hello, have tried your pandan sponge cake recipe and it was the most fluffy and moist cake i ever baked! Just wish to check if I want to change the flavor of the cake, can I replace the 80g of pandan juice with milk and other flavorings (i.e. 80g of milk tea)? Thank you!

Hi,maybe is the egg whites problem, you can try this side.
Whip the egg white on high-speed speed until become bubble form,begin whipping the egg whites on low speed,added sugar separately for three times until firm peaks form they become foamy and frothy.
It takes about 5-10 minutes to whip the eggs whites.

Exactly, 17cm x 7cm is only 6.75 inch x 3.75 inch . I think it’s too small . The batter in your recipe should be able to fill a 18 cm x 18 cm square pan.

I baked today taste all OK but the outlook failure. I use top heat with 140'c 50min..end up top still maintain green colour and very wet on bottom part. I use another 160'c 50min with top and bottom heat and finally feel dry BUT it does not fluffy.. 😢

for every 1 cup of all purpose flour remove 2 Tbsp of flour,and replace 2 Tbsp of that with cornstarch
