Oh my, looks so delicious. Certainly going to have to try this recipe. I know there is no set time and they are done when they are done, but for planning purposes, approximately how long does it take for a pot of these sweet potatoes to cook?
Wow. I just made these with your recipe but a different method once the taters were cut into slices. I made a mildly thick roux with the half-plus stick of butter, approx. 3/4 cup sugar, 2 TBL. cinnamon, a couple tsp. nutmeg, molasses (I use a little molasses to make it into brown sugar -- 1 TBL to 1 cup sugar) and the 1/2 cup COLD water with the 2 TBL cornstarch that has been stirred well before adding. Just when it began to get thick I poured it over the sweet taters (in a 3-quart Corning Ware casserole dish) and put a glass lid on it and put it in a 325-degree oven. After about an hour I pulled it out just to turn the taters over a bit and make sure it was well mixed, covered it again and put it back into the oven. Once the taters started creating a lot of liquid visibly, they were ready. I added the lemon extract and vanilla extract at the very end (not to cook them), first mixing in about 1/4 cup maple syrup, mixing it together and pouring it over the cooked sweet taters. My housemate said she NEVER liked candied sweet potatoes but she LOVES these, and said they were not too sweet and so delicious she could almost make herself sick just continuing to eat them until she couldn't eat them anymore, LOL.

Looks so delish! Even though grandma always baked her candied yams, I make a caramel sauce and use all the ingredients you have as well with light brown sugar instead of sugar.
I use all the same ingredients minus the cinnamon (not a fan). However, I just create a simple syrup and add all those ingredients to a pot, bring to a boil and pour it all over the cooked potatoes and bake it for a short time.
