Freshly Milled Einkorn Flour Graham Crackers

  • Receipt with modifications
    2 1/2 cups einkorn flour - 4 1/8 cups of einkorn flour
    2 tsp baking soda
    2 tsp cinnamon - *3 tsp (=1 tbsp) of cinnamon
    1/3 cup butter at room temperature
    1/3 cup brown sugar (I used sucanat)
    1/8 granulated sugar (I used honey granules) - 1/4 cup of granulated sugar (honey granules)
    1 tbsp vanilla extract
    2 tbsp honey
    1/2 cup whole milk
    Topping:
    1/8 cup granulated sugar (I use sucanat)
    3/4 tsp cinnamon
    Instructions:
    Pre heat oven to 350 and prepare your baking sheets. In the bowl of an electric mixer combine all ingredients until a dough ball forms. Dump the dough out onto a well floured counter and then divide the dough into 2 balls. Roll out one dough ball as thin as you can, no thicker than 1/4 inch but preferably 1/8 inch. Cut to shape. Transfer to baking sheets. Sprinkle topping on. Bake 9 - 13 minutes.
    Baking modification:
    If you roll to 1/8 inch thick bake for 8 minutes
    1/4 of an inch thick 10 -11 minutes
    Once baked transfer to a cooling rack and allow to cool

    I would love to see sourdough videos! I’ve seen enough videos on how to make a sourdough starter, but I would love to see sourdough recipes made!! And I love all the detail and insights you provide in your videos.

    I love sourdough! I made 3 loaves today from my starter and fresh milled mix of white and red berries. It’s delicious. Love your videos. Will try this recipe too!

    HEY- Ok, I had to stop at 11 minutes. EINKORN is not like regular wheat flour. As a matter of fact, the LESS you knead it, the better. Even with yeast. EINKON requires TIME to hydrate. When I make anything with einkorn, I and the liquids, Mix and walk away. at least 15 minutes. From there, then add the rest of your ingredients. Einkorn can be used for breads, even alone, but, you have to learn it's touch. Also, you will love baking even more if you stay strictly with weights over volume. Have you ever heard, don't overwork you biscuit dough or else it will get tough? Treat einkorn the same way. It needs time sitting to form it's gluten over kneading. I know the girl you got the recipe from, and have NEVE got a recipe to work. So, I'm not sure what her magic touch is, but, I do know about using einkorn. I started using it maybe 5 years ago. It's not hard to use, just different.
