Crispy & Soft Chocolate Chip Cookies Recipe - using cold butter!

  • I've tried so many cookie recipes using melted butter, soften butter, and browned butter, but I never imagined that cold butter could create such an amazing texture in cookies! I created this recipe while trying many levain style cookie recipes and I noticed that many recipes called for cold butter. Although I have never tried the actual Levain cookies so I wouldn't know what they taste like, I still did't find any recipes that I absolutely loved. So, I decided that I would experiment and create my own definition of perfect cookies using cold butter. After a few experiments, I finally got the perfect recipe! I initially made them bigger (165g) like levain cookies, but then I was a little overwhelmed by the size so I made them smaller (110g), which is still big compared to regular sized cookies. I would not call this Levain style as they don't look like them but they have become my go-to chocolate chip cookie recipe! They are perfectly crispy on the outside and soooo soft inside. I hope you will give this recipe a try!
    **You will need an electronic mixer for this recipe**
    Ingredients:
    All purpose flour 2 cups/240g
    Baking powder 1/2 tsp
    Baking soda 1/2 tsp
    Salt 1/4 tsp
    Butter (cold). 1/2 cup/113g
    Brown Sugar 3/4 cup/150g
    White Sugar 1/4 cup/50g
    Egg (cold). 1
    Vanilla Extract 1/2 tsp
    Chocolate Chip 1 cup
    Bake at 375F for 14-16 minutes.
    You can also freeze the dough as well. If you do, please increase baking time by 1-2 minutes.
