RECIPE
------
DOUGH
270g or 1 1/8c warm water (86F/30C)
5g or 1/3tsp instant yeast
35g or 2 3/4Tbsp sugar
30g or 1/3c olive oil
450g or 3 1/8c AP flour (11.7% protein)
12g or 2tsp salt
Add ingredients to stand mixer with dough hook and mix on low for 3 minutes or until a dough ball forms. Increase speed to high and continue to mix for 3 more minutes or until dough is slapping around the bowl and doesn’t tear when you tug it.
Place in a bowl, cover, and allow to ferment at room temp for 30min. Perform a strength building fold as shown @1:18. See THIS VIDEO for additional info on folding: • SHEET PAN PIZZA 2.0 (T... Cover and allow to rise at room temp for another 30min.
Divide dough into 2 equal (approx 375g) pieces. De-gas dough well by pressing it down (shown @2:15) then shape into balls as shown @2:18. Place each dough ball onto a well oiled tray, cover, and refrigerate for 4-48 hours.
SAUCE
▪150g or 3/4c tomato paste
▪2g or ⅓ tsp salt
▪10g or 2 1/3tsp sugar
▪1g or 1/2tsp black pepper
▪1 pinch or 1/2tsp chili flake
▪1g or 1/2tsp garlic powder
▪1g or 1/2tsp onion powder
▪1g or 1 1/2tsp dried basil
▪1g or 1 1/2tsp dried oregano
▪10g or about 3/4Tbsp olive oil
▪150g or 3/4c water
Use an immersion blender to spin all ingredients until broken down and combined.

TOPPING AND STUFFING
▪150g or about 1 1/2c Full fat mozzarella, shredded
▪50g or about 1/2c Provolone, shredded
▪3/4lb or 340g Provolone, sliced into 2”/5cm long batons
▪Thin sliced pepperonis
▪113g/1 stick butter
▪5-6 smashed garlic cloves
SHAPING AND BUILDING
Pull out dough to come to room temp about for about 90min.
Preheat oven to 550F or highest setting with pizza steel on the bottom 3rd of oven.
To make garlic butter, melt butter and garlic together over low heat and allow to infuse for about 1min. Allow to sit off heat while you shape the pizza.
Dust dough ball with finely ground cornmeal then place seam side down onto a cornmeal dusted work surface. De-gas dough ball again as shown @5:54 then roll out dough into about a 14”/35cm diameter round. Place provolone batons near the edge, all around the edge of the dough. Fold the dough to cover the cheese all around the edge of the pizza, as shown @7:07. Be sure to seal the dough well to prevent cheese from escaping.
Shred and combine the 150g mozzarella and 50g of the provolone. Cut the 3/4lb/340g block of provolone into 2”/5cm long batons.
Scoot the shaped dough onto pizza peel then sauce the pizza with about 4 big spoonfuls of sauce spread edge to edge. Use more than you would put on a typical pizza. Sprinkle with about 1c or 100g total of the shredded cheese blend. Top with thin sliced pepperonis (or toppings of your choice).
Bake on pizza steel for about 6-7min, keeping an eye on the bottom for burning since this crust has a higher sugar content.
Brush crust with garlic butter.

I was a manager at a pizzeria in the late 90s. We didn't serve stuffed crust, but after hours on the weekends we sure as hell made it, drank a bunch of beer, and played the arcades until the wee hours. Nostalgia...

This took me back to any Sunday morning in 1995 ... when I was working at pizza hut prepping about 40 stuffed crust shells for the lunch rush. Then I got to deliver most of them too. And the sauce was a bag of spices, a bag of tomato paste, and a couple gallons of water.
That's insane. When I worked there we averaged about $5000 a week in sales and we did nowhere near 40 stuffed crust a day. We also did prep at least twice per day. Before open and after lunch. Then as needed. Stuffed crust used to get it's own special "sweet" sauce too. I don't know if it still does. Haven't eaten there since I worked there.
I'm working at Little Caesar's and I can never get the dough to cooperate with me when stuffing crusts. Always end up tearing it.

You make the best videos! My son was asking me last night to make a homemade stuffed crust pizza. I told him I would try one day, and I wake up to this video! It must be destiny lol. I’ve been making your delivery style pizza recipe and my kids LOVE it.
A tip for the underside edge of the crust burning; rub a light dab of water onto it just before you put it in the oven. It should help to delay the heat for just long enough to balance out the rest of the browning

Hi Bri, Trying this today but noticed the write up has "5g or 1/3tsp instant yeast" and for me 5g of instant yeast is a little less than 2 tsp. I use a scale, but for small amounts volume is easier.
For sure the highlights of this video are the nostalgic flashes of the chuck E Cheese mouse, and the vhs filter on the pizza shot! Well done :) another awesome vid!

String cheese is better. You can also make your own if you don't like the premade cheese. You will get a tighter crust.

Honestly, I'm always intimidated by making pizza at home. I've never been a very good baker so dough is always scary for me but...I do love me some stuffed crust pizza...
It is a lot easier than it looks to make good bread. It takes a lot of practice to jump that to amazing imo. But you very quickly can get better than store bought or in pizzas case better than chains.
Follow Brian's instructions and you'll be good to go.

With the garlic butter crust, you can amp it up even more...some finely shredded parm with dried oregano and red pepper that's been powdered (Or just the store italian seasoning mixed with the parm) put over the crust immediately after the butter works great for some real fun there.

The garlic butter on the crust is a great tip too. I already make garlic "toum" Mid-East style and spread it on pizza crust, but garlic butter will work great too.
That pizza looks delicious, I used to work at Pizza Hut in the 90's and the stuffed crust is one of my favorites. I think Pizza Hut was the first pizza restaurant to have a stuffed crust pizza's. It wasn't until later that the other pizza restaurant's added a stuffed crust pizza's to their menu. 😁🍕🍕🍕🍕🍕🍕 The secret to to the cheese in the crust is mozzarella string cheese sticks!

I just got a new Joule air fryer and the first thing I made was pizza with fresh dough from Publix. I did sausage, pepperoni and green pepper and was pleasantly surprised how good it was! Now I'm going to do the same with stuffed crust. I guessed at using string cheese... Can't wait!!

stuffing the crust with provolone is genius!!
I too find that my steel can run a bit hot and cook faster on the bottom than the top. My trick is I have the steel on the mid rack and a good stone on top. I'll do the first 2/3's of my bake on the steel and once the bottom is solid I transfer to the stone which wont burn it and let the top finish. Comes out perfect.

Noice dude, you have nearly managed to make a video for every type of pizza out there, but I can think of a few you still have yet to do:
1) California style with gourmet toppings
2) neo-Neapolitan high hydration strong bread flour (and possibly sourdough?) in the ooni.. the kind all the ooni nerds are getting into lately.

Like we have burrito styles, like mission style burritos. But our pizzas are just pretty normal pizzas. The chain California Pizza Kitchen isn''t reflective any any other pizza place in California. I think its just a marketing gimmick. I mean sure you can find a hipster joint somewhere that has avocado on pizza or something but I'm sure every state has their oddball restaurants.

Try do freeze some of the sauce in a ice cube form. then add the frozen sauce stuff instead of the cheese (or splitt cheese/tomato) you'll gonna love it
