    低筋面粉 cake flour 120g/10T

    蛋白 egg whites 4
    塔塔粉 cream of tartar 1/8tsp
    糖 sugar 60g/8T
    Bake at 140°C / 280°F for 40-45 minutes
    摄氏140 / 华氏280 烘烤 40-45分钟

    hello, have tried your pandan sponge cake recipe and it was the most fluffy and moist cake i ever baked! Just wish to check if I want to change the flavor of the cake, can I replace the 80g of pandan juice with milk and other flavorings (i.e. 80g of milk tea)? Thank you!

    hello can you please explain what speed of the hand mixer did you use when you beat the eggwhites and how many minutes from start to finish or until becomes stiff?because mine im not sure i under beat or over beat it my cake shrink when i take it out from oven.thanks and more power on your channel apron😊

      Hi,maybe is the egg whites problem, you can try this side.
      Whip the egg white on high-speed speed until become bubble form,begin whipping the egg whites on low speed,added sugar separately for three times until firm peaks form they become foamy and frothy.
      It takes about 5-10 minutes to whip the eggs whites.

      谢谢老师回答,昨天我做了这个蛋糕非常成功。就是待它完全凉透后撕开底部烘焙纸才发现怎么我的蛋糕底部往内凹,原来是我没把它翻正待凉。谢谢老师的指导,蛋糕真的很好吃,有我小时候吃班兰海绵蛋糕的味道。

      Apron 我的旦糕剛做好了,但是不太理想,在烤的時候,看到有升高,拿出來倒轉放凉反轉來便回缩似剛倒入生面湖的一樣沒有升高,不知道是什麼原因造成的,謝謝🙏。

    I made this and follow your recipe today. However not sure what i did wrong the bottom part is not as fluffy and more like sticking together but the upper part is spongy. Also what do i do to avoid the cake sinking down when i took it out ? Thanks.

    Exactly, 17cm x 7cm is only 6.75 inch x 3.75 inch . I think it’s too small . The batter in your recipe should be able to fill a 18 cm x 18 cm square pan.

    Since I use pandan paste. It's mean I'll skip the juice. Should I replace it with milk or use more flour?

    I baked today taste all OK but the outlook failure. I use top heat with 140'c 50min..end up top still maintain green colour and very wet on bottom part. I use another 160'c 50min with top and bottom heat and finally feel dry BUT it does not fluffy.. 😢

      Hi,cake flour is more delicate than all purpose flour. can try to make,
      for every 1 cup of all purpose flour remove 2 Tbsp of flour,and replace 2 Tbsp of that with cornstarch

    I baked this today and turned upside down to cool, but it collapsed terribly especially in the centre when I remove the tin. Though the cake is cooked and texture is soft, how do I keep the height of the cake like yours?

      Hi,maybe is the egg whites problem, you can try this side.Whip the egg white on medium speed until become bubble form,
      and then add 1/3 of the amount of sugar with high-speed whipping to the foam began to become detailed and expansion,
      and then add the remaining sugar begin whipping your egg whites on low speed until they become foamy and frothy.
      It takes about 5-10 minutes to whip the eggs whites.

    Are you sure u are using 4 eggs only? Because my egg white doesnt ride tht high tho.. and the end result doesnt really tht foamy tho

      Hi,maybe is the egg whites problem, you can try this side.Whip the egg white on medium speed until become bubble form,
      and then add 1/3 of the amount of sugar with high-speed whipping to the foam began to become detailed and expansion,
      and then add the remaining sugar begin whipping your egg whites on low speed until they become foamy and frothy.
      It takes about 5-10 minutes to whip the eggs whites.

      Ouh btw, I made it yesterday and it was so good and jiggly too.. the cake didnt break or crumbled when I jiggle it.. so nice and soft

    You use a mould 17cm x 7cm, isn’t that very small for that 4 eggs batter? Do u mean it’s a 7 inch square pan?
