      I agree. It goes great in a wrap, on a potato, tacos, burritos, salad, "in a box, with a fox"... hehe. It's the multi-purpose super salad.

      You will like this one. It is a great dip, but it is excellent inside a potato, on a salad, on top of rice or noodles, or on a tofu scramble!

    This is definitely my go to for taking to a gathering. Great idea using peppers instead of tortilla chips!

    It is very similar ti a black bean salad that I make. I like to put it on a bed of kale. I use regular tomatoes so that their juice blends into a dressing. You are absolutely 4ight about the cilantro, it really makes it come together.

      Kathy, I made the cowboy caviar last night for our “ monthly family dinner” ….where children and grandchildren gather.​…..at our house. EVERYBODY loved the cowboy caviar!! I included the cilantro because nobody has the soapy issue here . THANK YOU SO MUCH! I will take it the end of the month church potluck. And thank you for making the videos. Being vegan has helped me have almost perfect heath for over fifty years! I’m 72 and feel like I am 20!@@KathysVeganKitchen

    I make it for myself and eat it as a salad meal for several days at lunch. I love cilantro so I always add that and I also cut up an avocado and put that in. The lime juice keeps it from turning brown. Sometimes I substitute brown rice for the corn if I’m out of corn. All variations are delicious imo.

    This looks EPIC 😍I appreciate your channel and your recipes and love that you share this to help in other’s health journeys. I’m sorry people like you that work hard to share their lives have to listen to conflicted insecure people speak of “ snobby vegans” as a reflection of their own inferior feelings… there are so many reputable very well educated/researched and documented studies Blue Zones, How Not To Die, The China Study that highlights the benefits of a vegan/ plant based diet & hey simultaneously help the planet as well as the innocent animals. Much respect for your work 👍🏻

    I made this today and it came out great! A few minor changes.. I didn't have any jalapeños.. So I used a small can of mild green chiles.. No garlic salt, so I added extra garlic powder and salt.. (pepper too). I tasted it when I was finished mixing it and it tasted great! Looking forward to trying some tomorrow.. If it lasts that long... 😉

    Thank you for this great recipe. I usually buy Trader Joe's cowboy caviar in a jar, but yours looks so much better. (I hate cooking and avoid the kitchen at all costs, but i believe I can handle this one.)

      You can definitely handle this one. It is super easy and tastes so fresh! I have also used Trader Joe's, and although it is good, it doesn't have that fresh veggie taste. Check out some more of my recipes. I have a lot of one pot, east meals. It's all about easy :)

      In the non-vegan world, caviar is made from fish eggs from large fish and is considered a delicacy. This recipe, of course, does not contain any such thing. Cowboy caviar, however, was initially coined by Neiman Marcus food director Helen Corbitt introduced this dish at the party as a simple pickled black-eyed pea salad, but the combination of the buttery legumes and vinegary dressing became such a hit that guests dubbed it "cowboy caviar." This recipe is an oil-free, whole-food version of that famous dish.

      We must bring our own food or eat before we go most of the time. As time passed, and my friends realized I was NEVER going to eat like them, they started to look at menus before we ate out, or they had food for me to eat.

    Do you add the cilantro when you are making cowboy caviar or at the end when you are about to serve it?

      I add the cilantro to the cowboy caviar when I make it before refrigerating. But you can add it whenever you like.

    It's in Kathy's DNA that makes her not like cilantro. We are not vegetarians, and I wish you could tell me a recipe for just 1 person, but I am going to try it for my husband. I personally can't eat garlic.

      Yes, absolutely! I make a big batch. Half we eat as a dip, and the rest I serve hot on baked potatoes, taco shells, or rice.

    Great salad but it needs some kind of fat because the vitamin these veg are fat soluble. No fat means not much nutrition.

      The chips have plenty of fat for the salad, but it's a great suggestion. You can add oil if you like. It stays fresher and less soggy without the oil. Add avocado?

    My vegan daughter hates getting invited to parties by friends who know she's vegan, yet don't have the courtesy to make sure she's able to eat . I feel like every party should have at least one vegan option, if not more . These days so many people are vegan and it's just a common courtesy to have vegan options

    🇬🇧 You’re taking that to someone else’s house to put on a table for others to enjoy. I don’t believe what I’m watching 👀 you’re using your hand to empty the smaller dishes into the larger dish. You’ve just turned my stomach inside out, so pleased I’m not eating that you started with a spoon then started using you hands 🤢🤢🤮

    My friends who are vegan, very snobby about it, are very ill. The man has a permanent case of cancer, lymphoma? She's got a tumor the size of a football. Sad. I tried it and it ruined my health. Drs had a fit. Meat is not an enemy.

      You mentioned "vegan" and "cancer".. We went vegan when I was diagnosed with cancer in 2019. There were many other things we did, but I know being vegan helped in my healing journey. (I dropped 80lbs for starters). I try not to be snobby about it because I remember those kind of vegans.. But on the flip side of that coin, there are snobby carnivores too. In any case, I am coming up on 4 years cancer free. I wish your friends well, but I have to wonder if there is some other issues.

      People who claim they made themselves sick by not eating body parts could have educated themselves, but instead they complain and try to turn others against the proven healthiest diet, which has the added benefits of not making animals and the environment suffer. Oh well. They’re missing out, but it’s their own fault.
