Maybe my pots are too small. Anyway, a great dish. Would be great even without all the spices, I think.

    I would go for broccoli over green peppers too Bumbi. There are many vegetables that taste better than green pepper.

    Bumbi I preprepared grated garlic in advance but noticed after a while it turned blue. Can I still use it? Thank you.

      Garlic gets oxidized after they are cut. It is a natural process. You can still use it but if you feel it is smelling bad then please discard it
