Fat grips are actually fantastic. I got a pair back in 2015, and almost nothing helped build my forearms and longhead of the bicep as much as they did.
@mtndew4746 it just makes workouts hit the muscle a bit differently - it definitely hits the forearms more, but it's a bit hard to explain scientifically. The position your hands are in when using them creates a lot of extra tension throughout the rep, and forces you to work your forearms
Your forced to squeeze the bar harder because your hand can’t around around the fat grip as much as a bare bar. So to stabilize to weight and your grip your arms are forced to be under more stress especially in the forearms
His form despite the momentum, he always keeps the tension, wish i had the courage to do that in the gym, everybody will think it's a wrong movement execution and start judging.
Not only does jay have great genetics, but he also (obviously) developed great mind muscle connection. These aren't crazy advanced exercises but he has the ability to make the most out of them. Put the time in.

Never understood alternating dumbbell curls. You lose tension alternating them. Plus you can cheat easier. When you do both at the same time, you can hold the tension and your body is stabilized better.

Seared will be better for fried foods and seated dumbell curls can help but it does feel like your biceps might cramp up doing them seated.
