That is incorrect although in this scenario it fits. It’s gotta do with keeping two sealing faces square to each other. If alignments off and one side is cocked out of wack you won’t get true torque values to fasteners. Torque wrench will read x but bc there’s other forces acting against the fasteners you won’t actually be delivering that amount where you need it which could cause a leak. That star pattern actually is solid advice for any profession. Don’t usually want to tighten one side because it pulls inward and doesn’t allow you to properly tighten the other and the whole surface isn’t facing same torque

The star pattern will allow pressure to be evenly applied, so that you don't get one end sticking up in the air and/or caught on something. Depending on what you are working on, it can be basically impossible to get the other end down.
The star pattern is really something that should be done on big pressure pipes and its usefulness is negligible on most small things because they seal just fine. Some are needing pattern tightening multiple times while increasing the torque wrench each time according to specs. It's easy to spend hours on one connection just from two flanges if the bolts are big and very numerous.
I’m a plumber to I hate doubling wax rings but I recently had to do a new toilet in my 1975 house and the toilet was never replaced so it was the original end up having to put a wax ring and the original wax ring came with a plastic cone so I had to add an extra wax ring on top of that one. I end up just using one wax ring and splitting it in half and using half on the bottom half on top and haven’t had a leak in four years

For me this plumbing work is strange. Here in europe we just have a normal pipe and use one rubber seal and no leaks.
