I have made this countless times, and it's why I love your channel and have trusted your palette to this very day. I love that you always measure in GRAMS. Hey Brian I recently made a pizza with a flour, that has 12 percent protein a let it rest for 24 hours, like in one of your other recipes. It was the best crust I ever made myself, so thanks for your videos and all the tipps for nice pizza dough.
This took me back to any Sunday morning in 1995 ... when I was working at pizza hut prepping about 40 stuffed crust shells for the lunch rush. Then I got to deliver most of them too. And the sauce was a bag of spices, a bag of tomato paste, and a couple gallons of water.
That's insane. When I worked there we averaged about $5000 a week in sales and we did nowhere near 40 stuffed crust a day. We also did prep at least twice per day. Before open and after lunch. Then as needed. Stuffed crust used to get it's own special "sweet" sauce too. I don't know if it still does. Haven't eaten there since I worked there.
you inspire me to make more meals and better ones for less effort. I have 5 people to cook for every night and sometimes struggle with ideas but you always com in clutch.
This was a pretty typical, high quality Brian Lagerstrom video until he hit us with the Backstreet Boys at the end for the 90s cherry on top. That propelled this video into pure amazingness territory. Well done.
A tip for the underside edge of the crust burning; rub a light dab of water onto it just before you put it in the oven. It should help to delay the heat for just long enough to balance out the rest of the browning

I've always used shredded cheese when making stuffed crust but I think your method seems completely superior. I can't believe I never thought to cut small batons of cheese for that purpose! Thanks for stepping up my cooking game once again Bri!
Pretty sure every kid on Earth will prefer this kind of pizza, and many adults too. Definitely worth adding to one's pizza arsenal. The garlic butter on the crust is a great tip too. I already make garlic "toum" Mid-East style and spread it on pizza crust, but garlic butter will work great too.

With the garlic butter crust, you can amp it up even more...some finely shredded parm with dried oregano and red pepper that's been powdered (Or just the store italian seasoning mixed with the parm) put over the crust immediately after the butter works great for some real fun there.
Dude I've been a pizza lover since my first memories and your channel made me go from enthusiast to an aficcionado. I have been throwing a lot of pizza parties with my wife and friends and we have such a great time, I can't thank you enough for breaking the pizza mysteries in such a simple, elegant manner. I too find that my steel can run a bit hot and cook faster on the bottom than the top. My trick is I have the steel on the mid rack and a good stone on top. I'll do the first 2/3's of my bake on the steel and once the bottom is solid I transfer to the stone which wont burn it and let the top finish. Comes out perfect.
FInally got a peel and a steel, broke them in by trying this pizza. Man, this is some dang fine pizza! I did the string cheese instead of prov in the crust, but highly recommend.

Hi Bri, Trying this today but noticed the write up has "5g or 1/3tsp instant yeast" and for me 5g of instant yeast is a little less than 2 tsp. I use a scale, but for small amounts volume is easier.
I just got a new Joule air fryer and the first thing I made was pizza with fresh dough from Publix. I did sausage, pepperoni and green pepper and was pleasantly surprised how good it was! Now I'm going to do the same with stuffed crust. I guessed at using string cheese... Can't wait!!

Try do freeze some of the sauce in a ice cube form. then add the frozen sauce stuff instead of the cheese (or splitt cheese/tomato) you'll gonna love it

Wow, perfect recipe. I accidentally added all 200 grams of cheese rather than the 100 grams. I also struggled to stretch the dough out to 14", I could only get it to 12", so I was very minimal with the dough ring outside the stuffed crust portion and ended up with a rectangle in the end. I've been making pizzas the last couple years at home, probably a couple dozen, and this is by far the best one I've ever made. Thanks for the recipe dude!

That pizza looks delicious, I used to work at Pizza Hut in the 90's and the stuffed crust is one of my favorites. I think Pizza Hut was the first pizza restaurant to have a stuffed crust pizza's. It wasn't until later that the other pizza restaurant's added a stuffed crust pizza's to their menu. 😁🍕🍕🍕🍕🍕🍕 The secret to to the cheese in the crust is mozzarella string cheese sticks!

It is a lot easier than it looks to make good bread. It takes a lot of practice to jump that to amazing imo. But you very quickly can get better than store bought or in pizzas case better than chains.

The 90s boyband-ish music…so on point! And picquant is “pee-cahnt”. In the Lion King, Timon says it during Hakuna Matata: “Piquant with a very pleasant crunch”. And to prove I am a 90s child…I knew that quote without having to pull up vid from the movie!
Pull the steel and pan your dough on a perforated pizza pan. That will take care of the bottom overcooking like that. Bonus, you don't have to roll your dough out this way, either, just stretch it by hand to just beyond the edge of the pan, and when you fold it over it should just perfectly conform to the pan with no effort required.
Adding some baking soda to the tomato paste will remove some of the bitterness and will make the sauce even better! Thanks for reminding me of the cheesy crust... will definitely make this :)

Yo Bri that's amazing! I have a logistical question when it comes to pizza + steel. Let's say I bake 2 pizzas, and I use semolina or similar to prevent the dough to stick to the peel. All good here, slice the pizza #1 into the oven but there's some residual semolina that gets in the oven too, which ends up burning. This burn causes a lot of smoke for the next pizza to bake and it doesn't rise that much, nor tastes that good. Any tips? The method I follow is: - Neapolitan-like dough - Pizza steel in a high position in the oven - Heat it up for like an hour - Change to grill - Pizza goes in for like 1 minute or 2 First one always comes out suuuuuper good, but that's normally the one for the kids. Mine is not so good lol
I made the delivery style pizza a week or two ago and this looks very similar with some slight tweaks. One note I made to adjust next time was to add red pepper flakes to give the sauce a bit more bite. I see you went in the same direction and I think that's a good call. I'll probably skip the cheese stuffed crust as I can't work off as many calories as I could when I was younger, so cheese stuffed pizza will have to remain in my youth but good video.

String cheese is better. You can also make your own if you don't like the premade cheese. You will get a tighter crust.

For anyone that doesn’t have a pizza peel, I’ve found transferring on baking paper to a preheated tray works just as fine!
Or just use a pizza steel as they're 10x better

Here in Brazil, the crust is usually stuffed with either Cheddar or Catupiry (an brazilian cheese).

I just bought a blackstone pizza oven (made my first pizza in it with pre-made ingredients and it was awesome) and think I'm going to make this next.
I made the delivery style pizza a week or two ago and this looks very similar with some slight tweaks. One note I made to adjust next time was to add red pepper flakes to give the sauce a bit more bite. I see you went in the same direction and I think that's a good call.
I'll probably skip the cheese stuffed crust as I can't work off as many calories as I could when I was younger, so cheese stuffed pizza will have to remain in my youth but good video.
I think this would go well with a side of Ring-Pops
