Thanks for a great video. I did have my own disaster using one of your ice cream recipes. Coconut cream and xylitol. I have trouble with some of the artificial sweeteners and got brave seeing xylitol worked OK for you. It didn't go well. I have used Boca Sweet with no problems, so I'm going to see if that does OK in the ice cream. I was taking a wild guess on the quantity of xylitol I used since I didn't have a handle on the grams. Oh, also, I went ahead and used three whole eggs instead of six yolks. It probably wasn't as good as yours, but anyway, taste wise it was very good, except too sweet since I guessed wrong on that. Back to the drawing board.

Judy you can use a wooden spoon if you put it in a microwave this is how chefs sterilize wooden spoons and kitchen cloths
