Please correct me if I'm wrong but I thought cowboy caviar was a tex-mex thing and it is not the same as pico de Gallo, I though pico de Gallo aka salsa bandera so cilantro, tomate, cebolla. I didn’t create the idea for this, I didn’t create the name of it, I simply shared my recipe. As I stated in the beginning of the video, this is pretty much a salsa.
Apparently this recipe was invented by the Food Manager of the Dallas Neiman-Marcus department store. They wanted a catchy name to go with it, so chose "Texas Caviar." (or as some say, "Cowboy Caviar"). The dish was a hit, the recipe took off and the rest is history!

Our family has made a version of this for years using shoe-peg corn (no lime, no cucumbers) and called it Texas Caviar. And used Wishbone Italian dressing as the "sauce" - the recipe said it HAD to be the Wishbone brand. I'm sure some will frown on that part - but something about the flavoring of it melds really well with these ingredients. Served with the Fritos Scoops to get just the right ratio of caviar to chip in one bite - lol! Can't wait to try your version!

Parsley or arugula. Also, if you can find it, fresh sorrel herb (not the Jamaican flower), which has a bit of a lemony taste.
