  • Freshly Milled Flour Homemade Pizza
2 2/3 cup warm water (about 110 degrees)
2 Tsp honey granules or sweetener of choice
2 Almost full Tbsp. of yeast
    1/4 cup lecithin
    1/4 cup olive oil
7 cups freshly milled hard white wheat (or grain of choice)
    4 Tsp real salt
Corn meal (to keep pizza from sticking to pan and stone)
Combine water, yeast and honey granules mix for one second to incorporate. Allow to bloom and foam. While the yeast is blooming mill 4 1/2(ish) cups of hard white wheat berries to make 7 cup of flour. When yeast is activated add the lecithin, olive oil, salt and flour. Kneed for about 8 minutes.
Allow dough to rise for about an hour or until it has doubled in size. Then divide dough into the number and size of pizzas you would like.
Pre heat oven to 475 with the pizza stones in the oven (they need to get really hot). Roll first pizza dough to size, sprinkle corn meal liberally on a flat baking sheet. Transfer rolled out pizza dough to the baking sheet (make sure there is enough corn meal on the baking sheet you can slide the pizza dough on it while shaking it. This will ensure that the dough won't stick). Top your pizza however you like. As demonstrated in the video transfer pizza from the baking sheet to the pizza peel and onto the hot baking stone in the oven. Bake 8 to 12 minutes, depends on the size of your pizza, if a larger pizza it could take 15 mins.

Thank you for doing this even though you had to run the camera. You always inspire me! I appreciate the spiritual thoughts as well. I also use a Lock N Lock container for Pullman bread. It works really well for just the two of us. I keep small amounts of sandwich bread, rolls, and cocktail-sized bread in separate bags in the container. I don’t have a peel but will add it to my want list. Thanks for keeping in the “oops!” That wouldn’t be an oops for me: it would be a standard operating procedure. 🤣 It’s good to just be normal.

I loved everything about this video, the tips about the cheese, turning down the level of the machine, your wonderful personality and of course what appears to be a great recipe. I cannot wait to try this later this week

I like BBQ chicken pizza! 😊 I just got a fresh bucket of wheat, it was about 60 bucks? Now-days, that is 2 takeout pizzas, with fees and tips.. 😊 Your stones take a good long time to become nonstick. I can tell by the looks that yours has a ways to go. ONLY clean your stones if it's messy, and then use water and baking soda. But spot cleaning is best. Great video. 😃

That was funny when you forgot to put the flower under the pizza and it’s stuck. Believe me I have made some disasters. Trying to get my pizza off the peel into the oven. But live and learn.

Just yesterday I was looking for exactly this! May I suggest that if you have durum wheat, grind it on a course setting to get semolina instead of using cornmeal 😊

Oh thank you! I have kamut, that's the grandfather of durum wheat, that should work.

Thanks again for your well done tutorial. Can’t wait to try it and yes, it would be great to meet your mother. Can this recipe be halved? (I’m in west central Texas.)
