I don’t usually comment but I’ve gotta say this is one of the best pandan chiffon cake recipe out there! I’ve tried many and my cakes always turned out dense whereas this time my cake was light,airy and fluffy!! This recipe also uses less oil/sugar than most so it’s great for those who are health conscious. I’ll be trying many more recipes by Apron for sure!
What type of measurement is Apron using? I measure 30 ml liquid is an ounce, but I see him/her has so much for 30 ml pandan water. I would really like to make this cake It looks yummy.

Hi Apron ..i made this today too..and it look just like yours 😅😅...the texture is very soft and not overly sweet. Well this is my 1st try ...i guess some people doesnt success due to oven temperature ( too hot or too low ) and the egg white is not whipped to the way it should be. ( over whip or under whip).

Hi Apron, I made it twice and it was delicious. However, there was once when I removed the lower pan upside down, I can see that the middle part sank down. I’ve followed your guidelines to beat the egg white on high speed until foamy, and then turn to low speed while adding sugar. Whole process I timed it around 8 mins. May I ask what did I do wrong?

It came out spongy but did not rise, small and flat. It was delicious regardless. This recipe is good for small pan i supposed. I'll double the recipe and try again.

Due to the lockdown, I am trying baking more these days. I have never baked Pandan cake from scratch, but I have baked other chiffon cakes many times. I noticed your recipe does not have baking powder. I normally add it even if I use cake flour. Can I use corn oil instead of coconut, it can be any oil, am I correct? Thank so much. Hi Apron, I tried baking today but not as good as it shud be.. Your vdo shows the cake flour 60 grm or 5 tbsp... I measured 5 tbsp flat which came to be hardly half cup. It seems less to me as my yolk mixture was not as thick as you showed.. Please advise.. Thanks
Can I use the pandan syrup, and dilute it with 30ml of either coconut juice or water, to compensate the 30ml of pandan juice? Since I don't have leaves to make pandan juice. Thanks
Thank you Apron, I finally can make a pandan chiffon cake 😃 . The tube mold has a small gap and my batter leaks. Is the leak because the egg whites have de-foamed? Also i have baked at 150C for 1 hour but when I wanted to remove the mold, I pressed the top of the cake and some tiny part sticker to my hands.

Because i have tryed before without greasing,when i made baked cake, my cake sticky in the pan😕🙆 but specifically for making cotton cake,i dont know yet. Is good or not to not using non stick pan. Hi,cake flour is more delicate than all purpose flour. can try to make, for every 1 cup of all purpose flour remove 2 Tbsp of flour,and replace 2 Tbsp of that with cornstarch

tip: add a pinch of salt to bring out the flavour more! us thai people like it a little bit salty even
I always add a pinch of salt whenever I bake cakes using meringue technique. It enhances the flavor of the other ingredients.

Maybe u can search on how to make pandan extract. But just be aware of not using it too much.

It depends on the individual oven. One risks burning the outer side while the inside isn't properly cooked at higher temperature.

Did you preheat oven top and bottom without fan?

Depending on your oven. Place on lower third rack to be safe
