    HOW TO SMOKE BOLOGNA ON A PELLET GRILL
    ______________________________________________________________
    INGREDIENTS:
    - 5-6lbs Bologna
    - Dijon Mustard
    - Postal Barbecue Original Rub (see website to order)
    - BBQ Sauce
    TO MAKE SANDWICH
    - Brioche Buns
    - Swiss Cheese (or favourite Cheese)
    - Caramelized Onions
    - BBQ Sauce
    STEP #1
    To prepare your smoked bologna, take your full 5-6lb (approx.) and score into it in a diamond pattern abotu 1/4 -1/2 inch deep. Next, apply a coating of dijon mustard and then season it using our Postal Barbecue ORIGINAL RUB or your favourite sweet bbq rub.
    Step #2
    With your Bologna prepared, set up Camp Chef Pellet Grill for cooking around 250F and set your smoke setting to 10. With the Camp Chef Woodwind 24 set up, place the pork loin into the pellet grill using the top rack. Once everything is in the grill and set up, close the lid and begin cooking until it the rub starts to set up on the smoked bologna. This should take around 3 - 3.5 hours.
    Step #3
    Once your smoked bologna reaches has nice colour to it from the smoke as well as a firmed up BBQ Rub, brush on your some bbq sauce all over then close Pellet cooker to let the sauce set for about 25 minutes. Once the bbq sauce on your smoked bologna has set, remove it from the grill and slice into it and eat it on it's own or build your favourite sandwiches.

    I have this crazy idea of making a rub of salt, pepper, and celery seed, applying that to the bologna, scoring it and cooking like you showed, and then making a sandwich with the fixings of a chicago hot dog...mustard, relish, sport peppers, dill pickle, tomato, and onion.
    The only thing I'm struggling with is what kind of sauce I'd baste the bologna in.

      Bahaha. Well think about it - ingredients and texture is almost identical but the flavor is just slightly different. I should have found a giant hot dog bun to put this in. Lol

    Only thing im concerned with is it being salty. Bologna is already salty without adding rub. So i think i will just mix something up without salt or minimal salt

    You youtubers need to learn your measurements. That was nit even close to 3/4 of an inch. That was more like 1 1/4 to 1 3/8 of an inch

      Lol. He may not have had a tape measure on hand. Id just say slice to desired thickness to cover any discrepancy. But i believe the video was more about cooking method opposed to measurements
