Honestly I’m fine with his performance against Jedi in the 2008 show, he’s got the better of Kenobi a few times. However against clones and such it is underwhelming. Dooku’s line that Grievous can’t beat the best of the Jedi makes sense, but Legends pushed it far beyond what they should and made him fight on par with the literal second best (Windu). Canon Grievous is fine because the force is constantly a downside. Although I do believe had Grievous not been egotistical he could’ve massacred many of them. For example the only one that provides a slight challenge is the general and he could’ve just sliced his head off rather gloat. Beforehand only a non lethal hit would be exchanged.
