I just made this cake and it was perfect on my first attempt! No cracked top and perfect taste and texture. I was pleasantly surprised as I have read a lot of people fail on their first try so I was a bit scared lol. Some tips I’d recommend though are to blend your pandan leaves as per recipe instructions with the full 250ml of water then after straining let it sit overnight in the fridge. The next day all the water will separate and you will be left with a layer of dark green pandan essence on the bottom. Pour off the top layer of water and use only the dark green essence on the bottom. It will be more fragrant and the green colour will be much more vibrant. My cake also took a bit longer to bake. Instead of 35-40 mins mine took approx 45-50mins. I baked at 160c conventional oven no fan with top and bottom heat on the second lowest rack in oven. Thank you for a wonderful recipe. It tastes better than the one I buy at the shops and the aroma when baking is divine.

Thank you for sharing this amazing recipe! I have tried it 5 times to get it perfect using my Philip XXL Air Fryer and it tasted so delicious. My family loves it so much and keep asking me to make more. For those who wish to use an Air Fryer for this recipe, choose a 7” loose base cake pan. Do not oil the pan, so when you over turn it for cooling, the cake will stick to the pan. After pouring your batter into the pan, cover it with an aluminium foil and poke some holes. Preheat Air Fryer for 5mins at 160 C. Bake for 20mins at 160 C, remove foil and bake for another 10mins at 160 C. You will see a perfect Pandan Cake, overturn the cake for cooling. Enjoy your cake with your love ones.

Took a couple of minutes of hand muscles. For pandan juice, i let the blended juice sit overnight in fridge overnight and used only the dark extract sitting at bottom. Color of cake still turned out pale light green. For those who do not have cream of tartar like me, i substituted with same amt of lemon juice. Personally, i felt the sugar can be reduced. Happy with the outcome 😊
I reduced sugar by 10g. The yolk/wet mixture just need to be evenly mixed. The rise of cake is due to the egg white mixture. Baking powder can even be left out

My chiffon turned out great... I use self raising flour, doubled all the ingredients( but reduced sugar) to make a big n tall cake on a chiffon tube pan... My pandan juice made from blending the leaves with bit of water left overnight and use the thicker liquid at the bottom.. satisfied with the great outcome..vibrant color n texture soft n fluffy.. 160 degrees for 1 hr and 5 mins.. I think can do another 5 mins.. top craked but I m fine with it..a recipe to keep. Thanks
@@ivyzhou7154 You have different ovens and differences in how the heat is generated and distributed, which in turn causes the differences in temperature.There are conventional oven, convection oven, steam oven. What type of oven do you have? And agree with devilmez, cooking and baking is using your senses, especially your eyes here to check the oven.

I made this but switched coconut oil to whole milk. It was good that way to. This recipe is fool proof!
