- Freshly Milled Flour Amish Friendship Bread
2 Sticks of Unsalted Butter
2 Cups of Honey Granules or Sugar
2 Eggs
2 Cups Buttermilk OR 2 Cups milk with 2 TBSP White Vinegar or Lemon Juice
4 to 4 1/2 Cups Soft White Wheat or Regular Flour
2 Tsp Baking Soda
Filling:
2/3 Cup Honey Granules or Sugar
2 TSP Cinnamon
Mix together well
Cream Honey Granules and Butter together well, add eggs, buttermilk, Freshly milled flour, and baking soda. Combine until incorporated. Line or grease 2, 2 pound loaf pans , put in each pan 1/4 of batter, get into all corners. Sprinkle on 1/4 cinnamon filling, add the rest of batter over each pan equally, sprinkle remaining cinnamon filling over each pan equally.
Bake at 350 degrees for 45-50 mins. Enjoy!

You are very encouraging. I am 77 and still learning new ways of cooking. I have high blood sugar so I am learning to cook with whole grains. Hope that the whole grains will help to bring b s down.

The recipe looks great! You are doing an awesome job so far, I have been enjoying your videos very much. It is always nice to see a new channel using fresh milled flour. I have been making my own sandwich buns and rolls for years. A few months ago I decided to give loaves another attempt. That worked well, so I haven't bought any store bread in 2 months. I'm currently waiting for Christmas to open my grain mill and start making my own flour. I will hopefully be using less white flour in the coming year.

It does all get overwhelming! If I can give advise, start with a basic bread dough, get used to just doing that then move to something new. Once you get a feel for how the freshly milled flour looks and feels you gain so much confidence! I'm so excited for you!

Question- where do you buy the honey grandulars???
The only place I have found is through the Breadbeckers co-op, which is tricky because it only delivers once every 4 months. In fact, my ordering just closed on the 19th this month, and will be delivered sometime in Jan. Also, to make it more interesting I have to drive 3 hours one way to the pickup spot 😆. It makes for a fun road trip. I'm still looking though, it simply can't be the only place to get them so I will keep you updated.

I remember when I started learning, omygoodness 😂 it’s laughable now but I was scared out of my mind. I don’t know what I was thinking but I absolutely love measuring that way now and wouldn’t go back for nothing.
Thank you! I weigh dough when I'm baking bread to have even loaves, some recipes call for 250 g of this or that but other than that I don't. I, like you, used to weigh everything but fresh milled flour is so different I measure by sight and feel now 😂 does it look good? Does it feel right? It's much better for me this way.
So do you think the soft white wheat could be compared to bread flour we buy in the store? Thank you so much for your videos 😊
I don't think so because it's still heavier than bread flour. It's full of fiber and germ and all the healthy nutrients. Soft white does not form gluten as well as hard red or hard white wheat, I will use the hard wheats when making anything that needs to rise and has yeast in it. Because soft white doesn't form gluten as well it's perfect for batters and cookies, all the non yeasted baking.
Yeah, they call bread without yeast 'quick breads' - because there isn't any rising time. You mix it and then bake it.

What kind of mixer do you use?
I use an Ankarsrum Kitchen Assistant. I absolutely love it and would recommend it all day every day. It is an investment but comes with a 7 year warranty, and is built so sturdy!
